Caramel Apples image

A deep, rich caramel makes for a classic shiny caramel apple.

2 cups sugar
1/4 cup light corn syrup
1/2 cup heavy cream
2 tablespoons unsalted butter
1/2 teaspoon pure vanilla extract
Kosher salt
6 medium very crisp apples (such as Honeycrisp, Red Delicious, Pink Lady or Granny Smith), well washed and dried
Nonstick cooking spray, for the parchment

Steps:

  • Add the sugar, corn syrup and 1/2 cup water to a small saucepan over medium-high heat. Stir a few times before the sugar begins to boil to combine the ingredients. Attach a candy thermometer to the inside of the pan and bring the syrup to a boil. Cook until the syrup begins to turn an amber color, then swirl the syrup to even out the color. Continue to cook until the syrup is a deep amber and the thermometer reads between 375 and 380 degrees F, then remove from the heat. Carefully pour in the cream and gently whisk to combine. Stir in the butter, vanilla and a pinch of salt until smooth. Keep off the heat but keep the thermometer attached to the pan.
  • Pierce the apples through the stem ends about halfway through with candy apple sticks. Line a baking sheet with parchment and lightly spray with nonstick cooking spray.
  • When the temperature of the caramel reads around 190 degrees F, dip an apple, using the stick as a handle and swirling to coat completely. Allow excess caramel to drip off the bottom and use a spatula to help remove any large amount of caramel, as it will pool around the apple when you set it down to cool on the lined baking sheet. Repeat with the remaining apples, gently heating the caramel on the stovetop over low heat, stirring, if it gets too thick for dipping. Allow the caramel to set and cool completely before serving or wrapping apples, about 1 hour. (See Cook's Note.)

When I was searching for a recipe to make homemade caramel apples for the very first time, a close friend gave me this amazing and fairly easy recipe. My family and friends loved these delicious treats! Sprinkle with nuts or whatever you desire while the caramel is still warm (work quickly, the caramel sets VERY fast).

8 large tart apples
8 wooden chopsticks for handles
1 cup butter
2 cups packed brown sugar
1 cup light corn syrup
1 (14 ounce) can sweetened condensed milk
2 teaspoons vanilla extract

Steps:

  • Bring a large saucepan of water to a boil. Dip apples in boiling water for a few seconds, then dry with paper towels to remove any wax from the peels. Set apples aside; when completely cool, insert a wooden chopstick firmly into the bottom of each apple for a handle.
  • Line a baking sheet with parchment paper.
  • Stir butter, brown sugar, corn syrup, and sweetened condensed milk together in a saucepan over medium-high heat. Bring to a boil, stirring constantly, and reduce heat to medium. Cook until a candy thermometer reads 248 degrees F (120 degrees C), 25 to 30 minutes; stir constantly to prevent burning. A teaspoon of the syrup, dropped in a glass of cold water, should form a firm ball. Remove caramel from heat and stir in vanilla extract.
  • Working quickly, dip each apple into the hot caramel to completely coat the apple and about 1/2 inch of the wooden handle. Sprinkle apples with any desired toppings while still hot. Let caramel apples cool on the parchment paper. Use caution, caramel is very hot.

6 medium baking apples, such as Boskop, Braeburn, Fuji, or Gala
4 to 6 dried figs
1/4 cup chopped almonds, toasted
1 cup sugar
1/3 cup plus 2 tablespoons butter
1 tablespoon heavy cream or creme fraiche
Juice of 1 lemon
Serving suggestion: cinnamon whipped cream or creme fraiche

Steps:

  • Preheat the oven to 350 degrees F.
  • Core the apples. Using a paring knife, score a ring around the midriff of each apple, just cutting through the skin to prevent the apples from bursting during baking. Stuff the apples with the figs and almonds. Set on a baking sheet, and bake until puffed up and soft all the way through, about 30 minutes.
  • Meanwhile, put the sugar in a saucepan with a spoonful of water, and boil to a golden caramel, about 5 minutes, depending on how much water you've added. Do not stir the sugar with a spoon, gently swirl the saucepan over the heat until the desired color. You want a nice rich caramel color, but don't let it get too dark.
  • Serve the baked apples warm from the oven with the sauce poured over and with a generous slump of cinnamon whipped cream or creme fraiche on the side.

I overcooked my apples and I saw in a grocery store Apple Caramel Syrup and thought I could do this and tried it. I have a baking apple tree and so they are tart apples. I was just trying something new and different. Can use as Ice Cream Topping or Pancake/Waffle Syrup.

4 cups apples (with juice)
3 cups sugar
1/2 cup Karo syrup
1/4-1/2 cup Mrs Richardson's caramel topping (I am sure a person could use reg. caramels and melt them in the kettle while cooking too)

Steps:

  • I happened to over cook my apples after I peeled and cored them so they were to soft to even try to get them out and drain them.
  • (I had a canner full of apples.) So I mashed them with the juice, (left some lumps) and came up with this recipe.
  • You can use it as Ice cream Topping, or Pancake/waffle syrup.
  • I put the apple mixture in a kettle and heated.
  • I added the sugar, Karo Syrup,& Mrs.
  • Richards Caramel Topping and brought to a boil for a couple minutes and put into pint jars and process them for 30 minutes to make sure they sealed.

