1 package (16 ounces) tricolor spiral pasta
1 jar (16 ounces) giardiniera, drained and cut
2 cans (one 3.8 ounces, one 2-1/4 ounces) sliced ripe olives, drained
1 jar (5-3/4 ounces) pimiento-stuffed olives, drained and sliced
1 jar (7 ounces) roasted sweet red peppers, drained and chopped
8 ounces summer sausage, cubed
8 ounces pepper Jack cheese, cubed
1 cup Italian salad dressing

Steps:

  • Cook pasta according to package directions. Drain and rinse in cold water. , In a large bowl, combine the giardiniera, olives, red peppers, sausage, cheese and pasta. Add dressing; toss to coat. Cover and refrigerate for 1 hour.

After searching for a recipe for an antipasto salad that I had envisioned in my head, I gave up and just decided to create one myself. I made this dish for a party and everyone couldn't stop talking about it. The ratio of meat/cheese to veggies can be adjusted to taste.

8 ounces Genoa salami, cut into bite-size pieces
8 ounces sopressata or other hard salami, cut into bite-size pieces
8 ounces sharp provolone cheese, cut into bite-size pieces
8 ounces fresh mozzarella cheese, cut into bite-size pieces
2 large tomatoes, cut into bite-size pieces
1 (14 ounce) can artichokes, drained and cut into bite-size pieces
½ (12 ounce) jar roasted red peppers, drained and sliced
½ cup pitted and coarsely chopped Kalamata olives
¼ cup pitted and chopped green olives
1 tablespoon extra-virgin olive oil
3 tablespoons red wine vinegar
freshly-ground black pepper, to taste
¼ cup shredded fresh basil leaves

Steps:

  • Combine the Genoa and sopressata salami, provolone, mozzarella, tomatoes, and artichokes in a bowl. Slice the roasted red peppers and add them to the bowl, along with about 3 tablespoons of their juice.
  • Mix in the chopped olives. Drizzle olive oil over the entire dish, followed by the red wine vinegar and black pepper. Salad can be made ahead of time and refrigerated until serving.
  • Tear the fresh basil leaves into bite-sized pieces and add them to the salad just before serving. Mix thoroughly and serve.

1 box tri-colored twist pasta
1 can(s) black olives (drained)
1 pkg small red grape tomatoes
1 bunch green onions, chopped
1 pkg mozzarella cheese or cheddar if preferred
1/2 lb genoa salami (ask deli to cut it in one chunk)
1 bottle italian salad dressing
1/2 c chopped pepper(red, green or yellow for added color)
/2 c chopped celery
OPTIONAL INGREDIENTS
1 stick pepperoni, sliced 1/4 inch thick and halved
1 stick pepperjack or jalenpeno cheese( land 0' lakes has one)

Steps:

  • 1. Boil pasta as directed. If you prefer another type of pasta the recipe works well with almost anything.Drain and place in a bowl, adding all the other ingredients except the cheese, meat and salad dressing. Cube the cheese and meat into small bites and place in 2 plastic bags, cheese in one and meat in the other and place in the refrigerator.
  • 2. Add salad dressing over the pasta and vegetables and mix well.At this point you can refrigerate this,covered. Add the cubed meat and cheeses about 1/2 hour before the event or before serving so the cheeses don't get wet and mushy and mix well.

1 cup banana pepper rings, diced
1/2 cup red onion, thinly sliced
1 cup black olives
1 cup canned artichokes, quartered

1/2 cup extra virgin olive oil
1/4 cup red wine vinegar

1/2 cup green olives
1/4 cup sliced red onion
2 tablespoons chopped pepperoncini
8 oz. fresh mozzarella balls (halved)
4 ounces provolone cheese cut into bite size pieces
1 Recipe Italian Dressing
1/2 loaf French bread (cubed (preferably day old))
1/4 cup olive oil
1/4 tsp EACH dried basil, dried parsley, garlic powder

Steps:

  • DRESSING: Click on "Italian Dressing" in the recipe ingredients to be taken to the recipe. Italian Dressing can be made ahead of time and stored for 2 weeks in the refrigerator.
  • CROUTONS: Preheat oven to 400 degrees F. Line a rimmed baking sheet with foil and spray with cooking spray or use a nonstick mat. Add cubed bread to the baking sheet and drizzled with olive oil then sprinkle with spices; toss until evenly coated. Spread bread into an even layer and bake for approximately 12-15 minutes or until golden.

1 cup (5 ounces) chopped sharp provolone cheese
3/4 cup sliced roasted red peppers
1/4 red onion, diced
8 whole pepperoncini peppers, optional
6 fresh basil leaves, sliced into thin ribbons

1/4 cup red wine vinegar
2 cloves garlic, minced

Steps:

  • Cook the tortellini in salted water according to package instructions, until al dente. Strain and rinse with cold water to prevent sticking.

You can serve this salad as a side dish, but it's so packed with stuff that it can easily be a meal. I love this kind of dish because I can have it as a meal one day and then snack on the leftovers for a few days (right out of the container, of course).

8 ounces uncooked gemelli, penne, or bowtie pasta
1 red pepper
1/2 cup sun-dried tomatoes (packed in oil)
4 ounces fresh mozzarella cheese
1 (13-ounce) jar artichoke hearts
1 (3-ounce) can sliced black olives
1 clove garlic
2 tablespoons chopped fresh parsley
2 tablespoons lemon juice
1/4 cup olive oil
Salt and pepper

Steps:

  • Place a large saucepan of salted water over medium-high heat and bring to a boil. Add the pasta and cook for 10 to 12 minutes, until al dente. Drain in a colander and run under cold water for 1 to 2 minutes, until the pasta is thoroughly cooled. (This will also keep the pasta from sticking together.) Transfer the pasta to a large bowl.
  • Place the whole red pepper directly on the stove burner and turn to high heat. Cook the pepper for 3 or 4 minutes on each side, or until almost completely black. (If you have an electric stove, cook the pepper under the broiler instead of on the stovetop.) Place the pepper in a small bowl, cover tightly with plastic wrap, and let stand for 10 minutes. (The steam will make the skin peel right off.) Scrape the charred skin from the pepper, cut in half, and remove and discard the stem and seeds. Cut the halves into 1/4 by 1-inch strips and add to the bowl.
  • Drain the oil from the sun-dried tomatoes, cut into 1/8-inch strips, and add to the bowl. Cut the mozzarella into 1/4- to 1/2-inch cubes and add to the bowl. Drain the artichokes, cut into quarters, and add to the bowl. Drain the olives and add to the bowl.
  • Peel the garlic, finely chop, and place in a small bowl with the parsley and lemon juice. Slowly add the oil, mixing briskly with a whisk or fork. Season with salt and pepper. Pour the vinaigrette over the pasta and toss until combined. Cover with plastic wrap and refrigerate until ready to serve.
  • You can buy jars of roasted red peppers in any grocery store, but they are expensive. Roasting your own peppers may seem like a hassle, but it's very simple and will cost you less than half of what you would spend on the store bought version.

1 pound fusilli
1/2 cup olive oil
1/4 cup white wine vinegar
1 tablespoon chopped fresh oregano
1 teaspoon honey
4 tablespoons grated Parmesan

One 12-ounce jar marinated artichoke hearts, drained and chopped
One 12-ounce jar roasted red peppers, drained and sliced into 1/4-inch strips
