Steps:
- Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
- Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
- Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

- Bring a large pot of water to a rolling boil.
- Add in a good handful of salt. Add pasta. Cook aldente or until pasta is slightly undercooked.
- Using tongs remove pasta from water into a colander. Reserve cooking liquid.
- While pasta is cooking, add garlic and olive oil to a very large skillet.
- Turn the heat on medium and cook until garlic becomes soft, about two minutes.
- Turn the heat to a medium-high and add tomatoes and salt. Cook two minutes.
- Add 1/2 cup of starchy cooking liquid leftover from pasta. Bring the mixture to a boil and reduce to a simmer for five minutes - the tomatoes should be starting to burst. If they haven't gently push on them using the back of a wooden spoon. You only want about half to burst.
- Add pasta, cook another two minutes.
- Turn the heat off, add basil and parmesan cheese.
- Toss to coat.
- If needed add more starchy pasta water.
- Season to taste with salt and pepper.
- Serve with extra grated parmesan cheese.

- Bring a large pot of salted water to a boil.
- Put the tomatoes in a large bowl. Heat the olive oil and garlic in a small saucepan over medium heat until the garlic is translucent, but not at all browned, 1 to 2 minutes. Stir in the crushed red pepper flakes, then pour the garlic oil over the tomatoes. Add 1 teaspoon salt and toss to coat.
- Cook the pasta according to package directions. Transfer the pasta directly from the boiling water to the bowl with the tomatoes using a pasta fork or tongs. Sprinkle in the Parmesan and some of the basil and toss to coat; let stand 5 minutes so that the sauce absorbs slightly. Top with the remaining basil and a little additional olive oil and serve with additional Parmesan.

ANGEL HAIR WITH CRUSHED TOMATOES AND BASIL
Steps:
- 1. Bring a large pot of water to a boil and generously salt it.
- 2. Cut a slit in the stem end of each tomato. Gently lower the tomatoes into the boiling water. Boil until the skin peels back from the slits, about 30 seconds. With a slotted spoon, transfer to a large bowl. Keep the water boiling.
- 3. While the tomatoes cool, on a cutting board, finely mince the garlic with the sugar into a paste. Peel off and discard the tomato skins, then transfer the tomatoes to a large bowl. With your hands, crush the tomatoes until chunky. Add the garlic-sugar paste and oil and crush the tomatoes into fine bits.
- 4. Add the pasta to the boiling water and cook until just al dente. Drain and transfer to the tomato sauce. Toss well. Tear the basil leaves into the bowl, season to taste with salt and pepper, and toss again.
- 5. Wipe up any oil drips or tomato sauce splatters from the counter with Clorox® Disinfecting Wipes*.

- Place a large heavy skillet over medium heat, allow pan to heat up.
- Add oil and heat 1 minute.
- Add garlic and sauté 2 minutes, stirring constantly.

ANGEL HAIR WITH BALSAMIC TOMATOES
This tastes like something I once had at Olive Garden, except I think they made it with fresh tomatoes. That limits it to a seasonal dish, since winter tomatoes, frankly, stink. Since this recipe uses canned tomatoes, you can feel gourmet at anytime. It goes together pretty quickly, especially after the first time you prepare it.

- Open the can of tomatoes.
- Do not drain, but dump the whole thing in a non-metallic bowl.
- Stir in the balsamic vinegar, black pepper, basil, and salt if you really think you need it.
- Most canned tomatoes have enough salt for this, and if you're using no-salt tomatoes, its probably because you're not SUPPOSED to have the salt.
- So drop the salt shaker, buddy.
- Let the tomatoes, et al, stand about 10 minutes.
- Sauté garlic in olive oil until translucent.
- Do not brown.
- Remove skillet from the burner, leaving garlic and oil in pan.
- Set aside.
- If you haven't already, put on a pot of water to boil for the pasta.
- A big pot, so it has lots of elbow room.
- People should stick together, not pasta.
- Hmmm, that should be a commercial.
- Drain the tomatoes, catching the juice in the skillet with the sauteed garlic.
- Bring this to a boil and then simmer until the liquid is reduced by about 1/3.
- It needs to do this in order to concentrate the flavors a bit.
- While the liquid is reducing, drop the pasta into the boiling water, and cook according to package directions, just until al dente.
- When the pasta is done, drain and keep hot if the sauce is not done yet.
- Once the liquid has reduced enough, add the tomatoes, and heat briefly.
- You want them to get HOT, not MUSHY.
- Pour all this over the hot pasta and toss.
- Serve immediately, nice and hot, passing parmesan to let everyone top their own.
- This goes nicely with my Green Bean Compromise and a tossed salad with my Extremely Bad Breath Garlic& Green Olive Dressing, but serve what you like.
- I won't mind.

- Prepare Tomatoes: Boil a large pot of water and prepare a bowl of ice water.
- Cut an X in the bottom of each vine ripe totmatoe.
- Place in boiling water for 30 seconds or until skin begins to peel back.
- Immediately remove and place in ice water.
- When all tomatoes are prepare, remove skins, core, cut each in half, and squeeze to remove seeds and pulp.
- Coarse chop tomatoes and set aside.
- In a large saute pan or skillet brown sausage and prosciutto.
- Add onions and galic and saute until onions begin to appear translucent.
- Deglaze pan with 1/4 cup of white wine and allow to reduce until liquid is almost gone.
- Add tomatoes and herbs and allow to simmer for 45 minutes.
- About 15 minutes before done add a generous amount of parmesan cheese to help thicken and flavor sauce.
- Prepare Angel Hair Pasta per directions cook until al dente.
- Drain and add to sauce, mix and transfer to large pasta bowl.
- Serve with fresh grated parmesan cheese.
