I found this recipe in a diabetics' cookbook. We really like the honey flavor. The sweetness comes through when I use the leftovers in casseroles and soups, too.

- Preheat oven to 325°. In a small saucepan, combine apple juice concentrate, honey and mustard. Cook over low heat 2-3 minutes or just until blended, stirring occasionally., Place turkey breast on a rack in a foil-lined shallow roasting pan; pour honey mixture over the top., Bake, uncovered, 2 to 2-1/2 hours or until a thermometer reads 170°, basting with pan juices every 30 minutes. (Cover loosely with foil if turkey browns too quickly.) Cover and let stand 15 minutes before carving.

Steps:
- Combine chicken stock, apple cider, honey, and salt in a large bowl; stir until honey is dissolved. Add 1/2 of the thyme, 1/2 of the sage, garlic, and black pepper; stir. Add water and stir until brine is evenly combined.
- Place turkey in a food-safe cooking bag and pour brine over turkey. Inject the meaty parts of turkey with brine using an injector. Gather bag tightly around turkey so that brine completely surrounds turkey, adding more water if needed. Seal bag, place in a large pot, and refrigerate, 24 to 48 hours.
- Preheat oven to 350 degrees F (175 degrees C). Place a rack in a large 2 1/2-inch deep roasting pan.
- Remove turkey from brine and pat dry inside and out. Reserve about 1/2 of the brine. Place turkey in a fresh oven-safe baking bag, breast-side down and place on the rack.
- Squeeze oranges and lemons into the main cavity of the turkey. Place squeezed oranges and lemons, remaining thyme, and remaining sage in the cavity. Lightly coat turkey with olive oil and season with salt and black pepper. Insert an oven-safe thermometer in the thickest part of the thigh without touching the bone.
- Bake in the preheated oven, basting with brine every 30 minutes, for 2 1/2 hours. Flip turkey and continue baking until no longer pink at the bone and the juices run clear, 1 to 1 1/2 hours more. The thermometer should read 180 degrees F (82 degrees C). Allow turkey to rest 15 to 20 minutes before slicing.

APPLE AND HONEY FLAVORED ROASTED TURKEY
When I was in Ethiopia, I was not introduced to Turkey meat and I never cooked it. The first year in the United States, I roasted chicken with some other dishes and celebrated Thanksgiving. The following year, my best friend Carole gave me her recipe. Initially, I followed hers and gradually changed to my own. This is one of my family favorite roasted Turkey:

Steps:
- Place the turkey as wrapped in the refrigerator for a day or two to defreeze.
- Unwrapped the turkey and place outside in a big pot; cover it with cold water, change the water every 30 minutes (it will take at least six hours to thaw);.
- Stick your hand in the cavity and remove any organs, or "things" you may find inside of the turkey cavity and trim excess fat.
- Under cold water, rub the turkey gently with your fingers to make sure it is clean.
- When the Turkey is clean, soak it with two squeezed lemon juice for 30 minutes and rinse the turkey, and pat dry with paper towels.
- Place the turkey, breast side up on roasting pan with rack.
- Into main cavity, sprinkle squeezed fresh lemon juice; add lemon peels and 1 bunch fresh thyme cavity. Fill the turkey body (main) cavity with apple slices.
- Tuck wings; tie legs together.
- Mix the paprika, garlic, black pepper and salt.
- Rub the skin and the cavity with the softened butter or oil, and season well with the mixed spices.
- Combine the apple juice, honey and the chicken or vegetable stock; stir until honey dissolves.
- Pour 3 cups of the mixed stock into the bottom of the roasting pan.
- Cover the turkey with an aluminum foil making it like a tent.
- Preheat oven to 350°F.
- Place turkey in oven and start roasting; remove aluminum foil after 2 ½ hours.
- Cover the turkey generously with the juices on the bottom of the pan; repeat glazing every 20 minutes. Whenever the drippings evaporate, add stock to moisten them, about 1 cup at a time.
- Roast until turkey is deep brown and thermometer inserted into thickest part of thigh registers 180°F, it will take 2 ½ to 3 hours.
- Transfer the turkey to a large cutting board; remove the stuffing (the Apple slices, lemon peels and thyme) and let it stand for at least 20 minutes before carving. Serve it warm.

