CRANBERRY-APPLE PIE SQUARES
Combine two holiday fruit favorites in this inviting pie, with a basic crust and a special caramel and ice cream topping.

- Heat oven to 375°F. In large bowl, combine 1 1/2 cups flour, sugar and 1/4 teaspoon salt; mix well. With pastry blender, cut in 1/2 cup butter until mixture resembles coarse crumbs.
- In small bowl, combine egg yolk and milk; beat well. Add to flour mixture; stir just until dry ingredients are moistened.
- On lightly floured surface, roll dough to form 15x11-inch rectangle. Place in ungreased 13x9-inch pan. Press in bottom and 1 inch up sides of pan.
- Place apples in large microwave-safe bowl. Microwave on HIGH for 6 to 8 minutes, stirring every 2 minutes, or until apples are fork-tender. Add 1 cup sugar, 1/4 cup flour, cinnamon and 1/2 teaspoon salt; mix well. Spoon apple mixture over crust. Sprinkle with cranberries.
- In medium bowl, combine 1 cup flour, brown sugar and 1/2 cup butter; mix until crumbly. Sprinkle over fruit.
- Bake at 375°F. for 45 to 60 minutes or until topping is deep golden brown, apples are tender and filling is bubbly. Cool 1 hour.
- To serve, cut warm dessert into squares; place on individual dessert plates. Top each with caramel topping and ice cream.

- In a small saucepan over medium high heat, combine the cranberries, white sugar and orange zest. Bring to a boil, then reduce heat and cook until the mixture has reduced to about 1 cup.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking pan, line with foil, then grease the foil.
- In a medium bowl, stir together the flour, oats, brown sugar, baking powder and salt. Cut in the butter using your hands or a pastry blender until the mixture resembles coarse crumbs. Press half of this mixture firmly into the prepared pan. Spread the cranberry sauce evenly over the base, then crumble the remaining oat mixture over the top.

- In a large bowl, stir together the sugar, flour, baking powder and salt. Cut in the butter or margarine until the lumps are no larger than peas. Stir in the egg just a little bit, but allow the mixture to stay somewhat crumbly.

- Prepare my pie crust recipe through step 5.
- Stir the apples, cranberries, granulated sugar, cornstarch, orange zest, cinnamon, cloves, and nutmeg together in a large bowl. Set filling aside as the oven preheats.
- Preheat oven to 400°F (204°C).
- On a floured work surface, roll out one of the discs of chilled dough (keep the other one in the refrigerator). Turn the dough about a quarter turn after every few rolls until you have a circle 12 inches in diameter. Carefully place the dough into a 9×2 inch pie dish. Tuck it in with your fingers, making sure it is smooth. Spoon the filling into the crust, leaving any excess liquid in the bowl (you don't want that in the filling- discard it). Dot the pieces of butter on top of the filling. Stick in the refrigerator until ready to cut the lattice.
- Remove the other disc of chilled pie dough from the refrigerator. Roll the dough into a circle that is 12 inches diameter. Using a pastry wheel, sharp knife, pizza cutter, or this fun ribbon cutter, cut strips 1 or 2 inches wide. Remove the pie from the refrigerator and carefully thread the pie dough strips over and under one another, pulling back strips as necessary to weave. Press the edges of the strips into the bottom pie crust edges to seal. Use a small knife to trim off excess dough. Crimp the edges with a fork, if desired. See recipe notes for making the braid or apple shapes! (Alternatively, you can simply cover the filling with the 12-inch pie dough circle. Cut slits in the top to form steam vents. Trim and crimp the edges. Or crumble topping (from apple crumble pie) or streusel topping (from peach pecan crisp) would be great as well.)
- Lightly brush the top of the pie crust with the egg wash mixture.
- Place the pie onto a large baking sheet and bake for 20 minutes. Keeping the pie in the oven, turn the temperature down to 350°F (177°C) and bake for an additional 30-35 minutes. After the first 20 minutes of bake time, I place a pie crust shield on top of the pie to prevent the edges from browning too quickly.
- Allow the pie to cool for 3 full hours at room temperature before serving. This time allows the filling to thicken up. Cover leftovers tightly and store in the refrigerator for up to 5 days.

