APPLE STREUSEL BRAN MUFFINS
This recipe has 1 cup natural bran which makes this recipe good with fiber. Also can use applesauce or sour cream instead of vegetable oil. I found that a little applesauce with the chopped apples and a little streusel topping in the middle makes a nice middle of muffin if you would like to make a gourmet muffin. I have found

APPLE BRAN MUFFINS
Meet the Cook: This recipe dates back to when our two girls - now 15 and 12 - were in preschool and it was my turn to bring a snack for the class. My husband especially asks for the muffins in winter. Crafts and reading are my hobbies. -Nancy Brown, Klamath Falls, Oregon

APPLE BRAN MUFFINS
This is a nice change from a plain bran muffin. It's somewhat healthier, because it's made with yogurt. I always double the cinnamon sugar on top (personal preference). Sometimes I add some chopped pecans (or walnuts). Don't let the long list of ingredients scare you - these come together fast.

APPLE BRAN MUFFINS WITH APPLE BUTTER
I love apples and I love baking with apple butter. I searched zaar looking for a muffin recipe that used both as ingredients but found nothing so I decided to experiment and create my own recipe using the ingredients that I like. This was the end result and I was so pleased with how they turned out that I had to share! You could add 1/4-1/2 cup of nuts or raisins if you'd like but I like them just the way they are. Enjoy!

REFRIGERATOR APPLE BRAN MUFFINS
I made these at the request of my oldest granddaughter who likes healthy food. Even though these may be put in the refrigerator for up to two weeks, you may bake them all at once and freeze them. They are so moist and good. Very healthy as they are lower in fat than some and eggs whites are used in place of the whole eggs. They make about 24 muffins.

Steps:
- Preheat oven to 350. Combine all dry ingredients and all wet ingredients, excluding the pumpkin and apple, in two seperate mixing bowls.
- Add to the dry ingredients the pumpkin and apple, and mix until combined well.
- Add the wet ingredients to this mixture.
- Spray with cooking spray your muffin pan or loaf pan, and bake for 30 minutes at 350, or until a knife inserted in the center comes out clean. Note that these don't rise much and stay a relatively dark color; they are a moist muffin.
- Additional Notes: May be beneficial to use half whole wheat flour and half white or all purpose, so they rise more/are a bit lighter. They taste great but aren't the prettiest things ;-) I ended up dividing the batter between three mini loaf "pans" instead of muffins, but it should make about 12 medium sized muffins.