ROASTED TURKEY BREAST WITH APPLES

- Preheat the oven to 375 degrees F.
- Lightly butter a 13" x 9" baking dish.
- Sprinkle the turkey with salt and pepper and half of the sage.
- In a large skillet, melt the butter over high heat.
- Brown the turkey for 2 minutes per side or until golden.
- Remove the pan from the heat and transfer the turkey to the prepared baking dish.
- Let the pan cool slightly.
- Bake the turkey in the oven for 25 minutes.
- Meanwhile, return the pan to medium heat.
- Cook the onion, bacon and remaining sage, stirring 3 to 4 minutes, until the onion is softened.
- Add the apples and cook, stirring, for 2 minutes, until the apples start to soften.
- Whisk the flour into the milk and stock, then stir into the pan.
- Bring to a boil, then reduce the heat and simmer, stirring, for 3 minutes or until slightly thickened.
- Stir the lemon juice into the sauce and season to taste with salt and pepper.
- Pour over the turkey in the dish.
- Bake for 20 minutes longer or until the turkey is no longer pink inside and meat thermometer registers 170 degrees F.
- Let the turkey stand for 5 minutes before slicing.

ROAST TURKEY WITH APPLE CIDER PAN GRAVY
Steps:
- For gravy base:
- Melt butter in heavy large pot over medium-high heat. Add turkey parts; sauté 10 minutes. Add onions, celery, and bay leaves; sauté until onions are soft, about 8 minutes. Add cloves, salt, pepper, cinnamon, and nutmeg; stir 10 seconds. Add cider, broth, and apple; bring to boil. Reduce heat to low; simmer uncovered 45 minutes, stirring occasionally. Strain stock into medium saucepan. Discard solids. Stir honey and vinegar into gravy base. (Can be prepared 1 day ahead. Cool slightly. Refrigerate uncovered until cold, then cover and keep chilled.)
- For turkey:
- Set rack at lowest position in oven and preheat to 500°F. Rinse turkey inside and out; pat dry. Sprinkle main cavity generously with salt and pepper. Place onion wedges, apple wedges, and crumbled bay leaves in cavity. Starting at neck end, carefully slide hand between skin and breast meat of turkey to loosen skin. Rub 4 tablespoons butter over breast meat under skin. Place turkey on rack set in large roasting pan. Tuck wing tips under. Tie legs together loosely to hold shape. Rub remaining 3 tablespoons butter over outside of turkey. Sprinkle with salt and pepper.
- Place turkey in oven and immediately reduce oven temperature to 350°F. Roast turkey 1 hour; pour 1 cup chicken broth over turkey. Roast 1 hour, basting once with pan drippings. Pour 1 cup chicken broth over turkey. Roast until thermometer inserted into thickest part of thigh registers 175°F, basting once with pan drippings and covering turkey loosely with foil if browning too quickly, about 1 hour longer. Transfer turkey to platter; cover loosely with foil. Let turkey rest 20 to 30 minutes (internal temperature of turkey will increase 5 to 10 degrees).
- Pour pan juices into large measuring cup. Spoon fat off top of pan juices and discard. Return pan juices to roasting pan; add gravy base. Place roasting pan over 2 burners and bring gravy to boil. Reduce heat to medium-low and simmer until gravy is reduced to 31/4 cups, stirring occasionally and scraping up any browned bits, about 15 minutes. Season gravy to taste with salt and pepper. Strain gravy into bowl.
- Serve turkey with gravy.

MAPLE ROAST TURKEY
This is the perfect turkey. The maple adds a sweet flavor that is just divine. A family favorite! Substitute 2 teaspoons dried marjoram if fresh marjoram is not available.

