- In a large bowl, combine the first 5 ingredients; stir in 1 cup cheese. Transfer to a greased 13x9-in. baking dish. , In another bowl, whisk eggs, milk, baking mix and salt until blended; pour over top. Sprinkle with remaining cheese. Refrigerate, covered, overnight., Preheat oven to 375°. Remove casserole from refrigerator while oven heats. Bake, uncovered, 30-35 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.

- If baking the same day, preheat oven to 350 degree F. Spray a 9 x 13 baking dish with non stick cooking spray. In a large skillet, cook pork sausage (adding onion and tomato half way through) over medium-high heat about 10 minutes, stirring occasionally, until fully cooked.
- In large bowl, toss sausage mixture, potatoes and cheese. Spread into baking dish.
- In another large bowl, beat eggs, egg substitute, milk, sour cream and all spices with a wire whisk until well blended. Pour over potato mixture.
- You can store this in the fridge covered overnight, or bake right away if desired.
- Bake uncovered 35 minutes. Meanwhile, in small bowl, mix cornflake crumbs and melted butter. ( if baking this casserole at a later time, do not mix cornflakes till then.)
- Remove casserole from oven long enough to sprinkle cornflakes over casserole.
- Bake another 15 minutes or until knife inserted in center comes out clean. Enjoy!

I just love this type of breakfast / brunch casserole...they are great for taking to Church...hearty and flavorful, what's not to love?...I love having the leftovers to pop in the microwave as well...enjoy! My photos.

- 1. Preheat oven to 400 degree F. Grease a 9 x 13 baking dish.
- 2. In a large skillet, brown sausage, peppers and onions, until sausage is no longer pink. Drain
- 3. In a medium sized bowl; mix sausage mixture, 1 1/2 cup cheddar and hash browns.
- 4. Pour this mixture into prepared baking dish. Spread out evenly. In same bowl, add Bisquick, milk, eggs, salt, pepper, hot pepper flakes. Whisk until blended.
- 5. Pour evenly over sausage mixture.
- 6. Bake for 40 to 45 minutes or until a knife inserted in the center comes out clean.
- 7. Sprinkle remaining cheese evenly on top and place back in oven until cheese is melted.
- 8. Cool for roughly 5 minutes before cutting. Enjoy this yummy casserole.
