APPLE APPLESAUCE YOGURT DELIGHTFUL
A dessert that can be made once you get home from school or like me work. You could even start this when your making dinner & it will be ready just in time for dessert...

Steps:
- 1. Stir the boiling water into the dry gelatin in a medium bowl for at least 2 mins until completely dissolved. Remove 3/4 cup of the gelatin, pour into a small bowl & add in the applesuace with the cinnamon. Stir until blended.
- 2. Pour into serving bowl or flour dessert glasses. Refirgerate for about 45 mins or until set, but not yet frim.
- 3. In the mean time, refrigerate the reamining gelatin for about 30 mins or until slightly thickened. Stir in the yogurt. Spoon over gelatin layer in bowl.
- 4. Special Tip: Sprinkle lightly some ground cinnamon just before serving.

- For the Granita: In a shallow 8-inch square pan, stir the applesauce and lemon juice together and spread the mixture evenly in the pan. Place the pan in the freezer for at least 1 hour.
- For the Sauce: In a bowl, combine the yogurt, maple syrup, and cinnamon. Chill the sauce until ready to serve.
- Remove the granita from the freezer. With a fork, scrape the surface of the granita to gently fluff it up. Serve immediately, in dessert glasses or dishes, drizzled with yogurt sauce.
APPLESAUCE PARFAITS WITH YOGURT AND CRISPY QUINOA

- For the applesauce: Put the apples, lemon juice, brown sugar, sugar, cinnamon and salt in a heavy-bottomed saucepan with a lid. Bring to a boil, then cover, turn to heat to low and simmer, stirring occasionally, until the apples are completely soft, 20 to 30 minutes. Taste, and add more sugar if desired.
- Off the heat, mash the apples well with a potato masher or a fork. Allow to cool before serving in the parfaits.
- For the crispy quinoa: Preheat the oven to 325 degrees F. Line a baking sheet with parchment. Toss the quinoa, coconut oil and honey in a bowl and spread in an even layer on the prepared baking sheet. Bake until lightly golden brown, about 20 minutes. Remove to a baking rack to cool.
- For the parfaits: Mix together the yogurt, vanilla bean seeds and vanilla extract in a bowl. Spoon some of the yogurt mixture into four parfait glasses. Scatter some quinoa on top, then spoon in a thick layer of applesauce. Sprinkle with more quinoa, add another thick layer of yogurt, and sprinkle again with quinoa. Add a dollop each of applesauce and yogurt, and a final sprinkling of quinoa. Garnish with fresh mint sprigs if desired.

- Preheat the oven to 350F. Grease an 8-inch square baking pan.
- Put the flour, brown sugar, cinnamon, baking powder, baking soda, and salt into the baking pan. Use a fork to thoroughly mix the ingredients together.
- Use your hands to make a hole in the center of the dry ingredients. Into the hole, crack the egg and add the olive oil, yogurt, applesauce, and vanilla. Use a fork to mix the ingredients together until smooth and blended. Smooth the top of the batter with the side of a butter knife.
- Bake until the cake is fairly firm when you press lightly at its center and a toothpick inserted in the middle has no wet batter sticking to it, 25 to 30 minutes.
- Remove from the oven and leave on the counter to cool completely, 1 hour. Leave the cake in the pan. Dust with powdered sugar. Cut into pieces and use a small spatula to lift them from the pan.
