ANGEL-HAIR PASTA WITH SAUTEED OYSTERS AND CHORIZO
In this easy pasta course, chorizo -- a cured-pork sausage seasoned with chili powder and paprika -- is a lively complement to cooked oysters and a refreshing departure from the smoked bacon commonly paired with them.

Steps:
- Bring a large pot of water to a boil. Meanwhile, heat oil in a large saucepan over medium-high heat. Add chorizo. Cook, stirring, until crisp, about 3 minutes. Transfer to a plate lined with paper towels, and let drain. Wipe out pan.
- Melt butter in pan over medium heat. Add flour, spices, and 1 teaspoon salt. Cook, whisking constantly, 3 minutes (do not brown). Add sherry, and cook, whisking, 1 minute. Whisk in cream and oyster liquor. Bring to a simmer, and whisk until thick, about 3 minutes.
- Add salt to boiling water; add pasta, and cook until al dente. Drain. Add oysters to sauce; gently poach until just cooked through, 1 to 2 minutes. Add pasta; toss. Divide among plates. Top with chorizo; sprinkle with orange zest.
FIERY ANGEL HAIR PASTA

- Bring a large pot of salted water to a boil. Add the angel hair pasta and cook until tender but still firm to the bite, stirring occasionally, about 6 to 8 minutes. Drain, reserving 1 cup of the pasta water.
- Stir the oil, parsley, lemon juice and lemon peel in a large serving bowl. Add the cooked pasta and toss with enough reserved pasta water, 1/4 cup at a time, to moisten. Season the pasta with salt and red pepper flakes, to taste. Sprinkle grated lemon peel over pasta for extra flavor and texture. Sprinkle with the Parmesan and serve.
- Combine the oil and crushed red pepper flakes in a heavy small saucepan. Cook over low heat until a thermometer inserted into the oil registers 180 degrees F, about 5 minutes.
- Remove from heat. Cool to room temperature, about 2 hours. Transfer the oil and pepper flakes to a 4-ounce bottle. Seal the lid. Refrigerate up to 1 month.
- Yield: 2 cups

ORIENTAL ANGEL HAIR PASTA (STIR-FRY)
Quick and simple recipe that I made up - the ingredients combination might be weird but it's delicious!

Steps:
- First, marinate the chicken with soy sauce, vinegar, 5-spice powder, sesame oil and black pepper in a non-metal bowl, set aside.
- Meanwhile, cook pasta in salted boiling water according to directions on package (mine says 2 minutes), drain and set aside.
- Heat oil in a wok; once hot saute onions and chillies for 1 minute.
- Add garlic and cook another 30sec.
- Add long beans, then cook for 1 minute.
- Add chicken pieces and stir continuously until they're completely cooked.
- Push the mixture to one side of the wok (if your wok/pan is too small, remove the mixture before proceeding), then pour the beaten egg and cook until set.
- Scramble the egg and combine with the vegetable mixture (in the wok).
- Add the cooked pasta, mix well and add the sauce ingredients.
- Cook for another 3-5 minutes until sauce is well-distributed; taste and adjust seasonings if necessary (I would add some chilli paste and/or tiny bit of soy sauce if necessary).
- If you like, sprinkle with 1/2-1 tsp sesame oil and chopped scallions before serving.

TOSSED ANGEL HAIR PASTA

- Cook the angel hair according to the package instructions. When the pasta is nearly done, heat the olive oil in a large saute pan over medium heat and add the lemon zest, salt, and pepper and cook until fragrant, about 1 minute. Drain the pasta, reserving 1/4 cup cooking water, if needed. Remove the infused oil from the heat, add the pasta, and toss to coat, adding pasta cooking water, if needed. Grate just a hint of Parmesan on the pasta before serving.

BLUSHING ANGEL HAIR PASTA

- In a large skillet, warm the olive oil and garlic over medium heat. Add a pinch of salt and 2 tablespoons water. Simmer until the water cooks out and the garlic becomes tender, about 2 minutes. Stir in the tomato paste with 2 more tablespoons water and cook to "fry" the paste for a minute in the oil, stirring. Add the cherry tomatoes and cook over medium heat until they soften, 1 to 2 minutes. Add the cream. Season with salt to taste. Keep warm.
- In a large pot, bring 4 quarts water to a rolling boil. Add a generous handful of salt. Bring the water back up to a boil. Add the pasta and cook, stirring with a slotted spoon to make sure it does not clump or stick to the bottom, until al dente, 3 to 4 minutes. Reserve 1/2 cup pasta cooking liquid and drain the pasta in a large colander.
- Add the hot pasta right from the colander to the skillet and toss to coat with the cream. Shut the heat off and allow the pasta to rest for 2 minutes. If too thin, gently warm and reduce over low heat for 1 to 2 additional minutes. If it becomes too thick, simply thin it out with some of the reserved pasta cooking liquid. Serve topped with the cheese.
ANGEL HAIR PASTA IN GARLIC SAUCE
A dish that can be served plain, or add sauted shrimp, or whatever else you can think of. The basic recipe is good. We enjoy it plain too.

- Preheat oven to 400 degrees F.
- Heat oil in deep skillet over medium-high heat.
- Add onions and garlic and cook until tender, about 8 minutes.
- Add mushrooms and saute 4 minutes.
- Add paprika, salt and cayenne and stir until just fragrant, about 30 seconds.
- Add tomatoes and green pepper and saute 2 minutes.
- Add broth, wine, cream and chorizo.
- Bring to simmer.
- Break pasta in half and add to pan.
- Cook until pasta is tender, stirring occasionally, about 8 minutes.
- Set pan in oven.
- Bake until all liquid is absorbed and pasta is crusty, about 25 minutes.
- Sprinkle with parsley and serve.

- In a skillet over medium heat, cook the bacon, onion, and garlic; pour off excess drippings and transfer mixture to a lightly greased 2 1/2 quart casserole dish.
- Using the same skillet, melt the butter over medium-high heat.
- Add in the oysters; saute about 5 minutes or until lightly browned.
- Sprinkle with seasonings; stir in wine and bring to a boil.
- Add oyster-wine mixture to casserole dish; add pasta and gently mix.
- Bake in a 375° oven for about 20 minutes or until heated through.
- Sprinkle with parsley and serve.
