Apple cranberry cobbler with apples and fresh cranberries, along with sugar and apple juice. A delicious spiced apple cobbler recipe with fresh cranberries.

7 cups apples (peeled, cored, thinly sliced)
1 1/2 cups cranberries (fresh)
2 tablespoons lemon juice
3/4 cup sugar
1/2 cup brown sugar
3 tablespoons flour
1 teaspoon cinnamon
1/2 teaspoon salt
1/3 cup apple juice
1 teaspoon vanilla extract
1 tablespoon butter (soft)
For the Topping:
3/4 cup flour
1/2 cup sugar
1 scant teaspoon baking powder
1/4 teaspoon salt
1 large egg
2 tablespoons cream (or evaporated milk or half-and-half)
2 tablespoons butter (melted)

Steps:

  • Gather the ingredients.
  • Grease a 2 1/2- to 3-quart baking dish . Preheat oven to 375 F.
  • Toss sliced apples with cranberries and lemon juice.
  • In a bowl, combine the 3/4 cup granulated sugar, 1/2 cup brown sugar, 3 tablespoons all-purpose flour , 1 teaspoon cinnamon, and 1/2 teaspoon salt; add to the apple mixture and toss to coat. Mix in the apple juice and vanilla.
  • Arrange the apple mixture in the prepared baking dish. Dot with the soft butter.
  • To make the topping, in a mixing bowl, combine 3/4 cup flour, 1/2 cup sugar, 1 scant teaspoon baking powder, and 1/4 teaspoon salt.
  • In a separate small bowl, whisk the egg with cream and melted butter; stir into the dry ingredients and beat until smooth.
  • Using a tablespoon, drop spoonfuls of the batter evenly over the fruit mixture. The batter will spread as the cobbler bakes.
  • Bake for 40 to 50 minutes, until fruit is tender and topping is nicely browned.
  • Serve and enjoy!

¾ cup cranberries
¼ cup white sugar
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
⅓ cup quick-cooking oats
⅓ cup all-purpose flour
½ cup packed light brown sugar
¼ cup butter, cut into pieces
½ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Butter an 8 inch square baking dish.
  • In a large bowl, mix together apples, cranberries, white sugar, cinnamon and nutmeg. Place evenly into baking dish.
  • In the same bowl, combine oats, flour and brown sugar. With a fork, mix in butter until crumbly. Stir in pecans. Sprinkle over apples.

5 cups sliced peeled tart apples
1-1/4 cups sugar
1 cup fresh or frozen cranberries
3 tablespoons quick-cooking tapioca
1/2 teaspoon ground cinnamon
1 cup water
2 tablespoons butter
TOPPING:
3/4 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/8 teaspoon salt
1/4 cup cold butter, cubed
1/4 cup milk

Steps:

  • In a large saucepan, combine the apples, sugar, cranberries, tapioca, cinnamon and water. Let stand for 5 minutes, stirring occasionally. Cook and stir over medium heat until mixture comes to a full boil. Cook and stir 3 minutes longer. Pour into a greased 2-qt. baking dish. Dot with butter., In a large bowl, combine the flour, sugar, baking powder and salt. Cut in butter until crumbly. Stir in milk to form a soft dough. Steps:

  • Preheat the oven to 350 degrees F.
  • Peel and core the pears and apples and cut them into large chunks. Place the fruit in a large bowl and toss with the cranberries, zests, juices, granulated sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch baking dish.
  • For the topping:
  • Combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed for 1 to 2 minutes, or until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.

1 cup all-purpose flour
