ANYTIME QUICHE

Anytime Quiche image

Quiche is something that can be enjoyed any time of day. It makes a good hearty breakfast to start the day with fresh fruit on the side. Of an evening, add a small dinner salad and piece of garlic bread and you have a delicious evening meal. Although most quiches are made with half-n-half which make them richer, I prefer to...

Categories     Breakfast Casseroles

Time 1h10m

Number Of Ingredients 11

1 refrigerated pie crust
1/2 lb sausage
6 slice bacon
1 Tbsp olive oil
1-1 1/2 c chopped onions, green pepper, and mushroom mixture
5 large eggs
1 c skim milk
1/8 tsp garlic powder
1 pinch salt
1 pinch pepper
1 1/4 c shredded cheese

Steps:

  • 1. Preheat oven using directions on pie crust box. Unroll crust preferably into a quiche baking pan. Using fork, poke holes in the pie crust. Bake for 5 minutes and remove from oven. Decrease oven temperature to 375 degrees.
  • 2. Brown sausage and drain on paper towel. In another skillet fry bacon crisp.
  • 3. In sausage skillet, add 1 tablespoon Olive Oil. Saute chopped veggie mix over medium heat until tender. Stir sausage into this and crumble bacon into the mixture as well.
  • 4. In a medium sized mixing bowl whisk together eggs, milk, garlic powder, and salt and pepper. Add meat and veggie mixture to this and stir again.
  • 5. Add cheese into this mix and stir. I like to use reduced fat 2% Skim mozzarella, but mild cheddar or Swiss is also good.
  • 6. Pour all combined ingredients into pie shell and bake at 375 degrees for 40 minutes.
  • 7. Let stand for 10 minutes and serve.

QUICHE

One of my all time favorites! My mother got this recipe from her friend Betty, It's a make ahead recipe, to be frozen and used later. My mother used to make mass quantities and take them out whenever she needed for an easy meal or hors d'oeuvre. She also made it with the light cream instead of milk.

Time 1h20m

Yield 8

Number Of Ingredients 10

1 ½ cups shredded Swiss cheese
4 teaspoons all-purpose flour
½ cup cooked ham, diced
3 eggs
1 cup milk
¼ teaspoon salt
¼ teaspoon ground dry mustard
1 (9 inch) unbaked pie crust
2 tablespoons chopped fresh parsley, for garnish
2 tablespoons chopped pimento peppers, garnish

Steps:

  • In medium bowl, toss 4 teaspoons flour with the grated cheese. Sprinkle mixture into the pie shell. On top of cheese, sprinkle 1/2 cup of diced ham.
  • In medium bowl, combine eggs, milk or cream, and then add salt and mustard powder. Beat until smooth and pour over cheese and ham.
  • Put piece of plastic wrap large enough to overlap sides over top of quiche, then a piece of foil, and seal well around the edges. (plastic keeps the foil from sticking to the food). Place prepared quiche in freezer.
  • When ready to prepare, preheat oven to 400 degrees F (200 degrees C.) Remove foil and plastic wrap. Put foil around edge of crust to protect it.
  • Bake in the preheated oven for 60 minutes, or until filling is set and crust is golden brown. Garnish with parsley and pimiento if desired

QUICHE LORRAINE

Quiche Lorraine image

Perhaps the most famous quiche, Lorraine is named for its region of origin in France. The classic recipe contains no cheese, only eggs, cream, and thick chunks of slab bacon, perfect for a family-friendly brunch.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Yield Makes one 11-inch quiche

Number Of Ingredients 7

All-purpose flour, for dusting
Tart Dough for Quiche
10 ounces slab bacon, cut into 3/4-by-1/4-by-1/4-inch strips
3 large eggs
2 cups heavy cream
3/4 teaspoon coarse salt
1/4 teaspoon freshly ground pepper

Steps:

  • On a lightly floured work surface, roll out dough to 1/4 inch thick. Cut out a 13-inch circle from dough. Press dough onto bottom and up sides of an 11-inch tart pan with a removable bottom; trim dough flush with top edge of pan. Prick bottom all over with a fork. Transfer to a rimmed baking sheet. Freeze until firm, about 30 minutes. Preheat oven to 400 degrees.
  • Line tart shell with parchment paper, and fill with pie weights or dried beans. Bake until dough starts to feel firm on the edges, about 20 minutes. Remove parchment and weights; continue baking until crust is pale golden brown, about 10 minutes. Let cool completely on a wire rack. Leave oven on.
  • Cook bacon in a large skillet over medium heat until browned, about 10 minutes. Transfer with a slotted spoon to paper towels to drain.
  • Whisk eggs, cream, salt, and pepper in a medium bowl. Pour mixture into tart shell, and scatter the bacon strips on top. Bake until puffed and pale golden brown, about 30 minutes. Let cool at least 30 minutes before serving.

ANYTIME QUICHE

Anytime Quiche image

A very easy recipe to be enjoyed any time of day. This is one of those emergency meals to make when you are low on energy or prep time. Delicious! From The One Armed Chef Cookbook. You can add any leftover vegetables that you have along with the cheese. Spinach is particularly good in this recipe. Note: in the pictures I posted I added 1 c. frozen chopped spinach and 1/2 lb. browned sausage and it still fit nicely in a deep dish pie crust, but it does have to bake longer. Enjoy!

WHAT TO SERVE WITH QUICHE: 29 TASTY SIDE IDEAS, TIPS & MORE

From cookingchew.com
  • Green Salad. Thanks to all the eggs and cheese in it, a quiche is often a stick-to-your-ribs kind of meal. This is why pairing it with a light green salad made with romaine, iceberg, or a mix of both, with just a few fresh vegetables can be a good idea.
  • Classic Fruit Salad. If you have made a savory quiche, especially one with proteins like chicken or crab, pairing it with a fruit salad is a good option.
  • Berries. One perfect side for quiche is a bowl of fresh and sweet berries. This pair will be most appropriate if you plan to serve quiche at a picnic or evening tea.
  • Tossed Mixed Greens. You can buy one of those big rectangular containers of spring mix, organic or otherwise, for just a few dollars and you can serve a whole table of people with a side of tossed mixed greens.
  • Tomato Soup. Soups go well with quiche, especially in fall and winter to add to the warmth and comfort of the meal. However, it can quickly become the main dish instead of the side, so if you are making a quiche with a heavy cheesy filling, a tomato soup would pair well.
  • Roasted Vegetable Bisque. Combine in a blender several kinds of cooked vegetables, add sour cream, bacon, and chives to create tasty and excellent bisque.
  • Wedge Salad. Yes, the simple wedge salad with a nice chunk of iceberg lettuce, blue cheese dressing, and chopped cooked bacon and diced tomatoes. Simple, satisfying.
  • Pea Salad. I remember having Pea Salad at my aunt’s house as a child and not being too sure about shredded cheese in a cold salad. And yet, now that I’m (almost) grown-up, this chilled and easy peasy (get it?)
  • Three Bean Salad. This is a classic at potlucks back in the day. If you’re throwing it down old school, grab your cans of cooked beans and get this one ready ahead, and pull it out just as you’re serving your warmed quiche.
  • Waldorf Salad. Ah, the salad that will forever ring in our hearts from the Hotel Waldorf Astoria. We love food history here at CookingChew, and NYT reports: The salad, originally a mix of apples and celery tossed in a good-quality mayonnaise, was created for the hotel’s debut event, a charity ball in honor of St. Mary’s Hospital for Children on March 14, 1893.
