This Bacon Apple Stuffing recipe will make the flavors of your Thanksgiving turkey sing! It's delicious, so flavorful, and always a crowd-pleaser.

8 ounces bacon (chopped into 1/2-inch pieces)
2 medium celery ribs
1 medium yellow onion
1 large Granny Smith Apple
¼ cup fresh parsley leaves (chopped)
1 Tablespoon fresh thyme leaves
1 Tablespoon fresh sage leaves
½ Tablespoon fresh marjoram leaves
12 ounce package Seasoned Stuffing
2 ½ cups low sodium chicken broth
1 large egg
½ teaspoon table salt
½ teaspoon black pepper

Steps:

  • Adjust oven rack to the center position and heat the oven to 350˚F.
  • Cook the bacon in a large skillet over medium heat until crisp and brown, about 10-12 minutes.
  • Transfer the bacon to a paper towel-lined plate.
  • Add the celery, onion, and apple to the same skillet the bacon was cooking in (don't drain off the bacon grease) and sauté, stirring occasionally, until softened about 8-10 minutes.
  • Add the parsley, thyme, sage, and marjoram and stir. Cook until fragrant, about 1 minute. Transfer the mixture to a large mixing bowl.
  • Add the breadcrumbs, egg, salt, pepper, chicken broth and bacon to the vegetable and apple mixture.
  • Place the stuffing mixture into a buttered 9x13 pan, or any other 3-quart pan. Bake for 45 minutes, or until the top is golden brown and the internal temperature reaches 165˚F.
  • Cool for 5 minutes, then serve.

1 stick unsalted butter, plus more for the baking dish
6 slices thick-cut bacon, chopped
2 large onions, chopped
1 bunch scallions, thinly sliced (white and green parts separated)
Kosher salt
1 tablespoon chopped fresh rosemary
3 cups low-sodium chicken broth
2 large eggs
1 cup grated Parmesan cheese
1/2 cup chopped fresh parsley
Coarsely ground black pepper
1 stale 2-pound loaf crusty white bread, cut into 1/2-inch cubes (about 16 cups)

Steps:

  • Preheat the oven to 375 degrees F. Butter a shallow 3-quart baking dish. Cook the bacon in a large nonstick skillet over medium-high heat, stirring, until crisp, about 5 minutes. Add 6 tablespoons butter, the onions, scallion whites and a pinch of salt. Cook, stirring, until softened, about 5 minutes. Stir in the rosemary. Add the chicken broth and 1 teaspoon salt; bring to a simmer, then remove from the heat.
  • Whisk the eggs in a large bowl. Whisk in the Parmesan, parsley and 1 tablespoon pepper. Stir in all but 2 tablespoons scallion greens. Stir in the bread cubes and bacon mixture.
  • Transfer the stuffing to the prepared dish. Dot with the remaining 2 tablespoons butter. Cover with foil and bake 30 minutes. Uncover and bake until browned, 20 to 30 more minutes. Top with the reserved scallion greens.

2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 stick butter, softened
1 fresh bay leaf, available in produce department
4 ribs celery and greens, from the heart, chopped (save time and purchase celery already washed, trimmed and cut into sticks, this makes chopping fast work)
1 medium to large yellow skinned onion, chopped
3 McIntosh apples, quartered and chopped
Salt and pepper
2 tablespoons poultry seasoning
1/4 cup chopped fresh parsley leaves
8 cups cubed stuffing mix (recommended: Pepperidge Farm)
2 to 3 cups chicken stock, available in paper containers on the soup aisle

Steps:

  • Preheat oven to 375 degrees F.
  • Preheat a large skillet over medium high heat. Add extra-virgin olive oil to skillet and 4 tablespoons butter. When butter melts, add bay leaf and add the vegetables as you chop them, celery, onions then apples. Sprinkle the vegetables and apples with salt, pepper and poultry seasoning. Cook 5 to 6 minutes to begin to soften vegetables and apples then add parsley and stuffing cubes to the pan and combine. Moisten the stuffing with chicken broth until all of the bread is soft but not wet.
  • Butter 12 muffin cups, 2 tins, liberally with remaining butter. Use an ice cream scoop to fill and mound up the stuffing in muffin tins. Remove the bay leaf as you scoop the stuffing when you come upon it. Bake until set and crisp on top, 10 to 15 minutes. Remove stuffin' muffins to a platter and serve hot or room temperature.

