2 cups all-purpose flour
7 ounces lard
1 tablespoon apple cider vinegar
1/2 teaspoon salt
6 tablespoons water, cold
1/2 cup sugar
2 tablespoons flour
1 tablespoon sugar
1 teaspoon cinnamon
1 pint raspberries
8 large granny smith apples
1 1/2 tablespoons lemon juice
1 teaspoon nutmeg
1 teaspoon clove

Steps:

  • Freeze the flour in a medium bowl for
  • one hour.
  • Refrigerate the lard for one hour then cut into cubes.
  • In small cup combine vinegar, salt and water.
  • Measure 1 cup flour on to table, place lard cubes on top then cover with the remaining flour.
  • Roll rolling pin over the mixture until all of t pieces have been flattened and slightly incorporated.
  • Scrape into a bowl an mix with liquid.
  • Turn dough out onto a lightly floured surface.
  • With a lightly floured rolling pin, roll out a rectangle about 8 X 12 inches.
  • Fol to the center and roll out slightly to form an 8 inch square.
  • Roll and fol once more.
  • Wrap in parchment or waxed paper and refrigerate until needed.
  • Peel and cut and core apples into eighths.
  • Then dice crosswise into 1 1/2 chunks.
  • Toss apples with lemon juice.
  • Blend together 1/2 cup sugar with flour and spices.
  • Add apples and toss until evenly coated.
  • Add raspberries last toss lightly.
  • Cut 1/3 dough and reserve.
  • Roll remaining dough into a round 5 inches larger than dish.
  • Place and fit into dish and trim overhang to 1 inch.
  • Spoon in apples and dome evenly.
  • Roll out remaining shell, crimp.
  • Sprinkle remaining sugar onto crust.
  • Cut 5 slits in center of dough.
  • Bake 425 degrees for 10 minutes, lower temperature to 400 degrees for 40 minutes, turning to brown evenly, Let cool.

Steps:

  • Heat oven to 350°F. Place pie crust in 9-inch glass pie plate as directed on package for one-crust filled pie. In large bowl, stir together apples, 1/2 cup sugar and 2 tablespoons flour and the cinnamon. Spoon into crust-lined pie plate. Sprinkle with raspberries. Sprinkle almond paste over raspberries.
  • In medium bowl, mix 1/2 cup flour and 1/4 cup sugar. Cut in butter, using pastry blender or crisscrossing 2 knives, until particles are size of small peas. Stir in almonds. Sprinkle evenly over almond paste.
  • Bake 1 hour to 1 hour 20 minutes, covering edge of crust with foil after about 30 minutes, until apples are tender in center and surface is golden brown. Serve warm or cooled.

1 1/2 sticks (12 tablespoons) salted butter, cut into pieces
3/4 cup vegetable shortening or lard
1 tablespoon distilled white vinegar
1 egg, lightly beaten
6 to 7 cups peeled and sliced Granny Smith apples
1/2 lemon, juiced
1/2 cup granulated sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
1 1/2 sticks (12 tablespoons) unsalted butter
1/2 cup all-purpose flour
1 cup packed brown sugar
1/2 cup quick oats
1/4 teaspoon salt
1/2 cup pecans, chopped
1/2 jar (or more) caramel topping

Steps:

  • For the perfect spiced pie crust: Mix the flour, cinnamon, salt and nutmeg in a bowl. Add the butter and vegetable shortening. Work the butter into the flour using a pastry cutter until the mixture resembles tiny pebbles. Add the white vinegar, egg and 5 tablespoons cold water and stir until just combined.
  • Form 2 equal-sized balls. Place each in a large plastic bag (do not seal) and slightly flatten with a rolling pin; this makes it much easier to roll out the crust later. After flattening, seal the bag tightly. Place in the freezer for 15 to 20 minutes to chill.
  • Preheat the oven to 375 degrees F.
  • Remove 1 bag of dough from the freezer (save the other dough for another use), remove the dough from the bag and place it on a lightly floured surface. Roll the dough starting at the center and working outward. Be gentle and patient; it'll take a little time to get the dough completely rolled out. If you think the bottom is really sticking to the surface below while rolling, use a metal spatula to loosen it. When fully rolled out, loosen again with a spatula and lift the pie crust into a 9-inch pie pan (or you can roll the pastry over the rolling pin, lift it onto the pie pan and unroll it). Gently press the dough against the corner of the pan and tear off any excess dough. Then tuck under the edges and go around the pie pan pinching the dough to crimp the edge.
  • For the pie filling: In a bowl, mix the apples, lemon juice, granulated sugar, flour and salt. Set aside.
  • For the crumb topping: Cut the butter into the flour with a pastry cutter, then add in the brown sugar, oats and salt.
  • Add the apples to the prepared pie shell and top with the crumb topping. Bake for 1 hour, covering the edge of the crust with foil if it starts to brown too quickly. After an hour, sprinkle the chopped pecans over the pie, then bake for a further 5 minutes.
  • Remove the pie from the oven and pour 1/2 jar (or more, if you're feeling dangerous and naughty) of caramel topping over the top. Allow to cool slightly before serving - or don't if you can't wait!

