WHITE BEAN AND CHICKEN CHILI



White Bean and Chicken Chili image

2 tablespoons olive oil
1 large onion, chopped
4 garlic cloves, minced
2 pounds ground chicken
1 teaspoon salt, plus more for seasoning
2 tablespoons ground cumin
1 tablespoon fennel seeds
1 tablespoon dried oregano
2 teaspoons chili powder
3 tablespoons flour
2 (15-ounce cans) cannellini or other white beans, rinsed and drained
1 bunch (about 1 pound) Swiss chard, stems removed, leaves chopped into 1-inch pieces
11/2 cups frozen corn, thawed
4 cups low-sodium chicken stock
1/4 teaspoon crushed red pepper flakes
Freshly ground black pepper for seasoning
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • In a large heavy-bottomed saucepan or Dutch oven, heat the oil over medium-high heat. Add the onion and cook until translucent, about 5 minutes. Add the garlic and cook for 30 seconds. Add the ground chicken, 1 teaspoon salt, cumin, fennel seeds, oregano, and chili powder. Cook, stirring frequently, until the chicken is cooked through, about 8 minutes. Stir the flour into the chicken mixture. Add the beans, Swiss chard, corn, and chicken stock. Bring the mixture to a simmer, scraping up the brown bits that cling to the bottom of the pan with a wooden spoon. Simmer for 55-60 minutes until the liquid has reduced by about half and the chili has thickened. Add the red pepper flakes and simmer for another 10 minutes. Season with salt and pepper, to taste.
  • Ladle the chili into serving bowls. Sprinkle with the Parmesan cheese and chopped parsley.

CRISPY WHITE BEANS WITH CHILI OIL



Crispy White Beans with Chili Oil image

8 cups white beans, cooked
3/4 cup buttermilk
3/4 plus 2 tablespoons extra-virgin olive oil
1/4 cup chili oil
1 cup Arborio Rice Coating, recipe follows
2 tablespoons thinly sliced garlic
Grey salt
1/4 teaspoon freshly ground pepper
1 tablespoon thinly sliced serrano or jalapeno chile
3 tablespoons chopped fresh sage leaves
1 tablespoon julienned lemon zest

Steps:

  • In a bowl, let the beans soak in the buttermilk for a few minutes, then drain in a sieve. Place the sieve over a bowl.
  • Heat 3/4 cup olive oil and the chili oil in a 10-inch skillet over high heat. While the oil is heating, sprinkle the coating over the beans and shake in the sieve to coat the beans well. Repeat with the coating that falls into the bowl. Don't worry if they don't absorb all the coating.
  • Carefully add the beans to the hot oil, spread them into an even layer, and cook without stirring until they are browned and crisp on the bottom, 6 to 7 minutes. Turn with a spatula and brown on the other side, another 5 to 6 minutes, adjusting the heat so they don't burn. When they are evenly browned, add sliced garlic and brown for another 3 minutes. Season with salt and pepper, to taste. Add chiles to the pan, and continue to fry for another 15 seconds before adding the sage. With a slotted spoon, transfer the beans to paper towels to drain. Saute until the leaves turn crisp, about 1 minute. Top with lemon zest, then remove from the heat.
  • Chef's Notes:
  • The Arborio Rice Coating is by far the best coating I know for anything fried. It gives an especially crisp crust to fried fish fillets, squid, shrimp, eggplant and veal cutlets. You may as well make a lot because it keeps well in the freezer, and it's hard to grind less than 1 cup of rice in a blender. If you have a spice mill, you can halve the recipe.
  • Arborio Rice Coating is one of the few places I use table salt. Sea salt and kosher salt are too heavy to stay evenly distributed in the coating.
  • Bringing the beans up to a simmer slowly helps keep the skins from splitting.
  • Arborio Rice Coating:
  • 1 cup Arborio rice
  • 3 cups all-purpose flour
  • 1 cup semolina
  • 2 tablespoons table salt
  • 1 teaspoon freshly ground black pepper
  • Grind the rice in a blender until very fine. Put it in a bowl and add the all-purpose flour, semolina, salt and pepper. Toss until well blended. Store in a sealed container in the freezer for maximum freshness.
  • Yield: about 5 cups

VEGETARIAN WHITE BEAN CHILI



Vegetarian White Bean Chili image

1 white onion
1 green bell pepper
1/2 a jalapeno
2 tbsp oil
2 tsp cumin powder
1 tsp garlic powder
1 tsp salt
1/2 tsp smoked paprika
1/4 tsp cayenne pepper powder
2 cans white beans
16oz frozen white sweet corn
16oz jar salsa verde
4 cups vegetable broth

