GARLIC ROAST BEEF

Number Of Ingredients 8

One 3- to 4-pound whole beef tenderloin, kept at room temperature for 1 to 2 hours
Kosher salt and freshly cracked black pepper
10 cloves garlic
3 tablespoons olive oil
2 tablespoons Dijon mustard
1 tablespoon honey
1 1/2 cups beef broth
1 tablespoon fresh Italian parsley, chopped

Steps:

  • Preheat the oven to 475 degrees F.
  • Place the beef in a roasting pan with a rack. Sprinkle with salt and pepper all over.
  • Add the garlic, oil, mustard and honey to a food processor. Pulse until the garlic is finely chopped. Rub the mixture evenly all over the beef. Pour the beef broth in the bottom of the roasting pan.
  • Bake until the internal temperature is 130 to 135 degrees F, 30 to 35 minutes.
  • Transfer the beef to a carving board and allow to rest for 30 minutes. Heat the roasting pan over medium heat and scrape up any browned bits. Pour any pan drippings onto a rimmed platter. Carve the beef into thick slices and transfer to the platter. Sprinkle with the parsley. Serve warm or at room temperature.

2 (9-inch) refrigerated pie crusts
2 cups cooked shredded beef
1 cup shredded Monterey jack cheese
1 (4-ounce) can diced green chiles

Steps:

  • Preheat oven to 425 degrees F.
  • Unroll pie crusts onto a flat surface. Top each quadrant of crust with 1/2 cup of beef, 1/4 cup of cheese and about a tablespoon of chiles, making even layers and spreading ingredients to within 1/2-inch of the edges. Top with second pie crust. Using a pastry cutter or sharp knife, make an X across the circle, making 4 equal sections. Pinch around the edges with a fork to seal.
  • Transfer empanadas to a baking sheet and make small slits in the top of each one to allow steam to escape during cooking. Bake 8 to 10 minutes, until crust is golden brown.

This is a Robin Miller recipe and it's fantatic. I often add a little beef broth and let it simmer for a bit more aus ju. I have also subbed rotel for the diced tomatoes and green chilis with good results. You can't mess this up!

2 teaspoons olive oil
1/2 cup onion, diced
3 garlic cloves, minced
12 ounces roast beef, sliced and cut into strips
1 (14 ounce) can diced tomatoes
1 (4 ounce) can minced green chilies
2 tablespoons lime juice
1 teaspoon cumin
2 tablespoons cilantro, fresh and chopped
salt
pepper
4 rolls, sandwich sized

Steps:

  • Heat oil in large skillet.
  • saute onion and garlic for 3 minutes.
  • add roast beef and saute 3 to 5 minutes.
  • Add everything else except cilantro and rolls. and bring to a simmer.
  • Cook for about 5 minutes.
  • Remove from heat and stir in cilantro.
  • Serve on rolls sliced in half with plenty of the sauce.

I created Picante Beef Roast because I love the flavor of taco seasoning and think it shouldn't be reserved just for tacos! My recipe couldn't be easier, and it works great with a pork roast, too. -Margaret Thiel, Levittown, Pennsylvania

1 beef rump roast or bottom round roast (3 pounds), trimmed
1 jar (16 ounces) picante sauce
1 can (15 ounces) tomato sauce
1 envelope taco seasoning
3 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Cut roast in half; place in a 5-qt. slow cooker. In a large bowl, combine the picante sauce, tomato sauce and taco seasoning; pour over roast. Cover and cook on low for 8-9 hours or until meat is tender. , Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer 3 cups to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with roast.

1 (4 ounce) can chopped green chilies, drained
2 tablespoons mayonnaise (I used light and it was fine)
1 tablespoon Dijon mustard
10 slices rye bread
5 slices swiss cheese
10 slices cooked beef
2 tablespoons butter, softened
salsa (optional)

Steps:

  • In a small bowl, combine chilies, mayo and mustard. Spread about 1 tablespoon on each side of each slice of bread.
  • Top five slices of bread with 1 slice of cheese, and 2 slices of beef. Cover with remaining bread.
  • Butter the outsides of the bread. In a skillet over medium heat, toast sandwiches for 4-5 minutes on each side or until bread is slightly browned and cheese is melted.
  • Serve with salsa if desired.

My mother found this recipe in a magazine years ago. We have since lost the recipe and just been slapping them together without one.

4 ounces diced green chilies, drained
1/2 cup mayonnaise
1/2 lb deli roast beef, sliced
1/4 lb swiss cheese, sliced
8 slices sourdough bread
margarine

Steps:

  • Mix mayonnaise and green chilies. Set aside.
  • Heat non-stick skillet over medium heat.
  • Butter one side bread. Spread mayonnaise mixture on second side of bread. Place butter side of four slices of bread in pan. Add one slice of cheese to each and split meat between sandwiches. Add a second slice of cheese and the remaining bread, butter side out.
  • Grill until golden brown and cheese starts to melt. Flip and repeat.

This is from a Taste of Home recipe magazine. Originally submitted by Bridget Evans of Forreston, IL. This is a super simple and tasty recipe for a busy weeknight. The recipe calls for a loaf of garlic bread but I used the presliced texas toast type frozen garlic bread and it worked out perfectly. I also used chipotle cheddar sliced cheese which was tasty too. Loved this recipe so much I had to post it.

1 (10 1/2 ounce) frozen garlic bread (loaf)
1/2 lb fresh mushrooms, sliced
2/3 cup onion, sliced
1 teaspoon garlic, minced
4 teaspoons butter
1 teaspoon Worcestershire sauce
1 lb deli roast beef, shaved
6 slices colby cheese

Steps:

  • Bake garlic gread according to package directions.
  • Meanwhile; in a large skillet, saute the mushrooms, onion, and garlic in butter until vegetables are tender.
  • Stir in Worcestershire sauce.
  • Layer each half of garlic bread with roast beef, mushroom mixture and cheese.
  • Return to oven.
  • Bake 1 or 2 minutes longer or until cheese is melted.
  • Slice and serve immediately.