5 large Granny Smith apples - peeled, cored, and thinly sliced
½ cup white sugar
1 tablespoon all-purpose flour
½ teaspoon ground cinnamon

1 cup quick cooking oats
1 cup butter, softened
1 (14 ounce) package individually wrapped caramels, unwrapped

Steps:

  • Preheat oven to 350 F (175 degree C).
  • In a medium size bowl, toss apples with sugar, flour, cinnamon, lemon juice, and water; spread evenly into a 8x8 inch pan. In another bowl, mix together flour, brown sugar, oats, and butter; spoon mixture evenly over apples.
  • In a heavy sauce pan over low heat, melt the caramels with the evaporated milk. Heat , stirring frequently, until mixture has a smooth consistency. Drizzle the caramel sauce over the top of the crumble.
  • Bake in preheated oven for about 45 minutes (apple mixture will bubble and topping will be golden brown).

2 medium cooking apples
4 tablespoons butter
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ground cloves
2/3 cup brown sugar
1 1/2-2 teaspoons cornstarch (amount may be adjusted to make a thinner or thicker syrup as desired)
1 cup water, cold
1/3 cup walnut pieces
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
4 tablespoons melted butter or 4 tablespoons oil
2 cups buttermilk

Steps:

  • SYRUP:.
  • Peel, core, and thinly slice the apples, set aside (this is fast work with the food processor).
  • In a large saucepan, melt the butter over low heat.
  • Stir in the spices and brown sugar all at once.
  • Mix the cornstarch into the 1 cup of water until dissolved and immediately add the water mix, stir until the sugar is dissolved.
  • Add the apples and cook over medium heat, stirring frequently, until the apples are nearly tender and the syrup is bubbly.
  • While the apples are cooking, make the pancakes.
  • Serve.
  • Note: If you would like a thinner syrup, simply add a little more water.
  • PANCAKES:.
  • Mix the dry ingredients together in a large bowl.
  • Mix the egg, butter, and buttermilk together in a small bowl.
  • Make a depression in the dry ingredients and add the liquid mixture.
  • Stir until moistened, some lumps will remain.
  • Add more water to get the right consistency, if required.
  • Do not over mix.
  • Pour about 1/3 cup of batter onto a hot, lightly greased griddle.
  • Cook for about two minutes on medium heat or until the edges are set and the bubbles remain open.
  • Turn over and cook on the other side.

1 teaspoon salt
1 cup shortening
2 eggs

1/4 teaspoon ground cinnamon
CARAMEL SAUCE:
1 jar (12-1/4 ounces) caramel ice cream topping
1-1/2 cups packed brown sugar
1 cup water
1/4 cup butter, cubed

Steps:

  • In a large bowl, combine the flour, 2 teaspoons sugar and salt; cut in shortening until crumbly. In a small bowl, combine 1 egg, water and vinegar; gradually add to crumb mixture, tossing with a fork until dough forms a ball. Divide into seven portions. , On a lightly floured surface, roll each portion into a 7-in. square. Place an apple on each pastry square; place 1 tablespoon butter in the center of each. Combine cinnamon and remaining sugar; sprinkle over apples., Bring up corners of pastry to center; pinch edges to seal. Beat remaining egg; brush over pastry. Place in a greased 13-in. x 9-in. baking dish. Bake at 350° for 15 minutes., Meanwhile, in a large saucepan, combine the sauce ingredients. Bring to a boil; cook and stir until smooth and blended. Pour over apples. Bake 35-40 minutes longer or until apples are tender and pastry is golden brown, basting occasionally with sauce. Serve warm.

1/2 teaspoon salt
1/3 cup cold shortening
1 tablespoon cold butter
1 teaspoon vegetable oil
3-4 tablespoons buttermilk

3 tablespoons Gold Medal™ all-purpose flour
4 cups chopped peeled apples (4 medium)
1 tablespoon sugar
1/2 teaspoon ground cinnamon
1 cup caramel topping

Steps:

  • Heat oven to 400°F. In medium bowl, mix 1 cup flour and the salt. Cut in shortening and butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle oil and buttermilk, 1 tablespoon at a time) sprinkle over flour mixture, tossing with fork until all flour is moistened and dough almost cleans side of bowl.
  • Gather dough into a ball; shape into flattened 5-inch round on lightly floured ungreased large cookie sheet. With floured rolling pin, roll pastry into 12-inch round.
  • In large bowl, mix 1/2 cup sugar and 3 tablespoons flour. Stir in apples until coated. Mound apple mixture on center of dough round to within 2 inches of edge. Fold edge of dough over apple mixture; crimp edge of dough slightly. In small bowl, mix 1 tablespoon sugar and the cinnamon; sprinkle over apples and dough.
  • Bake 42 to 47 minutes or until crust is golden brown and apples are fork tender. (If apples begin to brown to quickly, coverthe apples loosely with aluminum foil.) Cut into wedges. Serve warm drizzled with caramel topping.