2 cups all-purpose flour, plus more for dredging
1 cup almond flour
1/4 teaspoon fine salt
1/4 cup iced water, plus extra, as needed
1 stick unsalted butter, cut into 1/2-inch pieces, at room temperature
One 7-ounce tube almond paste, cut into 1/2-inch pieces, at room temperature
3 large eggs, at room temperature, beaten
1/4 cup all-purpose flour
2 tablespoons agave
1/2 teaspoon pure almond extract
12 ounces (about 3 1/2 cups) fresh raspberries
1 egg, beaten

Steps:

  • Place an oven rack in the center of the oven and preheat to 425 degrees F. Liberally butter the tart pan.
  • For the crust: Pulse the all-purpose flour, almond flour and salt in a food processor. Add the butter and pulse until the mixture forms a coarse meal. With the food processor running, gradually add the iced water until the mixture forms a ball. Add extra water 1 teaspoon at a time, if the mixture is too thick. Form the dough into an 8-by-3-inch rectangle and wrap in plastic. Refrigerate for 30 minutes.
  • Roll the dough into a 14-by-10-inch rectangle on a lightly floured surface. Place the dough in the tart pan and trim any excess dough from the top of the pan. Reserve the excess dough. Prick the dough all over, using the tines of a fork. Bake until the crust is light golden, about 15 minutes. Cool for 10 minutes.
  • For the filling: Combine the butter, almond paste, eggs, flour, agave and almond extract in a food processor. Blend until smooth. Spread the filling evenly over the cooled crust, using a spatula.
  • In a medium bowl, toss the raspberries and agave together until coated. Gently press the raspberries into the filling in a single layer.
  • On a lightly floured work surface, roll out the excess dough into an 8-inch circle, about 1/8-to-1/4-inch thick. Cut out pieces of dough using a cookie cutter and place randomly on top of the raspberries. Brush with the beaten egg. Bake until the filling is slightly puffed and the pastry is golden, about 25 minutes. Cool completely on a wire rack, about 1 hour. Refrigerate for at least 1 hour before serving.
  • Cut into slices and serve.

2 1/2 cups all-purpose flour
2 tablespoons sugar
1/2 teaspoon salt
1 cup unsalted butter, cut into pieces
1 egg yolk
5 tablespoons cold water
1 (4 ounce) container almond paste
1/2 cup sugar
1/3 cup flour
1/2 teaspoon allspice or 1/2 teaspoon clove
3 1/2 lbs granny smith apples, peeled, cored, sliced (about 8)
1/2 pint fresh raspberry
1 tablespoon milk

Steps:

  • To prepare pastry dough, combine flour, sugar, salt, and butter in bowl of a food processor; pulse until mixture resembles coarse meal. Blend yolk and water in a small dish; add to processor. Pulse to combine mixture. Divide dough in half. Shape into disks. Wrap in plastic and chill for 1 hour (or overnight).
  • Roll out half of dough into a 15-inch circle. Place in round, shallow glass 10-inch baking dish. Trim overhang to 1-1/2 inches. Roll remaining half of dough into 12-inch circle. Using a pastry wheel, cut into 1-inch strips. Transfer to a baking sheet lined with wax paper and refrigerate.
  • To prepare filling, preheat oven to 450 degrees. Roll out almond paste between 2 pieces of wax paper to 9-inch circle. Remove paper. Place over pastry in baking dish.
  • Combine sugar, flour and allspice in a large bowl. Add apple slices. Toss. Spoon half of apple mixture into pie shell. Sprinkle with half of the raspberries. Repeat with remaining apples and raspberries, scraping in any remaining sugar mixture and spreading fruit to make level.
  • Place lattice strips on pie, spacing about 1-1/2 inches apart; trim off excess. Turn up overhang and crimp edge of crust. Place pie on baking sheet; brush pastry with milk. Tent with foil.
  • Bake in oven for 15 minute, then reduce temperature to 375 degrees. Bake for 1 hour or until apple are tender, removing foil during last 10 minutes to brown crust, if needed. Cool slightly on wire rack, then serve warm.

Edited after reading Kittencal's suggestion of cooking time and sugar. Original time was 30 min. increased to 45 min. original sugar was 1/2 cup increased to 3/4 cup.

6 cups peeled and sliced apples
½ cup crushed almonds
1 ¼ cups white sugar
½ cup brown sugar
2 tablespoons all-purpose flour
2 tablespoons honey
1 large egg yolk
½ teaspoon water
¼ teaspoon almond extract
1 teaspoon ground cinnamon, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Press 1 pie crust into a 9-inch pie pan.
  • Toss apples, almonds, white sugar, brown sugar, and flour together in a bowl until apples and almonds are completely coated.
  • Mix honey, egg yolk, water, and almond extract together in a microwave-safe dish.