12 slices whole wheat bread, cut into 1-inch cubes (about 9 cups)
9 slices OSCAR MAYER Bacon, cut into 1/2-inch pieces
1 large red onion, chopped
3 stalks celery, chopped
1 tsp. dried sage leaves, crushed
1 tsp. dried thyme leaves, crushed
2 large Fuji apples, peeled, coarsely chopped
3 cloves garlic, minced
1/4 tsp. ground black pepper
1 cup fat-free reduced-sodium chicken broth

Steps:

  • Heat oven to 300ºF.
  • Spread bread cubes in single layer on rimmed baking sheet. Bake 10 to 12 min. or until dry, stirring every 5 min. Cool.
  • Increase oven temperature to 375ºF. Cook bacon in large skillet until crisp. Remove from skillet with slotted spoon; drain on paper towels. Discard all but 2 Tbsp. drippings in skillet. Add onions, celery and herbs; cook on medium heat 8 to 10 min. or until vegetables are crisp-tender, stirring occasionally. Stir in apples and garlic; cook and stir 3 min.
  • Toss apple mixture with bread cubes, bacon and pepper in large bowl. Add broth; mix lightly. Spoon into 12 muffin cups sprayed with cooking spray, using about 2/3 cup for each cup.
  • Bake 20 to 25 min. or until heated through.

1 lb bacon, cut crosswise into 1/4 inch strips
6 medium onions, sliced thin (about 7 cups)
1 teaspoon salt
2 granny smith apples, peeled,cored,and cut into 1/2 inch cubes (about 2 cups)
1/2 teaspoon ground black pepper
1/2 cup fresh parsley leaves, chopped fine
3 tablespoons fresh sage leaves, cut into thin strips
12 cups dried french bread cubes or 12 cups other white bread cubes
1 cup chicken stock or 1 cup canned low sodium chicken broth
3 large eggs, lightly beaten

Steps:

  • Cook bacon in large skillet or Dutch oven over medium heat until crisp and browned, about 12 minutes.
  • Remove bacon from pan with slotted spoon and drain on paper towels.
  • Discard all but 3 tablespoons of rendered bacon fat.
  • Increase heat to medium-high and add onions and 1/4 teaspoon of salt.
  • Cook onions until golden in color, making sure to stir occasionally and scrape sides and bottom of pan, about 20 minutes.
  • Reduce heat to medium and continue to cook, stirring more often to prevent burning, until onions are deep golden brown, another 5 minutes.
  • Add apples and continue to cook another 5 minutes.
  • Transfer contents of pan to large bowl.
  • Add remaining 3/4 teaspoon salt, pepper, parsley, and sage to bowl and mix to combine.
  • Add bread cubes and bacon.
  • Whisk stock and eggs together in small bowl.
  • Pour mixture over bread cubes.
  • Gently toss to evenly distribute ingredients.
  • bake at 325 for 20-30 minutes until golden brown.

Savory muffins for breakfast or snacks or even dessert. After several mods, my wife and I love this "somewhat healthy", easy muffin.

2 cups white flour
1 cup oat bran
1 cup oatmeal (not instant)
1/2-2/3 cup brown sugar (I used 2/3 cup last time and we liked the extra sweetness)
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
2 medium granny smith apples, unpeeled, chopped coarsely
1/3 lb bacon, crisply cooked (or more)
2 eggs
2 cups buttermilk
2/3 cup canola oil

Steps:

  • Preheat oven to 350 degrees F.
  • Mix all dry ingredients with spoon.
  • Stir in the apples and bacon until coated.
  • Mix all wet ingredients well, then stir together with the dry ingredients with spoon until well mixed.
  • Spray 2 regular size 12-muffin pans with flour/oil cooking spray. Use a gravy dipper or large spoon to fill the molds equally.
  • Bake for 20-25 minutes, testing with toothpick at 20 minutes. I broiled for last 4 minutes to get tops brown.
  • Wait 10 minutes to remove from pans.
  • Serve with butter or not, but serve warm.
