My college roommate took me home to her farm for a weekend visit back in 1962. This is a salad we had for dinner one night while I was there. It's been requested of me ever since then. It's a real tasty addition to any meal.

1 cup boiling water
1 (3 ounce) package cherry flavored Jell-O®
⅓ cup cinnamon red hot candies
¾ cup cold water
½ cup tart apples, diced
½ cup celery, chopped
½ cup walnuts, chopped

Steps:

  • In a medium bowl, add boiling water to the cherry gelatin and stir to dissolve. Carefully add the cinnamon candies. Let them sit for a minute, then stir to dissolve the candies into the gelatin mixture. Once they are fully dissolved, add the cold water. Allow the mixture to sit for ten minutes to come to room temperature.
  • At room temperature, mix in the apples, celery, and walnuts. Pour gelatin mixture into a decorative mold or serving bowl and refrigerate overnight to set.

1/2 cup red-hot candies
1 cup boiling water
1 package (3 ounces) lemon gelatin
1 cup applesauce
1 package (8 ounces) cream cheese, softened
1/2 cup Miracle Whip
1/2 cup chopped pecans
1/4 cup chopped celery

Steps:

  • In a bowl, dissolve candies in water (reheat if necessary). Add gelatin; stir to dissolve. Stir in applesauce. Pour half into an 8-in. square pan that has been lightly coated with cooking spray. Refrigerate until firm. Cover and set remaining gelatin mixture aside at room temperature. , Meanwhile, combine the cream cheese, Miracle Whip, pecans and celery; spread over chilled gelatin mixture. Carefully pour remaining gelatin mixture over cream cheese layer. Chill overnight.

3 tablespoons red-hot candies
1-1/2 cups cold water
2 medium tart apples, peeled and chopped
1 package (8 ounces) cream cheese, softened

Steps:

  • Place gelatin in a large bowl. In a small saucepan, combine water and candies. Cook and stir until candies are dissolved and mixture comes to a boil. Stir into gelatin. Stir in cold water., Set aside 1 cup gelatin mixture; let stand at room temperature. Refrigerate remaining gelatin until set but not firm. Fold in apples; pour into a 6-cup mold coated with cooking spray. Refrigerate for 30 minutes or until firm., In a small bowl, beat cream cheese until smooth. Quick French apple jam that tastes just like apple pie! It's low sugar and can be made without pectin. This favorite apple jelly is a mixture of sour and sweet apples!

10 cups 1/4″ diced apples (about 3-4 pounds)
2 cups granulated sugar**
3 Tbsp ground cinnamon
1 1/2 tsp nutmeg
1/2 tsp cloves
1 1/2 tsp gelatin (I recommend Perfect Supplements)

Steps:

  • In a large stockpot, combine the apples, sugar, cinnamon, nutmeg, and cloves. Bring the mixture to a simmer.
  • After a while, the apples will start to release their juices. When they do, use a glass measuring cup like this one to measure out 1/4 cup of juices. Sprinkle the gelatin over the juices and let it sit to bloom.
  • Meanwhile, let the apples continue to cook until they become soft and the juices have mostly evaporated. Stir often to prevent burning.
  • When there's very little juice left in the pot, remove the apples from the heat. Whisk the gelatin in the measuring cup with the liquid, and then pour the liquid into the apple mixture. Stir well.
  • Distribute between pint-sized jars like these and let the apple jam cool completely before storing in the freezer.
