1 cup dried breadcrumbs
3/4 cup grated peeled red apple (1 to 2 apples)
1/2 cup golden raisins
1/4 cup pitted prunes, coarsely chopped
1/4 cup honey
2 tablespoons Armagnac or other good-quality brandy
1 teaspoon ground cinnamon, plus more for sprinkling
1/2 teaspoon coarse salt
5 sheets phyllo dough (at least 11 by 14 inches), thawed if frozen
1/2 cup (1 stick) unsalted butter, melted
Confectioners' sugar and whipped cream, for serving

Steps:

  • Preheat oven to 375 degrees, with rack in upper third. Gently stir together breadcrumbs, apple, raisins, prunes, honey, brandy, cinnamon, and salt in a medium bowl. Set filling aside.
  • Brush a sheet of phyllo with butter. Top with 2 sheets, and brush with butter; repeat. Spread with filling. Starting at a short end, roll to enclose filling. Transfer, seam side down, to a baking sheet lined with parchment paper.
  • Bake until golden brown, about 35 minutes. Transfer strudel to a wire rack; let cool 15 minutes. Sprinkle with cinnamon and sugar, and serve with whipped cream.

3 large (about 1½ lbs) baking apples, peeled, cored and sliced ⅛-in thick (see note)
⅓ cup granulated sugar
½ teaspoon cinnamon
2 tablespoons apple brandy or regular brandy
½ cup raisins
Pinch salt
½ cup walnuts, very finely chopped
10 (9x14-in) sheets phyllo dough, thawed
1 stick (½ cup) unsalted butter
¼ cup panko bread crumbs
Confectioners' sugar, for dusting

Steps:

  • In a large skillet, combine the apples, granulated sugar, cinnamon, brandy, raisins, and salt. Cook over medium heat, stirring frequently, until the liquid from the apples dissolves and the apples are soft, 10 to 12 minutes. Stir in the walnuts and set aside to cool.
  • Preheat the oven to 350°F and set an oven rack in the middle position. Line a 13 x 18-inch baking sheet with parchment paper.
  • Wet and wring out a clean dishtowel. Have the melted butter nearby with a brush. Unroll the phyllo and cover it with the plastic wrap from the package (it's usually rolled in a sheet of plastic) or a sheet of wax paper, followed by the damp towel; keep it covered as you work so it doesn't dry out. (Note: if you work quickly, you don't need to be quite as careful about this.)
  • Place 1 phyllo sheet on a clean work surface with the long side facing you. Brush the sheet with melted butter. You may find it easier to drizzle a bit of butter on the dough with the brush and then spread it across the dough in gentle strokes. Layer with four additional phyllo sheets, brushing each layer with the melted butter. (You should have a stack of five buttery sheets.)
  • Spread half of the panko followed by half of the apple mixture (on top of the panko) in a 3 by 10-inch rectangle about 2 inches from the bottom of the phyllo sheets and about 2 inches from each side. Fold the sides of the phyllo over the filling, then fold the bottom edge of the phyllo over the filling. Roll up jelly-roll style and carefully transfer to the prepared baking sheet, seam side down. Repeat the process with the remaining phyllo sheets and apple filling. Brush the top of the strudels with the remaining butter. With a sharp knife, cut diagonal slits in 2-in intervals through the top layers of the dough just to the filling.
  • Bake until the strudels are golden brown, about 30 minutes. Let cool for at least 20 minutes. Transfer the strudels to a cutting board and slice each one into thirds or quarters. Dust with confectioners' sugar, then serve warm or room temperature.
  • Note: Readily available baking apples include Granny Smith, Golden Delicious, Fuji, Jonagold, and Honey Crisp. Use a mix of different varieties for best results.
  • Note: Phyllo is more forgiving than you think. If it tears, just patch it back together with your fingers.
  • Make-Ahead & Freezing Instructions: You can prepare the strudel rolls and refrigerate them for up to 2 hours before baking. You can also wrap the individual rolls in heavy-duty aluminum foil and freeze for a few months; just keep in mind that frozen strudel rolls will take a bit longer to cook. (Leftovers reheat well in a 300°F oven or toaster oven.)

2 tbsp golden caster sugar
200ml pressed apple juice
1 cinnamon stick
100ml cognac
50ml Disaronno
50ml madeira wine
juice 1 lemon
a large handful of ice

Steps:

  • Dip the rim of 4 Martini glasses in a saucer of water, then into a saucer or small dish of golden caster sugar. Pop the glasses into the fridge until ready to serve.
  • Warm the apple juice in a small saucepan with the cinnamon stick. Bring to the boil, then turn off the heat and leave to go cold. Once cold, discard the cinnamon stick and pour into a jug.
  • Put the Cognac, Disaronno, Madeira wine and lemon juice into a cocktail shaker with a large handful of ice. Shake together until the mixture is chilled. Strain into your glasses, top up with the spiced apple juice and serve immediately.

