Cheesecake-who doesn't like cheesecake? When the fruit ripens on our backyard trees, this treat is a must. The flavorful apple-cinnamon-nut topping and the raspberry jam layer make this dessert outstanding.

1 cup all-purpose flour
1/3 cup sugar
1/2 cup cold butter,cubed
1/3 cup seedless raspberry jam
FILLING:
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
2 eggs, lightly beaten
2 teaspoons vanilla extract
TOPPING:
1/3 cup sugar
1/2 teaspoon ground cinnamon
3 cups thinly sliced peeled tart apples
1/2 cup sliced almonds

Steps:

  • In a small bowl, combine the flour and sugar; cut in butter until crumbly. Press onto the bottom and 1-1/2 in. up the sides of a greased 9-in. springform pan; prick with a fork. Place on a baking sheet. Bake at 350° for 10 minutes or until soft but set. Cool on a wire rack. , Carefully spread jam over crust. For filling, in a large bowl, beat cream cheese and sugar until smooth. Add eggs and vanilla; beat just until blended. Spread over jam. For topping, combine the sugar and cinnamon in a large bowl. Add apples and toss to coat. Spoon over filling. Sprinkle with almonds. , Bake at 350° for 55-60 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan.

1 cup graham cracker crumbs
2 tablespoons sugar
2 tablespoons melted butter
1/4 cup butter
1/2 cup light brown sugar
2 lbs Red Delicious apples, peeled and chopped into 1/2-inch pieces
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1 1/2 cups dark brown sugar
1/2 cup butter
1 cup pecan pieces
16 ounces cream cheese
1/2 cup sugar
3 large eggs
1 cup heavy whipping cream

Steps:

  • Combine graham cracker crumbs with the 2 T sugar and 2 T melted butter.
  • Press into a 9" springform pan.
  • In a dutch oven or saucepan, melt 1/4 cup butter over low heat and add apples, sugar and spices. Simmer until apples are soft but hold their shape. Cool.
  • Mix together praline topping ingredients and set aside.
  • Beat together cream cheese, 1/2 cup sugar until light and fluffy. Beat eggs in one at a time. Add cream and be at until thick and creamy.
  • Gently stir in apple mix.
  • Pour into springform pan. Spread praline topping over cheesecake and bake 350 degrees for 1 hour and 20 minutes or until set.

1/3 cup dark brown sugar
1/3 cup whipping cream
1/2 cup slivered almonds, toasted

Steps:

  • Preheat oven to 300 degrees.
  • Combine graham cracker crumbs, almonds, sugar and butter; press firmly on bottom of nine inch springform pan.
  • In large bowl, beat cream cheese until fluffy.
  • Gradually beat in sweetened condensed milk until smooth.
  • Add eggs and almond extract; mix well.
  • Pour into prepared pan.
  • Bake 55-60 minutes or until center is set.
  • Cool.
  • Top with almond praline topping (as follows).
  • In small saucepan, combine brown sugar and whipping cream (not whipped).
  • Cook and stir over low heat until sugar dissolves. Simmer 5 minutes or until thickened.
  • Remove from heat; stir in almonds.
  • Spoon evenly over cheesecake.
  • Store covered in refrigerator.

1/2 cup raspberry jam (seedless)
2 -8 ounces cream cheese, packages (soft)

1 1/2 teaspoons almond extract
1 teaspoon tahitian vanilla extract
1/3 cup sugar
1/2 teaspoon ground cinnamon
2 cups tart apples (peeled and THINLY sliced paper thin)
1/2 cup sliced almonds

Steps:

  • In a bowl combine the flour and sugar, cut in butter until crumbly. press onto the bottom and 1 1/2 inch up sides of a greased 9 in springform pan. prick with a fork, place on a baking sheet. bake at 350 for 10 minute or until soft but set. cool on a wire rack. CAREFULLY spread jam over crust. for the filling in a smallmixing bowl, beat cream cheese and sugar till smooth, add eggs and almond extract and vanilla. beat just until blended, spread over jam. for topping, combine the sugar and cinnamon in a large bowl add apples and toss to coat, spoon over the filling, I personally like to lay them evenly over each other and fan them out.sprinkle almonds over the apples. bake at 250 for 55-60 min or until center is almost set. cool on a wire rack for 10 minute carefully run a knife around edge of pan to loosen. cool 1 hour longer, chill overnight. remove sides of pan. serve.

1 tablespoon flour
1/2 teaspoon cinnamon
4 cups apples, peeled and sliced

Steps:

  • Crust: in small mixing bowl, beat butter until light and fluffy.
