Apple-licious! Easy-to-make breakfast or dessert syrup uses unfiltered apple juice and a few other common ingredients. This creamy syrup is full of rustic apple flavor and not too sweet with just a touch of tang.

Steps:
- Melt butter in a saucepan over medium heat until it begins to bubble, about 1 minute. Add sugar and molasses; stir until sugar has absorbed molasses and butter, about 3 minutes. The mixture will be very dry. Add 2 cups apple cider. Mix well and bring to a slow boil. Add cinnamon stick and continue to simmer syrup for about 10 minutes.
- Whisk together 1 tablespoon apple cider, lemon juice, and cornstarch in a small bowl.
- Pour cornstarch mixture into syrup in the saucepan, whisking continuously until fully incorporated. Simmer until thickened, with a consistency similar to warm maple syrup, about 5 minutes. The syrup will thicken upon cooling.
- Serve warm. Store leftovers in an airtight container in the refrigerator for up to 3 weeks.

- In a small bowl, combine the first six ingredients; stir in apple and raisins. Combine the buttermilk, egg yolk, butter and vanilla; stir into dry ingredients. In a small bowl, beat egg white until soft peaks form; fold into batter. , Pour batter by heaping 1/4 cupfuls onto a hot greased griddle; turn when bubbles form on top. Cook until the second side is lightly browned., Meanwhile, in a small saucepan, combine the sugar, cornstarch and cider until smooth; add cinnamon stick. A few weeks ago, we had an informal family dinner with our cousins who had recently returned to the US from teaching in Latin America. Needless to say, we had lots to catch up on...comparing stories of life in a foreign country, discussing the different Spanish words, phrases and idioms for the different countries we'd visited. Anywho...my mom-in-law brought over some apple cider and we got so caught up in all the laughter and conversation that I forgot all about the cider in the fridge! After all were gone, we were cleaning up and discovered the unopened cider...and I immediately started thinking...what else can I do with this, besides drink it?! An experiment was in order...I wonder what would happen if I used a little cider in place of some milk in a batch of pancakes...and maybe toss in a chopped apple for kicks and giggles. A wonder-fall brinner!

- Place pancake mix into a medium bowl, and stir in apple cider. Apple cider may be adjusted to achieve the desired thickness. Stir in cinnamon, nutmeg, brown sugar and vanilla. Mix in walnuts if using.

- CIDER SYRUP: In medium saucepan, combine sugar, cornstarch and pumpkin pie spice; stir in apple cider and lemon juice.

- In a small saucepan stir together the sugar, cornstarch, and cinnamon.
- Then stir in the apple cider or juice and lemon juice.

- Coat molds of a mini-Bundt pan with nonstick cooking spray or oil.

- Preheat a griddle to 375 degrees, or a skillet on the stove top over medium-high heat. In a large bowl combine flour, sugar, baking powder, baking soda, and salt then make a well into the center. Add egg, butter, apple butter, milk, and apple cider into the center then whisk everything to combine until there are no lumps.
- Spray the griddle with nonstick spray then pour pancake batter with 1/4 cup measuring cup. Cook until bubbles appear on the surface then flip and cook until golden brown on the other side.
- SYRUP:.
- Meanwhile, in a small saucepan over medium heat, melt butter then add apple, cinnamon, and salt, and saute until apple is barely tender, 4-5 minutes. Add apple cider and maple syrup then turn heat up to bring mixture to a boil. Once boiling, turn heat back down to medium then simmer until slightly thickened, about 5 minutes. Let cool slightly then drizzle over pancakes.