- Lightly spray a 9-inch pie dish with non-stick cooking spray. Set aside. Make sure your apples are sliced and ready to go.
- In a small saucepan, melt butter on low heat. When it begins to bubble, whisk in the brown sugar. Continue to stir until smooth. Then, leave on heat for about 2 minutes until it begins to bubble. Stir, then remove from heat and allow to briefly cool for a couple minutes. Layer the sliced apples and cranberries into the dish and pour the butter/sugar overtop. Set aside.
- Preheat oven to 325°F (163°C).
- In a medium bowl, toss the flour, baking powder, salt, cinnamon, nutmeg, cloves, and ginger together until combined. Set aside.
- Using a handheld or stand mixer with a paddle attachment, beat the butter on high until creamy - about 1 minute. Add the brown sugar and beat on medium-high speed until creamed together, about 2-3 minutes. Scrape down the sides and bottom of the bowl as needed. Beat in the egg yolks and vanilla on medium speed until everything is combined, about 2 full minutes. Scrape down the sides and bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients in three additions alternating with the buttermilk, beginning and ending with the dry ingredients, and mixing each addition just until incorporated. Do not overmix. Whisk or beat the 2 egg whites until thick and foamy, about 3 minutes. Fold into cake batter. The batter will be smooth, velvety, and thick.
- Spoon or pour batter over the apples/cranberries and bake for 40-44 minutes or until a toothpick inserted in the very middle comes out clean. Allow to cool for exactly ten minutes before inverting onto a large serving dish or cake stand. Serve warm or at room temperature. I prefer it at room temperature. Leftovers keep well covered tightly at room temperature or in the refrigerator for 2 days.

- Preheat oven to 350°F. If serving from the pan, grease a square baking pan, with baking spray, butter or shortening.If attempting to remove and cut into slices outside of the pan, line baking pan with foil or parchment.
- In a food processor, toss in all crust ingredients except for apple cider and the egg white. Blend until fine. Remove 1 cup of dry crust ingredients to use as the topping. Add the egg white and apple cider to food processor, blend until moist. Transfer mixture to baking pan. Pat down into a fairly flat layer. Bake bottom crust for 10 minutes.
- Add cranberries, apple cider and 1/2 cup white sugar to a small saucepan. Cook over medium high heat, stirring frequently until bubbly and all cranberries have burst. Add flour, mix well. Allow cranberry mixture to thicken. Remove from heat.
- Peel 2 baking apples and slice into bite size pieces. Toss in a medium bowl, sprinkle with remaining sugar and cinnamon. Toss apples to coat.
- Pour cranberry mixture over sliced apples. Stir gently to coat apples completely.
- Pour apple cranberry mixture over baked crust. Top off with remaining dry crust ingredients. Gently pat into an even layer.
- Bake for 45 minutes. Let cool for at least 20 minutes, toss in the fridge for several hours to make slicing easier. Store in an airtight container for up to several days.

- Preheat oven to 350°F. Grease a 9x13-inch baking pan with nonstick spray. Set aside.
- Using a hand mixer, beat the butter and brown sugar together until light and fluffy.
- Add the egg yolks and vanilla extract, beating to combine.
- In a separate bowl, mix the flour and salt together.
- Add the flour mixture to the wet ingredients until combined. The dough will be slightly crumbly.
- Divide the dough into thirds.

- Let the bars cool for a few minutes before cutting. The bars can be served warm or cold.

- Heat your oven to 400 degrees, middle rack in place. In a bowl, mix the apples, cranberries, brown sugar, cinnamon, nutmeg, cloves, salt, lemon juice, lemon zest, and vanilla together until evenly combined. Cover with plastic wrap and let this mixture sit for 20 minutes. The sugars will pull out the moisture from the apples so that they don’t make our pies soggy later.
- Microwave the macerated apple-cranberry mixture for just 5 minutes to par-cook the apples and cranberries (you’ll hear them pop) and give them a head start. More liquid will be released. Carefully strain the apple juice mixture into a measuring cup or bowl for 5 minutes. You should have at least 1/2 cup of juice. Whisk an egg for about 15 seconds into a small bowl and set aside.
- Pour the apple juices into a small saucepan and bring to a steady simmer over medium-high heat, stirring constantly until thickened and syrup’y, and reduced by half — 1/4 cup. This can take anywhere between 2-5 minutes, depending on your stove. Add it back to the apples and cranberries, and toss to combine. It may harden just a bit, and that’s ok because it will melt again once it’s in the oven. Add 2 tablespoons of cornstarch to the apple-cranberry mixture and toss to coat. This will help thicken our filling just slightly.
- Meanwhile, roll both puff pastry sheets out just a bit to smooth and seal the 2 lines going down the middle of each sheet. Flour both sides lightly to prevent sticking. Cut both puff pastry sheets into 6 even squares, for a total of 12 squares total. Cut a small vent hole into 6 of the 12 squares. Scoop about 1/2 cup of the apple-cranberry mixture into the center of the remaining 6 squares. With a pastry brush or your index finger, paint a thin border around each edge of the puff pastry square that has the apple mixture on it. Place a square with a vent hole on top, gently stretching if you have to — be careful not to tear it, and press the edges together with your fingers. With a sharp knife or pastry cutter, trim the very edges of each pie to clean them up and further seal. You should have 6 pies. Brush each pie with a thin layer of the egg wash, and sprinkle a thin layer of sugar all over the surface.
