- 1. Preheat oven using directions on pie crust box. Unroll crust preferably into a quiche baking pan. Using fork, poke holes in the pie crust. Bake for 5 minutes and remove from oven. Decrease oven temperature to 375 degrees.
- 2. Brown sausage and drain on paper towel. In another skillet fry bacon crisp.
- 3. In sausage skillet, add 1 tablespoon Olive Oil. Saute chopped veggie mix over medium heat until tender. Stir sausage into this and crumble bacon into the mixture as well.
- 4. In a medium sized mixing bowl whisk together eggs, milk, garlic powder, and salt and pepper. Add meat and veggie mixture to this and stir again.
- 5. Add cheese into this mix and stir. I like to use reduced fat 2% Skim mozzarella, but mild cheddar or Swiss is also good.
- 6. Pour all combined ingredients into pie shell and bake at 375 degrees for 40 minutes.
- 7. Let stand for 10 minutes and serve.
QUICHE
One of my all time favorites! My mother got this recipe from her friend Betty, It's a make ahead recipe, to be frozen and used later. My mother used to make mass quantities and take them out whenever she needed for an easy meal or hors d'oeuvre. She also made it with the light cream instead of milk.

- In medium bowl, toss 4 teaspoons flour with the grated cheese. Sprinkle mixture into the pie shell. On top of cheese, sprinkle 1/2 cup of diced ham.
- In medium bowl, combine eggs, milk or cream, and then add salt and mustard powder. Beat until smooth and pour over cheese and ham.
- Put piece of plastic wrap large enough to overlap sides over top of quiche, then a piece of foil, and seal well around the edges. (plastic keeps the foil from sticking to the food). Place prepared quiche in freezer.
- When ready to prepare, preheat oven to 400 degrees F (200 degrees C.) Remove foil and plastic wrap. Put foil around edge of crust to protect it.
- Bake in the preheated oven for 60 minutes, or until filling is set and crust is golden brown. Garnish with parsley and pimiento if desired

- On a lightly floured work surface, roll out dough to 1/4 inch thick. Cut out a 13-inch circle from dough. Press dough onto bottom and up sides of an 11-inch tart pan with a removable bottom; trim dough flush with top edge of pan. Prick bottom all over with a fork. Transfer to a rimmed baking sheet. Freeze until firm, about 30 minutes. Preheat oven to 400 degrees.
- Line tart shell with parchment paper, and fill with pie weights or dried beans. Bake until dough starts to feel firm on the edges, about 20 minutes. Remove parchment and weights; continue baking until crust is pale golden brown, about 10 minutes. Let cool completely on a wire rack. Leave oven on.
- Cook bacon in a large skillet over medium heat until browned, about 10 minutes. Transfer with a slotted spoon to paper towels to drain.
- Whisk eggs, cream, salt, and pepper in a medium bowl. Pour mixture into tart shell, and scatter the bacon strips on top. Bake until puffed and pale golden brown, about 30 minutes. Let cool at least 30 minutes before serving.
ANYTIME QUICHE
A very easy recipe to be enjoyed any time of day. This is one of those emergency meals to make when you are low on energy or prep time. Delicious! From The One Armed Chef Cookbook. You can add any leftover vegetables that you have along with the cheese. Spinach is particularly good in this recipe. Note: in the pictures I posted I added 1 c. frozen chopped spinach and 1/2 lb. browned sausage and it still fit nicely in a deep dish pie crust, but it does have to bake longer. Enjoy!

- In a medium mixing bowl, beat eggs with a whisk. Add in the milk and salt, mixing well.

- Make the pastry (recipe from Bbcgoodfood website). Chill for 30 mins minimum. Whilst pastry chills, chop onions, and sauté with the sugar, in butter for 5-10 minutes. When cool,mix with cheese,and plenty of seasoning. Blind bake pastry case in 20 cm quiche/tart tin. Add cheese and onion filling to cooked pastry case. Mix eggs and milk,and pour into quiche tin. Bake for 50 mins on 170 fan/ 180 conventional oven. When cool enough to handle, remove quiche from tin.

- thinly coat round glass or 6 X 9 Pyrex baking dish bottom and sides with canola or vegetable oil. Prepre and arrange your own pie crust or pre-formed one in baking dish and bake for approx ten minutes at 350 degrees. Remove from oven and evenly spread chopped or diced desired ingredients in the pie dish. Combine remaining ingredients in a large mixing bowl including the shredded cheese. Pour over into pie dish. Preheat and bake uncovered on middle or top oven rack at 350 degrees for approximately 30 - 35 minutes or until quiche begins to lightly brown on top.
