HOT SPICED TEA FOR THE HOLIDAYS
This is an old family favorite, handed down from my great-grandmother. The holidays officially begin with Christmas carols and my favorite hot spiced tea! Definitely a seasonal comfort beverage for me! I prefer to use fresh juices with pulp. The flavors are different. Canned pineapple in light syrup is best. Set the pineapple chunks aside for the rest of your holiday baking. Store leftovers in refrigerator and reheat as needed.

Steps:
- Pour water into a pot; add cloves and cinnamon stick. Bring water to a boil; remove from heat. Add tea bags to water and set aside to steep until the tea is to your preferred strength, at least 5 minutes. Remove and discard cloves, cinnamon stick, and tea bags.
- Stir orange juice, sugar, pineapple juice, and lemon juice together in a saucepan; bring to a boil. Cook and stir the juice mixture until the sugar dissolves completely. Pour juice mixture into the spiced tea; serve hot.

- Mix all ingredients together.
- Place into pretty airtight bottles.
- Tie with a ribbon and secure cinamon stick to make it festive.
- To serve add 1 tablespoon mix to 1 cup boiling water.

- Brew the tea in 1/2 gallon of the water, and set aside.
- Brew the cloves separately in 2 cups of the water until the water is amber-colored and has a strong clove scent. This brewing process will take longer than the tea. Strain the clove water.
- Stir the sugar into the tea until it dissolves. Add the orange juice, lemon juice, and clove water.
- Pour all into a gallon jug. Add enough additional water to fill the jug.

HOLIDAY SPICED TEA
I love this tea for the holidays because it's warm and spicy and clementines come in around this time of the year. After I've made my pot of tea, I leave the ginger, cloves and clementine peel in the kettle, add some more whole cloves, put in 2 more cups of water and let it simmer throughout the day to fill the house with a spicy aroma.

Steps:
- Fill up tea kettle with enough water for a pot of tea.
- Peel clementine, put the shell into kettle. Reserve fruit for another time.
- Put crystalized ginger, white peppercorn, cardamom, ground ginger, ground cinnamon and whole cloves into water.
- Put kettle on high heat until it comes to a boil.
- Remove from heat and let it cool down for a few minutes.
- Put white and green tea bags into a tea pot. Pour spiced water over tea until pot almost full. Let steep for 5-6 minutes, or longer if you like your tea stronger.
- You could squeeze the juice from the clementine and add this to your tea aswell, for a little more flavor.
- Enjoy!

- Reduce heat. simmer, uncovered, for 3 to 5 minutes. Discard tea bags and cinnamon stick. Stir in nectar, honey, and lemon juice. Heat through.