Steps:

  • Dice onion and bell pepper and deseed and mince jalapeño. Drain and rinse white beans. Heat oil in a large pot over medium low heat and add onions and peppers to the pot.
  • Saute until soft and fragrant - about 5 minutes. Mix in cumin, salt, garlic powder, smoked paprika, and cayenne. Pour beans into the pot. Mash beans down with potato masher - you just want them slightly squished, not mashed into a paste.
  • Pour corn, salsa verde, and vegetable broth into the pot and give it a good stir. Increase the heat to medium-high and bring to a boil. Reduce to a simmer and simmer uncovered for 30 minutes.
  • Cool slightly and serve with your favorite toppings!

This is my own recipe based on navy beans and dice chicken breasts, potatoes, and carrots. I serve it with rice, but pasta could be used.

1 1/2 lbs navy beans or 1 1/2 lbs black-eyed peas
1/2-3/4 lb boneless skinless chicken breast, diced into 1-inch cubes
1 (12 ounce) can tomato puree
1 onion, chopped (medium sized)
1 medium carrot, strips (1/2-inch thick)
1 medium potato sticks (1-inch x1/2-inch)
1/2 large red bell pepper, chopped
1/4 pimiento strip (optional)
2 garlic cloves, minced
3 tablespoons vegetable oil
6 cups water
1 cup water
1/4 cup dry white wine (optional)
1 tablespoon ketchup
1 tablespoon brown sugar (optional)
1 teaspoon allspice
salt and pepper, to taste
1 teaspoon powdered parsley, to taste
1 teaspoon powdered thyme
1 teaspoon coriander, to taste
2 stalks celery or 2 stalks cumin, chopped

Steps:

  • Wash beans and drain. Let them soak overnight or at least 3 hours before cooking. Discard the water.
  • Pour the beans in a large pan, into the 6 cups of water. I like to have the water level about 1 inch above the beans. Cook on high to boiling point, then simmer for 1 hour. If water level recedes to less than 1/2-inch, add a little more. Stir the beans every 10 to 15 minutes. Don't let them stick to the bottom of the pan.
  • Meanwhile, place the vegetable oil in a frying pan with the allspice and the brown sugar. Brown the diced chicken breasts.
  • Mix all of the spices (onion, celery, pepper, cilantro or coriander, parsley, and garlic)and stir fry with the chicken until the onion softens, Add the wine and cook for 2 minutes. Add the ketchup and 1 cup of water. Simmer for 5 minutes. Set aside until beans are ready.
  • After cooking the beans for 1 hour, add the potatoes and the carrots cut into julienne strips, the can or tomato concasse, the stir fried chicken and aromatic herbs (as desired). Adjust the salt and pepper to taste.
  • Serve hot on rice.
  • SUGGESTIONS:.
  • Instead of chicken use dice pork or salted pork, ham, ground beef, bacon, etc. or a mixture or combination of these (your choice).
  • Pressure cooker may be used. In this case, cooking time is reduced. Cook the beans seperatley 20 to 30 minutes then add the rest and cook another 20 to 25 minutes.
  • Beans may be baked.
  • If you want to freeze this dish, remove the potatoes. Use fresh potatoes for next meal.

2 minced garlic cloves
1 tablespoon olive oil
4 cups cooked chicken
3 (16 ounce) cans great northern beans, drained
5 cups chicken broth
2 (4 ounce) cans green chilies, chopped and drained
2 tablespoons cumin
1 1/2 teaspoons chili powder
1/4 teaspoon cayenne pepper
1/4 teaspoon oregano
1/4 teaspoon ground cloves
1/8 teaspoon paprika
2 cups monterey jack cheese, shredded

Steps:

  • In a soup pot, heat oil, add the onions and garlic and saute until soft. Add the chicken and next 9 ingredients. Bring to a boil then simmer for 30-60 minutes.
  • Serve topped with cheese.

  • Pour the dry beans into a colander and rinse them under running water thoroughly. Pick through the beans to makes sure there aren't any rocks in them. I don't know why rocks are in our beans in 2018, but I tell myself it means they are more natural.
  • Pour the beans into a slow cooker or Instant Pot. Cover with 4 cups (1 qt) bone broth and 4 cups water. Add more water if necessary. You want at least twice as much water as beans because they will swell as they cook.
  • Peel and dice the onion and toss half of it in with the beans. Refrigerate the rest to use in the soup. Peel and mince 2 garlic cloves and add them to the beans as well.