- Combine apple cider and maple syrup in a saucepan, and bring to a boil over medium-high heat. Continue cooking until reduced to 1/2 cup, then remove pan from heat. Stir in 1 tablespoon thyme, 1 tablespoon marjoram, and lemon zest. Stir in butter until melted, and season with salt and pepper. Cover, and refrigerate until cold.
- Preheat oven to 375 degrees F (190 degrees C). Place rack in lower third of oven.
- Place turkey on a rack set in a roasting pan. Reserve 1/4 cup maple butter for gravy, and rub the remaining maple butter under the skin of the breast and over the outside of turkey. Arrange onion, celery, carrots turkey neck and giblets around the turkey. Sprinkle 1 tablespoon thyme and 1 tablespoon marjoram over vegetables. Pour 2 cups broth into pan.
- Roast turkey for 30 minutes in the preheated oven. Reduce oven temperature to 350 degrees F (175 degrees C). Cover entire turkey loosely with foil. Continue roasting for about 2 1/2 hours, or until a meat thermometer inserted into thickest part of thigh registers 180 degrees F (85 degrees C). Transfer turkey to platter, and let stand 30 minutes.
- Strain the pan juices into a large measuring cup, and then remove any excess fat. Add enough chicken broth to pan juices to measure 3 cups. Transfer liquid to a saucepan, and bring to boil. In a small bowl, mix 1/4 cup maple butter and 1/3 cup flour until smooth. Whisk flour and butter mixture into broth mixture. Stir in remaining thyme and the bay leaf. Boil until reduced to sauce consistency, stirring occasionally, about 10 minutes. Mix in apple brandy, if desired. Season with salt and pepper to taste.

- Make turkey:
- Boil apple cider and maple syrup in heavy large saucepan over medium-high heat until reduces to 1/2 cup, about 20 minutes. Remove from heat. Mix in half of chopped thyme, half of marjoram and 1 1/2 teaspoons lemon peel. Add butter and whisk until melted. Season generously with salt and pepper. Cover and refrigerate until cold, about 2 hours. (Can be prepared 2 days ahead. Keep refrigerated.)
- Position rack in lowest third of oven and preheat to 375°F. Pat turkey dry with paper towels. Place turkey on rack set in large roasting pan. Slide hand under skin of turkey breast to loosen shin. Rub 1/2 cup maple butter over breast under skin. If stuffing turkey, spoon stuffing into main cavity. Rub 1/4 cup maple butter over outside of turkey. Reserve remaining maple butter for gravy. Tie legs together loosely to hold shape of turkey. Arrange onion, celery, carrot and reserved turkey nick and giblets around turkey in pan. Sprinkle vegetables with remaining 1 tablespoon thyme and remaining 1 tablespoon marjoram. Pour 2 cups broth into pan.
- Roast turkey 30 minutes. Reduce oven temperature to 350°F. Cover entire turkey loosely with heavy-duty foil and roast until meat thermometer inserted into thickest part of thigh registers 180°F or until juices rum clear when thickest part of thigh is pierced with skewer, basting occasionally with pan juices, about 2 hours 25 minutes for unstuffed turkey (2 hours 55 minutes for stuffed turkey). Transfer turkey to platter. Tent turkey with aluminum foil and let stand 30 minutes; reserve mixture in pan for gravy.
- Make gravy:
- Stain pan juices into large measuring cup, pressing on solids with back of spoon. Spoon fat from pan juices. Add enough chicken broth to pan juices to measure 3 cups. Transfer liquid to heavy medium saucepan and bring to boil. Mix 3 tablespoons reserved maple butter and flour in small bowl to form smooth paste. Whisk paste into broth mixture. Add chopped fresh thyme and bay leaf. Boil until reduces to sauce consistency, whisking occasionally, about 10 minutes. Mix in apple brandy, if desired. Season gravy to taste with salt and pepper.
- Brush turkey with any remaining maple butter and serve with gravy.
