Steps:

  • Sift flour, baking powder, salt and pepper to taste into a bowl.
  • Add egg, mixing to combine.
  • Stir in sweetcorn.
  • Heat oil in a frying pan.
  • Drop tablespoonsful of corn mixture into pan.
  • Cook until golden then turn and cook the other side.
  • Drain on absorbent paper.

2 large ears sweet corn (or 1 packed cup of thawed, drained, frozen corn)
2 large eggs
1/4 cup milk (whole)
1/4 cup all-purpose flour
3 tablespoons yellow cornmeal
1 1/2 teaspoon sugar
1/2 teaspoon salt (or to taste)
2 1/2 teaspoons baking powder
1 bottle peanut oil for frying (or canola)
Kosher salt for finishing

Steps:

  • Gather the ingredients.
  • Using a sharp knife over a large bowl, carefully shave the corn kernels off the cob into the bowl. With the back of the knife, scrape the milky juice from the cob into the bowl as well.
  • Whisk the eggs and milk into the corn until thoroughly combined.
  • In another bowl, combine the flour, cornmeal , sugar, salt, and baking powder.
  • Pour into the bowl of the corn mixture, and stir with a spatula to form a thick batter.
  • In a heavy-duty skillet, pour enough oil so it's about 3/4-inch deep. Over medium-high heat, bring the oil to 375 F.
  • When the oil is hot, carefully drop rounded tablespoons of the batter into the oil. Don't crowd the pan; the fritters should not touch each other. Cook about 3 minutes on each side, until the corn fritters are golden brown.
  • Drain on paper towels or a wire rack and add a sprinkling of salt if desired.

Chile Sweet Corn Fritters image

These easy fritters celebrate the flavors of summer and can be made all year round using frozen sweet corn. They are perfect for the whole family. I like to add a little fresh chile heat to mine, but when I am making them for kids, I simply leave it out.

Number Of Ingredients 13

One 10-ounce bag frozen sweet corn, thawed (about 2 cups)
1 small red onion, finely chopped
1 fresh red chile, deseeded and finely chopped, optional
1 medium clove garlic, finely chopped
3 tablespoons finely chopped fresh parsley
1 tablespoon nutritional yeast flakes, optional (or 1 tablespoon soy sauce)
1 cup all-purpose flour
1 teaspoon baking powder
A scant 1/2 cup (100 ml) unsweetened almond milk
Flaky sea salt and freshly ground black pepper
1 tablespoon fresh lemon juice
Olive oil, for frying
Store-bought sweet chili sauce, warmed, for serving

Steps:

  • In a medium bowl, mix the corn, onion, chile if using, garlic, parsley and yeast flakes. Stir in the flour and baking powder. Gradually stir in the milk, mixing to combine all the ingredients. Season with a pinch of salt and pepper and stir in the lemon juice.
  • Heat 1 tablespoon oil in a large sauté pan over medium-high heat. To check the heat, drop a test piece of batter in, and you should hear a sizzle in the pan.
  • Spoon 1 tablespoon of the corn mixture into the pan for each fritter, leaving a little space between them so they don't stick together. Pat each fritter down with the back of the spoon so it is flatter and easier to cook on both sides. Fry until golden brown on the first side, about 2 minutes, then flip to brown the other side, about 2 minutes more.
  • Cook the fritters in batches, using 1 tablespoon of oil for each batch, until all the corn mixture has been cooked.
  • Serve with the warmed sweet chili sauce for dipping.

1 teaspoon baking powder
1/2 teaspoon salt
2 large eggs, lightly beaten
1/4 cup milk
1 1/2 cups fresh yellow corn kernels
2 tablespoons vegetable shortening or bacon fat
Honey or syrup, optional

Steps:

  • Combine flour, baking powder, and salt in medium bowl. Stir in eggs and milk just until flour mixture has all been moistened. Mixture should be lumpy. Fold in corn. Melt 1 teaspoon shortening in a large skillet over medium heat. Drop corn batter by tablespoonfuls into skillet and fry until brown on both sides and centers feel firm when gently pressed, about 5 to 7 minutes. Remove to platter and keep warm. Repeat until all batter has been used, adding shortening as needed. Serve with honey or syrup, if desired.

