EASIEST EVER MOIST APPLE CAKE
A very moist, perfectly spiced Apple Cake! This is incredibly easy to make - no mixer required. This must be made with fresh apples, not canned. See note 5 for information about different measures in different countries & different oven types. Also, I do not recommend substituting butter for all or part of the oil - it does not come out as moist and you can't taste buttery flavour anyway because of the spice flavourings! FREEZES great!

CARAMEL APPLE CAKE

Steps:
- Butter a 9-by-3-inch round cake pan. Make the caramel: Cook the sugar and corn syrup in a large skillet over medium-high heat, stirring occasionally, until the sugar is dissolved and the mixture is dark amber, 7 to 10 minutes.
- Reduce the heat to medium. Carefully add the cream and 4 tablespoons butter (it will splatter) and cook, stirring, until combined, about 3 minutes.
- Remove the skillet from the heat and let sit 1 minute. Pour 1 1/2 cups caramel into a glass measuring cup and set aside. Pour the remaining caramel into the prepared pan and set aside until set, about 30 minutes.
- Cut 3 apples into quarters and cut out the cores with a paring knife. Arrange the pieces skin-side down in the pan (overlapping them slightly) to form a ring about 1/2 inch from the edge. Save any pieces that do not fit for later.
- Halve the remaining whole apple crosswise. Scoop out the seeds with a melon baller or measuring spoon, leaving the stem on the top half. Chop the bottom and any of the leftover quartered apples into pieces; set aside.
- Arrange the apple top, stem-side down, in the center of the pan. If the quartered apples shift, just push them back into place.
- Preheat the oven to 350 degrees F. Make the batter: Whisk the flour, baking powder, baking soda, salt and cinnamon in a medium bowl. In a small bowl, whisk the sour cream, orange juice and vanilla.
- Using a stand mixer with the paddle attachment, beat the butter and sugar on medium-high speed until light and fluffy, about 5 minutes.
- Crack the eggs into a small bowl. Slip them into the mixer bowl, one at a time, and beat until the mixture is pale and creamy, about 5 more minutes. Scrape down the bowl and beater with a rubber spatula.
- With the mixer on low speed, add half of the sour cream mixture, then half of the flour mixture. Repeat. Turn off the mixer and scrape down the bowl with a rubber spatula; finish combining the batter by hand.
- Spread the batter over the apples in the pan. Top with the chopped apple. Bake on the middle oven rack until the cake is brown on top and springs back when pressed, 1 hour to 1 hour 20 minutes (don't worry if the top is dark). Cool in the pan on a rack.
- Bring 1 inch of water to a simmer in a skillet wide enough to hold the cake pan. Carefully run a sharp knife around the inside of the pan several times, then rest the pan in the water to soften the caramel, about 8 minutes. Remove the pan from the water and dry.
- Invert a plate on top of the cake, then flip over the cake and plate. Using pot holders or a towel, wriggle the pan off. Soften the reserved 1 1/2 cups caramel in the microwave, about 2 minutes. Drizzle the cake with some of the caramel. Slice and serve with the rest.

Steps:
- Preheat the oven to 350 degrees F. Generously butter and flour a 10-cup bundt pan.
- Whisk the flour, baking powder, baking soda, salt, 1 1/3 cup of the sugar and 1 teaspoon of the pie spice together in a large bowl.
- Toss the apples with the remaining 1/4 cup sugar and 1/2 teaspoon pie spice and set aside. Whisk the eggs and oil together in another bowl.
- Whisk in the sour cream, orange zest and juice, and vanilla. Pour the egg mixture into the dry ingredients and stir with a wooden spoon just until combined but still a bit lumpy.
- Using a slotted spoon, scatter about 1/2 cup of the apples in the bottom of the bundt pan. Put about a third of the batter on top. Repeat, alternating with the remaining apples and batter, ending with the batter.
- Bake the cake until it pulls away from the sides of the pan and a skewer inserted into the center of the cake comes out clean, about 1 hour and 15 minutes. Cool 10 minutes and invert the cake onto a rack placed over a baking sheet. Cool. (The cake can be prepared to this point a day ahead.)
- To make the caramel: Combine the sugar, corn syrup, and 2 tablespoons water in a small saucepan. Bring to a boil over medium heat and cook, swirling the pan but not stirring, until the sugar is dark amber-colored caramel, about 15 minutes. Pull pan from the heat and carefully pour in the cream (take care it will splatter). Stir in the pecans, vanilla, and salt. Cool until caramel becomes thick and syrupy, then evenly pour over the cake and cool until set.

