Angel Hair with Fresh Tomato Sauce image

Provided by Valerie Bertinelli

Categories     main-dish

Time 20m

Yield 4 servings

Number Of Ingredients 8

Kosher salt
1 1/2 pounds ripe on-the-vine tomatoes, finely chopped
1/4 cup good-quality olive oil, plus more for drizzling
4 cloves garlic, very thinly sliced
1/4 teaspoon crushed red pepper flakes
12 ounces angel hair pasta
1 cup freshly grated Parmesan cheese, plus more for serving
1/4 cup sliced basil

Steps:

  • Bring a large pot of salted water to a boil.
  • Put the tomatoes in a large bowl. Heat the olive oil and garlic in a small saucepan over medium heat until the garlic is translucent, but not at all browned, 1 to 2 minutes. Stir in the crushed red pepper flakes, then pour the garlic oil over the tomatoes. Add 1 teaspoon salt and toss to coat.
  • Cook the pasta according to package directions. Transfer the pasta directly from the boiling water to the bowl with the tomatoes using a pasta fork or tongs. Sprinkle in the Parmesan and some of the basil and toss to coat; let stand 5 minutes so that the sauce absorbs slightly. Top with the remaining basil and a little additional olive oil and serve with additional Parmesan.

FRESH TOMATO, BASIL, AND GARLIC SAUCE OVER ANGEL HAIR PASTA

Fresh Tomato, Basil, and Garlic Sauce over Angel Hair Pasta image

Provided by Food Network

Categories     main-dish

Time 48m

Yield 4 to 6 servings

Number Of Ingredients 11

2 pounds ripe tomatoes
3 tablespoons extra-virgin olive oil
1 red onion, finely chopped
3 garlic cloves, thinly sliced
1 tablespoon fresh thyme leaves
1 oregano sprig
Pinch chili flakes
1 teaspoon sugar
1 pound dried angel hair pasta
1/4 cup grated Parmesan, plus more for garnish
1/4 cup chiffonade basil, plus whole sprigs for garnish

Steps:

  • Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
  • Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
  • Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

ANGEL HAIR PASTA WITH TRAPANI-STYLE PESTO

Angel Hair Pasta with Trapani-Style Pesto image

Delicate angel hair pasta begs for an easy, elegant sauce. This one is a rustic tomato version of pesto, made quickly in a large bowl with grated fresh, in-season tomatoes, ground almonds instead of pine nuts, and a mix of fresh parsley and basil. Bring it all together with freshly grated Parmesan and olive oil for a light and lively meal that's a perfect pair with chardonnay or pinot grigio.

Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Number Of Ingredients 11

12 ounces dried angel hair pasta
1 1/4 pounds ripe heirloom tomatoes, halved
1/3 cup skin-on ground almonds
1 cup packed fresh basil leaves, chopped
1/4 cup fresh flat-leaf parsley leaves, chopped
2 cloves garlic, minced
3/4 cup grated Parmesan, plus more for garnish
1/4 cup extra-virgin olive oil
1 teaspoon finely grated fresh lemon zest
Kosher salt and freshly ground pepper
Crusty bread, for serving

Steps:

  • 1. Set a pot of water for the pasta on high heat and bring to a boil. In a large mixing bowl, grate the tomatoes on a large box grater, leaving behind the skins. Toss the tomatoes together with the ground almonds, basil, parsley, and garlic. Stir in the Parmesan, olive oil, and lemon zest. Season with 1 teaspoon salt and pepper. Set aside 1 cup sauce.
  • 2. When the water is boiling, cook the pasta according to package directions. Drain the pasta, reserving one-third cup pasta water, and toss with the remaining sauce. Add the pasta water.
  • 3. Divide the pasta among 4 bowls, top with the reserved sauce, and garnish with additional freshly grated Parmesan. Serve with crusty bread.

ANGEL HAIR PASTA WITH SIMPLE GARLIC & BASIL

Angel Hair Pasta With Simple Garlic & Basil image

I adore angel hair pasta, and such a fine pasta doesn't always need a big sauce. Serve with some kind of cheese or "cheez" if you wish, sprinkled on top. My children like it with sliced olives. There are many versions of this simple recipe, this one I adapted from www.cookingnook.com. This would probably be good for 4 as a side dish or 4 for lunch with a salad.

Categories     Spaghetti

Time 35m

Yield 3-4 serving(s)

Number Of Ingredients 9

2 tablespoons olive oil
2 garlic cloves, minced
1/2 cup dry white wine
1 lemon, juice of
1 tomatoes, diced
sea salt, to taste
8 ounces angel hair pasta
1/4 cup fresh basil, roughly chopped
pepper, to taste

Steps:

  • Bring a large pot of salted water to boil over high heat.
  • Meanwhile, heat the olive oil up a large saute pan over medium heat. Once warm add the garlic and cook until it just begins to brown -- too long or too high and the garlic will burn.
  • Remove the pan from the heat and deglaze by pouring in the wine. Return the pan to the heat and cook for a few minutes. The wine should reduce by about half. Add in lemon juice, chopped tomato, and sea salt to taste. Stir once or twice then remove the pan from the heat again and set it aside to wait for the pasta.
  • Add the pasta to the boiling water and cook until desired tenderness, following package directions. Drain, then add the cooked pasta to the pan with the garlic & tomato mixture, along with the basil and some freshly ground pepper. Toss well, (if your pan isn't big enough, just do the tossing in a large serving bowl).
  • *Tip: 4 ounces of uncooked pasta (spaghetti, angel hair, vermicelli, fettuccine or linguine) = a 1-inch diameter bunch of dry pasta = 2 cups cooked pasta. Generally they say 2 ounces of pasta is one serving, but for larger appetites this might not be enough.
