Apple Cinnamon Oatmeal is a hot breakfast that smells like apple pie and tastes as if fall has arrived.

Number Of Ingredients 9

2 cups rolled oats
3 3/4 cups water
3 small sweet apples or 2 cups apple pieces (diced small)
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon
dash of nutmeg
1/4 cup (plus 1-2 tablespoons brown sugar, adjust to taste)
Butter (a teaspoon or so for on top of each serving)
Optional: chopped pecans (just a sprinkling for serving each bowl)

Steps:

  • Combine the oats, water, apples, cinnamon and nutmeg in a medium size saucepan. Bring to a boil over medium high heat, stirring occasionally.
  • As soon as it boils, reduce heat to low and simmer for just a few minutes, until the oats are soft and the apples are tender. Remove from the heat and add brown sugar to taste.
  • The sweeter the apples, the less brown sugar you will need. Scoop into serving bowls and top with butter and pecans if desired. Enjoy!

1/3 cup old fashioned oats (gluten free if needed)
1/2 teaspoon ground cinnamon
Tiny pinch ground ginger
Tiny pinch ground cloves
Tiny pinch kosher salt
1/2 medium apple (cored and diced (peeling optional), any kind you enjoy eating (I used honeycrisp))
1/2 cup Almond Breeze Unsweetened Vanilla Almondmilk
1 1/2 teaspoons pure maple syrup
1/2 cup non-fat plain Greek yogurt
1 tablespoon ground flaxseed meal
Optional toppings: Toasted almonds ( or walnuts; dried fruit, such as raisins, cranberries, or apricots, additional maple syrup)

Steps:

  • Add the ingredients to a 16-ounce mason jar or other individual storage container in the order listed above: oats, cinnamon, ginger, cloves, salt, diced apples, almondmilk, maple syrup, Greek yogurt, and flaxseed. Do not shake. Seal jar and refrigerate overnight (or up to 5 days). You can also layer the ingredients in a bowl, then cover the bowl with plastic wrap and refrigerate.
  • When ready to eat, shake the jar to combine the ingredients or empty the contents of the container into a serving bowl and stir to combine. Add a little more Greek yogurt or almondmilk if a thicker/thinner consistency is desired. Add any desired toppings and enjoy!

1 apple, preferably McIntosh, cored and coarsely chopped
1 cup rolled oats
1/4 teaspoon ground cinnamon
Pinch kosher salt
2 cups water
2 tablespoons pure maple syrup
1/4 cup toasted pecans

Steps:

  • Combine the apple, oats, cinnamon, and salt in a large microwave-safe bowl water, and stir in the water. Cover and seal with plastic wrap or a tight fitting lid and heat in the microwave on high until apples are soft and most of the liquid is absorbed, about 8 minutes. Stir in the maple syrup. Divide between 2 bowls and top with the nuts. Serve immediately.

1 1/4 cups water
1 apple, peeled and chopped
1/4 cup dried cranberries or 1/4 cup raisins
1/2-1 teaspoon cinnamon (saigon cinnamon is my preference)
1 teaspoon vanilla
honey (optional) or maple syrup, to taste (optional)

Steps:

  • Place milk, water and sugar in saucepan.
  • Chop apple into small, thin chunks. Add it and the dried fruit to the milk mixture.
  • Heat the mixture on medium until boiling or near boiling.
  • Add oats and cinnamon and cook for 3-5 minutes stirring occasionally. If desired, also add honey, brown sugar or maple syrup.
  • When oatmeal is cooked, add vanilla.