APPLE CAKE
IOWA-"We are retired and not longer have an orchard, but we bury crisp apples each fall from a nearby fruit grower. My husband and I really enjoy them, so we always get several bushels. We each eat an apple a day in winter. "For get-togethers, I like to make apple pie, apple salad or Apple Cake (recipe below). It's a moist yummy cake with a rich sweet butter sauce." -Leona Luecking, West Burlington

Steps:
- Prepare an 8″ springform pan by spraying with oil (or butter) and lining in parchment paper (sides optional, if you want really clean sides), then spray the paper, too.
- In a food processor, or blender, process the apple pieces and lemon juice until it is almost pureed.
- Place the sugar and eggs in a large bowl and beat with a mixer until light and fluffy. Sift the flour with the baking powder then add to the mixture in the bowl a little at a time along with the softened butter. Continue to mix until completely blended, then stir in the yogurt.
- Add the processed apples and grated lemon rind to the cake batter and stir until evenly combined.
- Pour into prepared cake tin.
- Bake for 50-60 minutes (depending on your oven), but test with a cake tester or skewer to make sure the apple cake is done before removing from the oven. If desired, sprinkle lightly with some granulated sugar immediately. Allow to cool for about 15 minutes, then remove the side of the springform pan.
- Let cool completely before cutting and serving.
- The cake can stand on its own, but you can also serve it with a fruit sauce, dollop of whipped cream, custard or vanilla ice cream. I prefer it plain with a cup of tea!

AMISH APPLE CAKE WITH HOT CARAMEL SAUCE

FRESH APPLE CAKE WITH EASY BROWN SUGAR CARAMEL SAUCE

Steps:
- Preheat oven to 350 degrees F. In a large bowl combine eggs and oil and whisk for 2 minutes, or until foamy and pale. Gradually add sugar, while whisking. Add flour, cinnamon, soda and salt (yes just throw it on top of the mixture of oil/egg/sugar. You probably think I should be telling you to 'sift ingredients', blah. Don't waste your time.) Stir dry ingredients into wet ingredients only until combined. Don't overmix. Add chopped apples. Fold in gently. Pour batter into a greased 9x13 inch glass baking dish. Spread evenly. Bake for 50-55 minutes in a preheated 350 degree F oven. Remove from oven, let cool a bit. Serve warm with Brown Sugar Caramel Sauce. (recipe below.)
- *I like larger pieces of apples in my cake and sometimes make 3/4" pieces. Try 1/2" pieces if you are unsure.
- *Try to use a flavorful baking apple, tart in flavor works well. About the only apple that won't work is "Red Delicious" and any apple that is mushy.)
- In a medium saucepan, whisk together sugar and cornstarch until well blended. (This will prevent the cornstarch from clumping.) Add water and whisk well. Bring to a boil over medium high heat. Boil for 6 minutes. Remove from heat. Add vanilla and butter. Mix well until combined. Set aside to cool to warm. (The sauce will thicken as it stands. When it is hot, it will look thinner than it will turn out. Don't worry!) You can pour this on the cake, or serve it on the side.
- *If you make the cake with Honeycrisp apples, you could add 1 TBSP of honey to this sauce to play off of the honey flavored apples in the cake.

- Preheat the oven to 350F/177C. Line an 8-inch (20-cm) springform pan with parchment paper and spray the sides with a baking spray.
- In a large mixing bowl, combine the buttermilk, oil, eggs, sugar, vanilla and caramel. Beat the ingredients together on medium to high speed for 2 to 3 minutes, until the eggs are well beaten. In a separate bowl, combine the dry ingredients: flour, baking powder, baking soda and salt. Sift the dry ingredients into the cake batter. Mix the flour into the batter on low speed for about 1 minute, just until it’s incorporated.
- The apples can be used with or without the peel. Dice the apples into small, pea-sized pieces and place into a bowl. Add the cornstarch and cinnamon and toss the apples until they’re well coated. Add two-thirds of the diced apples into the cake batter and fold them in.
- Transfer the cake batter into the prepared pan and then top the cake with the remaining apples. Bake in the preheated oven at 350F/177C for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean. Remove the cake from the oven and onto a wire rack to cool completely. Do not frost the cake while it’s warm!

- Make the cake: Preheat the oven to 350°. Lightly butter a 9-by-13-inch baking dish. In a bowl, sift together the flour, baking soda, cinnamon, salt and nutmeg.
- Using a standing electric mixer fitted with a paddle or a handheld electric mixer, beat the butter, oil and sugar on high speed until thoroughly combined. Add the eggs one at a time, beating well after each addition. Add the vanilla and beat until light and fluffy, 3 to 4 minutes.
- Beat in the dry ingredients on medium speed just until blended. Fold in the apples. Spread the batter in the prepared dish and bake for about 50 minutes, or until golden and a cake tester inserted in the center comes out clean. If the top browns too quickly, cover loosely with foil during the last 20 minutes. Let the cake cool slightly on a rack.
- In a saucepan, bring the maple syrup, butter, cream and salt to a boil over moderate heat. Boil rapidly for 1 minute. Let cool slightly. Cut the apple cake into pieces and serve warm with the maple sauce and vanilla ice cream.