150g self-raising flour
1 tsp baking powder
1 tsp smoked paprika
160ml whole milk
1 egg
550g sweetcorn
2 spring onions, chopped, plus a little extra cut into thin strips to serve (optional)
10g sliced chives
handful of parsley, chopped
rapeseed oil, for frying

Steps:

  • Mix the flour, baking powder, paprika and milk together in a large bowl. Mix in the egg, followed by the sweetcorn, chopped spring onions, chives, parsley, 1 tsp salt and some freshly ground black pepper.
  • Heat a 1cm depth of oil in a frying pan over a medium heat until a small amount of the fritter mixture sizzles when dropped in. For larger fritters, drop 2 heaped tablespoons of the mixture into the pan at a time in a clockwise direction (this will help you remember the order they were added to the pan, so you can flip them at the right stage). For smaller fritters, do the same, but with 1 heaped tablespoon of mixture at a time.
  • After 2 mins, flip the fritters over in the same order they were added to the pan. Cook for another 2 mins, continuing to turn every now and then to ensure both sides are evenly golden brown. When ready, the fritters should be darker brown with crispy pieces of corn at the edges - be careful, as some of the kernels may burst during the cooking process. Remove to a wire rack and pat away any excess oil using kitchen paper. Serve straightaway with a few strips of spring onion scattered over, if you like.

1/2 cup cornmeal
2 teaspoons baking powder

vegetable oil (for frying)
maple syrup (optional) or powdered sugar (optional)

Steps:

  • With a sharp knife, cut down the center of each row of corn. Cut corn kernals from cob with a sharp knife. Scrape cob with back of knife to remove remaining bits of corn, if desired. Set aside.

3/4 cup all-purpose flour
2 tablespoons yellow cornmeal
1 tablespoon sugar
1 1/2 teaspoons baking powder
Coarse salt
1/4 teaspoon cayenne
1/2 cup whole milk
1 large egg
2 cups yellow corn kernels (from 2 ears corn)
Vegetable oil, for frying
Honey, for serving

Steps:

  • In a large bowl, stir together flour, cornmeal, sugar, baking powder, 1 1/2 teaspoons salt, and cayenne. Add milk and egg to flour mixture and stir together to create a batter. Add corn and fold to combine.
  • Heat 4 inches oil in a large heavy-bottomed pot or Dutch oven over high heat until a deep-fry thermometer reaches 375 degrees. Working in batches, using a small ice cream scoop or two spoons, drop batter by the tablespoon into the oil. 1 teaspoon baking powder
3 ears fresh corn, kernels cut from cob
2 eggs, separated
½ cup heavy whipping cream
salt and freshly ground pepper to taste
1 quart vegetable oil for frying, or as needed
2 tablespoons cane syrup, or as desired

Steps:

  • Whisk flour and baking powder into a bowl and mix in corn kernels. Whisk egg yolks with cream in a small bowl and stir into the corn mixture; season with salt and black pepper. Beat egg whites with an electric mixer until fluffy and stiff peaks form in a separate bowl. Gently fold egg whites into the batter, retaining as much volume as possible.
  • Pour vegetable oil into a deep heavy skillet to a depth of 3 inches. Heat to 375 degrees F (190 degrees C).

I adapted this from an Amish recipe. I love them sprinkled with a little confectioner's sugar and served with maple syrup for breakfast. You can also serve them as a side dish. The yield is approximate. Depends on how large or small you make them, and how much corn you put into it.

1 egg, beaten
1/2 cup milk
1 tablespoon sugar (optional)
1 1/2 cups sifted flour
2 teaspoons baking powder
1 teaspoon salt
1 dash pepper
1 tablespoon margarine or 1 tablespoon vegetable oil
1 cup cooked whole kernel corn (can use up to 2 cups if desired)
oil (for deep frying, see note)
confectioners' sugar, for dusting (optional)

Steps:

  • Beat the egg, milk and sugar together.
  • Sift the dry ingredients and add to the egg mixture.
  • (If using sifted flour, you can just mix the dry ingredients together well and still get excellent results).
  • Add the melted butter or margarine (or oil) and beat or stir briskly by hand until well blended.
  • Stir or fold in the corn until evenly distributed.
  • Drop by tablespoons into hot deep fat (375 degrees) and cook until golden brown.
  • Drain on paper towels.
  • Place on plates and dust with confectioner's sugar if desired. These are best if served with maple syrup.
  • Notes: I usually try one first.
  • If I find the oil is bubbling through the fritter, which would make it too greasy, I'll add a little more flour to the batter to prevent that.
  • Also, as a shortcut, instead of deep frying, I usually pour 2 or 3 inches of oil into a large saucepan or electric frying pan and fry that way.
  • When one side is brown, I just turn and brown the other side.
