This apple manchego salad is a stunner! Matchsticks of apple and cheese tossed with olive oil make for an unexpected sweet and savory apple salad recipe.

Ingredients

4 firm tart apples (Jonathon, honey crisp or Granny Smith)
1/2 lemon
4 ounces Manchego cheese
1/4 cup chopped chives
1 tablespoon olive oil
2 pinches kosher salt

Steps:

Slice the apples into matchsticks (slice them into slices, then lay the slice down and cut into thin long rectangles). Toss the apples with a bit of fresh lemon juice.
Cut the cheese into matchsticks.
Thinly slice the chives.
Toss all ingredients with the olive oil and kosher salt. Serve immediately.

5 Granny Smith Apples
3 tablespoon Chives
6 tablespoons Olive Oil
1/3 cup Shallots
2 tablespoon Fresh Lemon Juice
2 teaspoons Lemon Zest
1 salt & pepper
1 tablespoon Apple Cider Vinegar

Steps:

1. Chop Chives fine. Mince Shallots
2. Shred apples (with skin on) in food processor to make match-stick pieces. Do the same with the Manchego.
3. Combine all other ingredients. Salt and pepper to taste.

Slice apples in matchsticks by cutting the apple into 4 quarters and then thinly slice each quarter. Stack slices and then cut long thin slices to form matchsticks. Cut the long matchsticks in half. Toss the matchsticks in lemon juice.
Cut the cheese into matchsticks and add to the bowl of apples. Add the chopped chives and stir so the cheese and chives are mixed throughout.
