Number Of Ingredients 10

1-3/4 cups all-purpose flour
1-1/2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, room temperature
2 medium ripe bananas, mashed (1 cup)
1/2 cup canola oil
1/4 cup plus 1 tablespoon buttermilk
1 teaspoon vanilla extract
1 cup chopped walnuts

Steps:

  • Preheat oven to 350°. In a large bowl, stir together flour, sugar, baking soda and salt. In another bowl, combine the eggs, bananas, oil, buttermilk and vanilla; add to flour mixture, stirring just until combined. Fold in nuts. , Pour into a greased or parchment-lined 9x5-in. loaf pan. If desired, sprinkle with additional walnuts. Bake until a toothpick comes out clean, 1-1/4 to 1-1/2 hours. Cool in pan for 15 minutes before removing to a wire rack.

Adapted from Dr. Cookie's Cookbook, I've been asked to bake this banana bread instead of birthday cake for two friends. If there's a banana or two left from a bunch that end up too soft, into the freezer they go! When we have enough frozen bananas and a rainy afternoon, the fruit is thawed and used in this recipe.

Number Of Ingredients 11

1 1/2 cups canola oil
1 1/2 cups honey or 1 3/4 cups sugar plus 1/3 cup water
3 eggs
3 cups whole wheat flour
1 1/2 cups unbleached all-purpose flour
1 tablespoon baking soda
1 1/2 teaspoons salt
3/4 cup buttermilk
4 cups mashed ripe bananas (about 9)
1 tablespoon vanilla
optional - 1-1/2 cup chocolate chips (we prefer chocolate) or 3 cups walnuts (we prefer chocolate)

Steps:

  • Preheat oven to 350° F and grease two 9-inch loaf pans for bread OR.
  • preheat oven to 400° F and line three 12-cup muffin pans with paper liners.
  • Sift dry ingredients into a medium bowl; set aside.
  • In large bowl, mix oil, honey, and eggs; stir in buttermilk, bananas, and vanilla. Add dry ingredients and mix just until combined.
  • Fold in chocolate chips or walnuts and spoon batter into prepared pans or muffin cups.
  • Bake two loaves at 350° F for 75 minutes or until a skewer inserted in the center comes out mostly dry.
  • Bake 36 muffins at 400° F for 15-18 minutes.
  • NOTES: when frozen, banana peels will turn black. After thawing, simply snip off one end of the fruit with kitchen shears and "squish" the banana right out into the bowl for mashing. The bread will be a darker color than if fresh ripe bananas are used.
  • Do not use honey for children under the age of two.

8 tablespoons (1 stick) unsalted butter, room temperature
2 large eggs
3 ripe bananas
1 tablespoon milk
1 teaspoon ground cinnamon
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan.
  • Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.
  • In a small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. In another bowl, mix together the flour, baking powder, baking soda and salt.
  • Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears.
  • Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely before slicing.
  • Spread slices with honey or serve with ice cream.

1 cup Splenda sugar substitute
1/2 cup plain fat-free yogurt
1 cup unsweetened applesauce
6 medium over-ripe bananas
2 1/2 cups whole wheat flour
5 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon ground cloves

Steps:

  • Preheat oven to 350°F.
  • Spray 2 loaf pans with cooking spray.
  • In medium bowl, combine flour, baking powder, cinnamon and cloves. Set aside.
  • In another bowl, cream together butter and Splenda.
  • Blend in mashed bananas.
  • Add flour mixture to wet mixture, stir together just until combined.
  • Spread in pans and level off with knife or spatula.
  • Bake for approximately 1 hour or till toothpick inserted in center comes out clean.

Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. I have been making this banana bread for years now.It comes from the Fanny Farmer Baking Book. I've tried others but none come close to this one. It is moist and flavorful. Wrapped tightly, it can be kept for a few days (If it lasts that long), and freezes well also. My kids like when I add about a half a cup of mini chocolate chips to this also.

2 1/2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
1 cup vegetable shortening
2 cups sugar
2 cups mashed ripe bananas (about 6 medium)
4 eggs, slightly beaten
1 teaspoon vanilla (my own addition;feel free to omit)
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour a 9X5 loaf pan.
  • Stir together the flour, salt and baking soda.
  • In a large bowl, mix the shortening, sugar, banana, eggs, and walnuts (and vanilla if using).
  • Add the combined dry ingredients and stir just until the batter is thoroughly blended.
  • Do not overbeat as that will make your bread tough.
  • Pour into a prepared pan and bake for about 65 to 70 minutes or until a skewer inserted in the center of the bread comes out clean.
  • You may have to cover the bread with foil at some point during the baking to prevent over browning.
  • Remove from the oven and let cool for about five minutes in the pan, then turn out onto a rack to finish cooling.

Yes....here goes another banana bread recipe into the archives. I made this 2 nights ago and it is delicious! I made it into 3 loaves and 12 muffins. The original recipe asks for 2 cups chopped nuts as well, but since I am allergic, I omitted them. It is a recipe from one of of my many church cookbooks that I own and the credit goes to Victoria Lindsay. Thanks!

9 ripe bananas, mashed
3 cups sugar
1 1/2 cups margarine
6 eggs
1 cup buttermilk
6 cups flour
1 tablespoon baking soda

Steps:

  • Grease 4 muffin tins.
  • Cream sugar, margarine, and eggs.
  • Add dry ingredients and mix well.
  • Add mashed bananas.
  • Pour into tins and Bake at 350 for 65-70 minutes, or until toothpick inserted comes out clean.
  • If you want to make muffins, just start checking after 20 minutes.
