BAKED BEANS WITH SMOKED SAUSAGE
Baked Beans with smoked sausage are super meaty and thick. Lots of sweetness from brown sugar, molasses, and ketchup.

Steps:
- Preheat oven to 350 degrees.
- In a Dutch oven, cook bacon until crispy. Remove with a slotted spoon and place on a paper towel-lined plate.
- Add onion to bacon drippings and cook until soft.
- Add garlic and smoked sausage and cook until sausage is browned.
- Stir in remaining ingredients. Bring to a simmer. Place Dutch oven, uncovered, in oven and cook for 45 to 55 minutes, until thick.

SOUTHERN BAKED BEANS & GROUND SAUSAGE
Steps:
- Preheat oven to 375° Fahrenheit. Spray 3 quart casserole dish with non stick cooking spray.
- In a skillet on the stove top over medium heat, cook 1/2 lb hot ground sausage, browning and breaking it up into crumbles. When lightly browned and crumbled to desired size, remove from pan and set aside.
- Slice 1 lb hot ground sausage into at least 10 patties. Using the same skillet as before, very lightly brown the sausage patties, but do not cook through. This makes sure they brown with a bit of crisp edges when baking later. Let patties drain on a paper towel.
- In a large measuring cup, whisk together brown sugar, ketchup, spicy brown mustard, Worcestershire sauce and minced garlic to make the sauce for the beans. Set aside.
- In a large bowl, mix together pork and beans, sausage crumbles, yellow onion, and green bell pepper. Stir in sauce from the previous step and mix thoroughly but gently. Pour bean and sauce mixture into the greased casserole dish. Top with sausage patties. Press the patties gently down into the beans.
- Bake uncovered in preheated oven for 35-45 minutes. If necessary cover beans, with foil or lid around 25 minutes or so if the sausage begins to overbrown.
SLOW-COOKER BARBECUE BEANS AND SAUSAGE

- Whisk the broth, 3 cups water, tomato paste, brown sugar, molasses, mustard, barbecue seasoning and garlic in a slow cooker. Add the beans. Push a clove into each onion half; tuck the onions and sausages into the beans in the slow cooker. Cover and cook on high until the beans are tender, about 6 hours.
- Discard the onion halves. Stir in the vinegar and Worcestershire sauce, then let the mixture sit, uncovered, about 15 minutes. (The longer the beans sit, the more flavorful they will be.) Garnish with pickled peppers, scallions and/or sour cream, if desired.

SPICY BAKED BEANS
My spin on a Jimmy Dean bakeoff winner 2005. In my picture, I made 1/2 the recipe which makes plenty. I kept the full amount (1 lb) pork sausage, used chipotle powder for the red pepper and would cut back on the black pepper if you like it less spicy.

- Cook pork sausage in an ovenproof Dutch oven over medium-high heat, stirring until sausage crumbles and is no longer pink. Drain, reserving 2 teaspoons drippings in Dutch oven. Return sausage to Dutch oven and stir in onion; saute until tender. Add the remaining ingredients and stir to mix.
- Bake at 350° for 45 minutes or until thickened and bubbly.

- Heat half the oil in a large pan and cook the sausages for 12-15 mins over a medium heat until brown all over and cooked through. Remove to a plate.
- Drizzle the rest of the oil into the pan and cook the onion and peppers for 10 mins, over a low heat stirring often until all the veg has softened.
- Stir in the garlic, all the spices and the chipotle paste, if using, and cook for another minute. Add the tomatoes, a canful of water, the ketchup and some seasoning. Bring to a simmer and cook for 20 mins half-covered with a lid or loosely covered with foil. Stir occasionally, topping up with water if the mixture starts to look too thick.
- Slice the cooked sausages into thick coins and return to the pan, then tip in the beans. Cook for another few minutes until heated through, then spoon into bowls and scatter with coriander leaves, if using, some grated cheese and a dollop of yogurt or soured cream. Serve with tortilla chips for scooping, as a filling for jacket potatoes, or over rice.

HEALTHY/SPICY BARBECUE BAKED BEANS AND SPINACH
I originally got this recipe from Eating Well magazine. It was a baked beans and sausage dish. We were making bbq chicken on the grill, so I figured why not try it without the sausage. My bf said it was way better than the original recipe, so I thought I should post it. Feel free to experiment with the beans. I have made it with white kidneys beans and it is still yummy. If you are watching your weight this is a great, easy to prepare side dish for the summer months! Note: Make sure to rinse the beans it will cut down the sodium in this dish, so don't be afraid of the nutrition facts. I don't think recipezaar takes into account rinsing the beans when it figures the nutrition information.

- Heat the oil in a large frying pan. Cook the onion and sausages over a fairly high heat for 8-10 mins, turning the sausages often so they brown all over.
- Add the garlic to the pan with the kidney beans and their sauce. Half-fill one of the cans with water, swirl and then add this to the pan. Stir everything together and bring to the boil.
