APPLE CAKE (VERY MOIST, MADE WITH YOGURT
A very moist and easy to make apple cake!

Steps:
- Prepare an 8″ springform pan by spraying with oil (or butter) and lining in parchment paper (sides optional, if you want really clean sides), then spray the paper, too.
- In a food processor, or blender, process the apple pieces and lemon juice until it is almost pureed.
- Place the sugar and eggs in a large bowl and beat with a mixer until light and fluffy. Sift the flour with the baking powder then add to the mixture in the bowl a little at a time along with the softened butter. Continue to mix until completely blended, then stir in the yogurt.
- Add the processed apples and grated lemon rind to the cake batter and stir until evenly combined.
- Pour into prepared cake tin.
- Bake for 50-60 minutes (depending on your oven), but test with a cake tester or skewer to make sure the apple cake is done before removing from the oven. If desired, sprinkle lightly with some granulated sugar immediately. Allow to cool for about 15 minutes, then remove the side of the springform pan.
- Let cool completely before cutting and serving.
- The cake can stand on its own, but you can also serve it with a fruit sauce, dollop of whipped cream, custard or vanilla ice cream. I prefer it plain with a cup of tea!

SUPER MOIST FRESH APPLE CAKE
This is one of those cakes that, well, the longer it sets, the better it gets. Oh, don't get me wrong, it is just as delicious warm and fresh out of the oven. The added bonus to this lovely cake is that instead of drying out, it gets more moist as the days pass on, if it lasts that long...

Steps:
- Cream together the eggs, oil and sugar.
- In a separate bowl, sift the flour, salt and baking soda.
- Combine all.
- Now add your nuts, vanilla and apples.
- Note~this batter is VERY stiff, don't worry, it's suppose to be that way. When the apples cook they add plenty of moisture to the cake to make it moist. Plus, your going to add more moisture when your glaze soaks inches.
- Pour into a greased and floured 9 X 13 cake pan. Bake at 350 for 45 minutes or until a toothpick comes out clean from the center of the cake.
- In a sauce pan, combine your glaze ingredients and boil for a few minutes. Set aside.
- When cake is done, puncture the top of cake with a fork, quite a bit. Pour on your glaze.
APPLE YOGURT CAKE OR LOAF
A light and moist cake , good to use up any large tubs of yogurt left in the fridge.

- Preheat the oven to 180 degrees (fan oven) and line a cake tin (try loaf tin)
- Melt the butter in a saucepan and add the apples until softening and going golden brown then add the cinnamon and nutmeg and keep on the heat until the apples are very soft do not allow to burn. (I also drained off some of the butter from the pan)
- Remove the apples from the heat and put to the side
- Meanwhile whisk together the yogurt and sugar
- Add the flour and baking powder to the yogurt mix and then add the vegetable oil and eggs mix until well combined
- Then add the apples to the mixture and stir until well combined
- Pour mixture into the prepared tin and bake for 35mins until a skewer comes out clean and the top is a dark brown colour / has a crack on the surface
- Leave to cool in the tin for around 10mins and then cool on a wire rack

- Lightly spray cake tin (round or square medium size) with spray vegetable oil. Preheat oven to 180 degrees celsius (moderate heat).
- Cake: Combine in a bowl all dry ingredients (flour, oats, brown sugar, baking powder and baking soda, nutmeg, cinnamon, salt).
- Combine in a small separate bowl yogurt and olive oil, then add to dry ingredients.
- Add apple juice and eggs and beat until combined, then fold in the apples.

- Topping: Mix yogurt and olive oil in a bowl.
- Combine oats, flour, sugar and grated apple.
- Mix until it is a crumbly texture (If too moist you may add pinches of flour, however the crumble effect will still happen after cooked). Crumble mixture over top of cake batter and bake for 30-35 minutes or until cake is firm and bounces back when lightly touched.
