1 1/2 to 2 sticks salted butter, cut into pieces, plus more for greasing
8 slices hearty wheat bread, diced
3 apples, preferably Granny Smith, peeled, cored and diced
1 1/2 packed cups brown sugar, plus more if needed

Steps:

  • Preheat the oven to 375 degrees F. Generously butter a 9-by-13-inch rectangular baking dish.
  • Place half the diced bread in the baking dish, and then sprinkle on half the diced apples, half the brown sugar and half the butter. Repeat with another layer of bread, apples, brown sugar and butter. End by sprinkling 1/2 cup water all over the surface, a spoonful at a time.
  • Bake, covered in foil, until the apples are tender, about 45 minutes. Remove the foil and bake for an additional 10 to 15 minutes to brown.

3/4 cup granulated sugar
1/2 cup light brown sugar, lightly packed
2 teaspoons pure vanilla extract
4 cups all-purpose flour
1 1/2 teaspoons kosher salt
1/2 cup chopped walnuts
1 teaspoon ground cinnamon
1 1/2 pounds Granny Smith apples, peeled, quartered, cored and sliced 1/8 inch thick (3 large)
1 1/2 pounds Golden Delicious apples, peeled, quartered, cored and sliced 1/8 inch thick (3 large)
2 tablespoons freshly squeezed lemon juice
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
4 tablespoons (1/2 stick) unsalted butter

Steps:

  • Preheat the oven to 375 degrees F.
  • For the crust, place the butter, granulated sugar, brown sugar and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9-by-13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides (use a metal measuring cup to make the corners). Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
  • Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon and mix on low speed to combine. Set aside.
  • Reduce the oven to 350 degrees F.
  • For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon and nutmeg and mix well. Melt the butter in a large (10-inch-diameter) pot, add the apples and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
  • Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.
  • To store the bars, cool them completely, wrap tightly and keep at room temperature for up to 2 days.

2 teaspoons cinnamon
1 1/4 cups flour
3/4 cup brown sugar
1/4 lb butter
2/3 cup brown sugar
1/4 cup hot water
1/2 lemon, juice of

Steps:

  • Pre-heat oven to 350 degrees.
  • Arrange slices in the bottom of a lightly greased 12x9 pan.
  • Sprinkle with cinnamon.
  • Mix flour and brown sugar.
  • Cut in butter until crumbly and set aside.
  • Syrup: Combine ingredients and stir well.
  • Drizzle half of mixture over apples.
  • Cover with flour mix.
  • Pour remaining syrup over top.
  • Bake at 350 for one hour.

3 slices firm white sandwich bread, torn into quarters
For shortbread base
1 1/2 sticks (3/4 cup) cold unsalted butter
2 cups all-purpose flour

For apple filling
1 1/4 sticks (1/2 cup plus 2 tablespoons) unsalted butter
2 lb tart apples
2/3 cup granulated sugar
2 tablespoons all-purpose flour

Steps:

  • Preheat oven to 350°F.
  • Prepare bread crumbs:
  • Grind bread to fine crumbs in a food processor. Spread in a shallow baking pan and toast in middle of oven, stirring once, until golden, about 5 minutes. Leave oven on.
  • Make shortbread base:
  • Cut butter into 1/2-inch pieces, then pulse in a food processor with flour, brown sugar, and salt until it begins to form small lumps. Sprinkle base into a 13- by 9-inch baking pan and press evenly onto bottom. Bake in middle of oven until golden, about 20 minutes.
  • Prepare filling while shortbread is baking:
  • Melt butter and keep warm. Peel, quarter, and core apples and thinly slice quarters crosswise. Stir together sugar and flour in a small bowl.
  • Assemble and bake squares:
  • Sprinkle half of sugar mixture over hot shortbread, then top with apples and sprinkle with remaining sugar mixture. Top with bread crumbs and drizzle all of butter over them.
  • Bake in upper third of oven, pressing down on filling with a metal spatula halfway through baking, until apples are very tender and bread crumbs are golden, 50 minutes to 1 hour total. Cool 20 minutes in pan on a rack.

1 bag (6 oz) sweetened dried cranberries
1/2 cup granulated sugar
1 tablespoon ground cinnamon
1 container (8 oz) sour cream
3 eggs
1/2 gallon vanilla ice cream

Steps:

  • Heat oven to 375°F. Spray 15x10-inch pan with cooking spray.
  • In large bowl, mix Bisquick mix, oats and brown sugar. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture is crumbly. Remove 1 1/2 cups crumb mixture to small bowl; stir in pecans. Set aside for topping. Pat remaining crumb mixture into bottom of pan.

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan with shortening. In large bowl, beat butter and brown sugar with electric mixer on medium speed until well mixed. Beat in 1 cup flour, the oats, cinnamon, baking soda and pecans until well blended and crumbly. Press half of the crumbly mixture in bottom of pan to form crust. Reserve remaining crumbly mixture for topping.
  • Spread apples over crust in pan. In 1-quart saucepan, heat 3/4 cup caramel topping and 1/4 cup flour to boiling, stirring constantly. Boil about 1 minute, stirring constantly, until slightly thickened. Drizzle over apples. Sprinkle with reserved crumbly mixture.

2 apples (thinly sliced)
1 cup sour cream
1 egg

Steps:

  • Preheat oven to 350*.
  • Combine cake mix and butter; mix until crumbly.
  • Reserve 2/3 cup of crumbly mixture for topping.
  • Stir brown sugar into remaining mixture.
  • Cover bottom of ungreased 13x9 inch pan with brown sugar mixture. Pat down.