1 1/4 cups apple juice
2 tablespoons cornstarch
1 1/2 pound apples, peeled, cored and sliced 1/4-inch thick (about 5 cups)
1/2 cup dark seedless raisins
3 tablespoons granulated sugar
1 teaspoon ground cinnamon
1/3 cup chopped pecans
4 sheets phyllo dough
1/3 cup (5 1/3 tablespoons) melted butter
3 tablespoons fine dried breadcrumbs
Confectioners' sugar, for garnish
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
  • In a small bowl, create a slurry by combining 1/4 cup of the apple juice with the cornstarch. Mix until smooth and set aside.
  • In a large saucepan over medium heat, cook the apples with the remaining 1 cup apple juice, raisins, sugar and cinnamon until the apples are tender, 8 to 10 minutes. Stir the cornstarch slurry (it may have settled) and add it to the apple mixture, stirring constantly until smooth and lump free. Simmer for 1 minute more, stirring constantly. Remove from the heat and cool. Stir in the pecans, cover and chill.
  • Lay out 1 phyllo sheet on a clean, flat, lightly floured surface. Brush with some melted butter and sprinkle with 1 tablespoon breadcrumbs. Repeat this procedure with two more layers of phyllo, butter and breadcrumbs. Top with the fourth sheet of phyllo. Spread the apple filling evenly onto the phyllo surface, leaving a 1/2-inch clean edge on all sides. Roll into a log, folding the edges at each end beneath the log and brush with some melted butter. Carefully place the strudel on the prepared baking sheet, seam-side down. Bake the strudel until golden brown, 15 to 18 minutes. Remove from the oven and cool for 15 minutes before cutting into 2-inch slices. Sprinkle with confectioners' sugar just before serving. Serve plain or with ice cream.

100g golden granulated sugar , plus extra
seeds scraped from 1 vanilla pod
4 Granny Smith apples, peeled and diced
25g each currant and sultanas
1 tsp ground allspice
1 tsp ground nutmeg
85g walnuts , chopped
6 large sheets filo pastry
50g butter , melted
200ml tub crème fraîche

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat 75g of the sugar and the vanilla seeds in a medium, heavy-based frying pan over a medium-low heat for 5-8 mins, or until golden brown and caramelised. Add the apples, currants, sultanas, allspice, nutmeg and walnuts, then cook for 10 mins or until the apple is tender. Remove the apple mix from the pan with a slotted spoon and cool to room temperature.
  • Line two baking trays with baking paper. Place a sheet of filo on one of the trays, then brush lightly with the melted butter. Sprinkle over 1 tsp sugar. Repeat the process until there are 3 layers of filo. Repeat with the remaining sheets of filo on the second tray.
  • Divide the apple mix along the shorter edge of both pastry sheets and gently roll into 2 logs, tucking in the ends as you go. Brush with melted butter and sprinkle over 1 tbsp sugar. Can be made up to one day ahead, kept chilled. Bake for 25 mins, or until the pastry is golden brown and crisp. Let cool slightly, then cut each strudel into 6 diagonal slices. Serve two slices each with a dollop of crème fraîche on the side.

1 teaspoon cinnamon

Steps:

  • Preheat oven to 350°.
  • Grease the bottom only of a small (4 cups or so) casserole dish. Peel and core the apples, slice and place in a bowl. Top with sugar, cinnamon and vanilla, toss to coat. Set aside while preparing topping.
  • Make the streusel by cutting the cold butter into a bowl, adding flour, sugar, cinnamon, and nutmeg, if using. Rub it through your fingers until the streusel is a coarse, sandy/pebbly texture.
  • Put the seasoned apples into the pan, top generously with the streusel, and bake at 350° about 30 minutes, or until the streusel is golden brown and the apple is starting to bubble up through the topping.

4 granny smith apples
1 ounce butter
2 tablespoons orange juice
1 tablespoon honey
3 tablespoons sugar
1/2 cup sultana raisin
2 sheets puff pastry
3 tablespoons ground almonds
1 egg, lightly beaten
2 tablespoons soft brown sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven 425F degrees. Lightly grease two cookie sheets.
  • Peel, core, and thinly slice the apples.
  • In a saucepan, heat the butter and cook the apples for 2 minutes until lightly golden. Add the orange juice, honey, sugar, and raisins. Stir until the sugar dissolves and the apples are just tender. Set aside and allow to cool completely.
  • Place sheet of pastry on a flat surface. Fold in half and make small cuts in the folded edge of the pastry at 3/4 inch intervals. Open the pastry and sprinkle with half of the ground almonds.
  • Drain the apple and place half of the apple in the center of the pastry. Brush the edges with egg and fold together, pressing firmly.
  • Place the strudel on the cookie sheet, seam side down. Brush with egg and sprinkle with half of the combined sugar and cinnamon.
  • Make another strudel with the other sheet of pastry and the remaining apple filling.
  • Bake for 20-25 minutes or until the pastry is golden and crisp.

2 apples, cord and sliced super thin on a mandolin
1/4 cup turbinado sugar
1 teaspoon cinnamon
1/4 teaspoon cardamom (optional)
1 lemon, juice
1 pinch salt
1/3 cup mixed nuts, dried fruit
1 teaspoon vanilla
1 tablespoon flour
1 teaspoon sugar
1 puff pastry sheet, defrosted

Steps:

  • Preheat the oven to 375°F
  • Beat the egg and water in a small bowl with a fork or whisk.
  • Stir sugar cinnamon, lemon juice, salt, nuts, vanilla, and flour together.
  • Mix in apples gently.

cooking spray
400 g apples (canned no added sugar sliced)
2 tablespoons raisins
1/2 teaspoon cinnamon (ground)
160 ml custard (2/3 cup low fat)

Steps:

  • Preheat oven to 180C fan forced.
  • Line a baking tray with baking paper.
  • Place 1 pastry sheet on a clean surface and spray lightly with cooking spray and then top with another pastry sheet and repeat spraying and layering with remaining pastry sheets to form a stack.
  • Cut the pastry stack into 4 equal rectagles and place 1/4 of the apple slices along one of the long sides of one of the pastry rectangles and then top one quarter of the raisins and sprinkle with a little of the cinnamon.
  • Fold in the short ends of the pastry and roll up to enclose filling and place on the baking tray and then repeat with remaining pastry rectangles, raisins and a little of the cinnamon.
  • Spray the tops of the pastry rolls with cooking spray and sprinkle with the remaining cinnamon and bake for 15 minutes or until the pastry is golden.
  • Cut the strudels in half and pour the custard over to serve.
