With just a few high-quality ingredients and less than 10 minutes, you can make this appetizer. "Delicious" doesn't even begin to describe this: If I'm starting with this, then I know the rest of the meal will knock your socks off.

1 large baguette (12 inches), halved crosswise, then lengthwise
1 garlic clove
4 tablespoons extra-virgin olive oil
5 tablespoons high-quality, unsalted grass-fed butter, at room temperature
24 olive oil-packed anchovies, cut in half crosswise on a bias, preferably Cetara
Flaky sea salt, such as Maldon, for serving
2 tablespoons chopped Italian parsley

Steps:

  • Preheat the broiler. Put the halved baguette on a baking sheet. Rub the cut sides with the garlic clove, then drizzle with the olive oil and spread the butter on evenly.
  • Place the cut anchovies evenly on the bread and broil until brown and bubbly, about 4 minutes. Cut into 12 even pieces, crunch some salt over the top and sprinkle with chopped parsley.

PISSALADIèRE

A pissaladière is perfect to enjoy lukewarm cut into squares. It is a great appetizer for a summer gathering!

1 3/4 cup (200g) strong white bread flour
1 teaspoon salt
2 teaspoons easy blend dried yeast
2/3 cup (150ml) warm water
1 Tablespooon olive oil
35 oz (1 kg) onions, thinly sliced
1-2 Tablespoons olive oil
2 garlic cloves, crushed
1 Tablespoon caster sugar
A few sprigs of thyme
1 teaspoon dried herbes de Provence (optional)
Salt & pepper
5,6 oz (160g) anchovy fillets
A handful of black olives

Steps:

  • For the dough: Tip the flour, salt and yeast into a bowl. Pour in the water, spoon in the oil and mix to a soft dough. Turn out onto a lightly floured surface and knead for 5 minutes until the dough is smooth and no longer sticky.
  • Return the dough to the bowl, cover with cling film and leave it to rise for about 1 hour or until the dough springs back when pressed.
  • For the filling : while the dough is rising, heat the oil in a large, deep frying pan or sauté pan, throw in the onions with the garlic, and fry gently for about 10 minutes with a tablespoon of sugar until softened but not browned, stirring from time to time.
  • Sprinkle in the thyme, dried herbes de Provence, salt and pepper, and stir well. Cover and cook gently for 30 minutes until the onions are meltingly soft, stirring occasionally and removing the lid for the last 10 minutes to reduce any liquid. Remove from the heat and leave to cool slightly.
  • Preheat the oven to 430 F (220 C). Knead the dough again briefly, then roll it out into a large rectangle, then transfer onto a baking tray covered with parchment paper. Don't let the dough rise again.
  • Spread the onion mixture over the dough, then arrange the anchovies on top, making a criss-cross pattern. Stud each anchovy intersection with an olive.
  • Bake for 25-30 minutes until golden. Serve warm or lukewarm, cut into squares.

CARAMELIZED ONION TOASTS

4 tablespoons unsalted butter, plus 4 tablespoons, softened, for brushing the bread
3 onions, sliced
3 to 4 anchovy halves, chopped
2 teaspoons chopped fresh thyme leaves
Kosher salt and freshly ground black pepper
1 baguette
1/3 cup pitted Nicoise olives
Extra-virgin olive oil
Shaved Parmigiano-Reggiano
Serving suggestion: store bought Italian cured meats, such as some sliced prosciutto, sliced mortadella and your favorite hard salami

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat 4 tablespoons butter in a large skillet over medium heat. Add the onions, chopped anchovies, thyme, salt and pepper and cook until the onions are sweet and golden brown, about 20 minutes.
  • Meanwhile, holding the knife parallel to the cutting board, shave off the rounded top and bottom of the baguette with a serrated knife so that it lies flat. Then cut the baguette in half lengthwise to make 2 long slices of bread. Brush both sides of each with the remaining 4 tablespoons butter.
  • When the onions are cooked, put the bread slices on a baking sheet and spread with the onions. Garnish with olives and drizzle with olive oil. Place in the oven and bake until the bread is crispy, about 15 minutes. Shower with Parmigiano. Cut into pieces and serve hot.
  • Serve the onion toasts alongside an assortment of Italian meats.

LINGUINE WITH CARAMELIZED ONIONS AND ANCHOVIES



Linguine with Caramelized Onions and Anchovies image

Note: the amount of anchovies in this recipe may seem alarming, but indeed 2 (2-ounce) tins is correct and makes for a delicious sweet and salty pasta sauce.

1/4 cup, plus 1 1/2 teaspoons kosher salt, divided
1 pound dried linguine
1/3 cup olive oil
2 tablespoons unsalted butter
8 cups thinly sliced onions
2 tablespoons thinly sliced garlic
2 (2-ounce) cans flat anchovy fillets (not packed in salt variety), well drained
1 teaspoon freshly ground black pepper
2 tablespoons chopped fresh parsley leaves
1/2 cup lightly toasted bread crumbs

Steps:

  • Set a large, 1-gallon stock pot with a pasta insert 3/4 full with water over high heat and bring to a boil. Add 1/4 cup of the salt to the water as it boils. Place the linguine in the salted water and return to a boil, stirring occasionally. Cook the pasta until nearly al dente, 10 to 12 minutes. Drain and set aside, reserving 1 cup of the pasta cooking water.
  • While the pasta cooks, set a 14-inch saute pan over medium-high heat and add the olive oil and butter to the pan and, once the butter melts, add the onions. Cook, stirring occasionally, until the onions have softened and caramelized, 10 to 12 minutes. Add the garlic and anchovies to the pan, stirring until fragrant and the anchovies have melted, 2 to 3 minutes. Add the drained pasta and the reserved pasta cooking water to the pan and season with the remaining 1 1/2 teaspoons kosher salt, pepper, and parsley. Cook, tossing to combine, until the pasta is heated through and the water is nearly evaporated, 3 to 4 minutes. Remove from the heat, sprinkle with the toasted bread crumbs and toss to combine. Serve while hot.

ONION ANCHOVY GALETTE

A take on the Provençal tart known as pissaladiére, this galette can be served as an hors d'oeuvre or, with a salad, as a light lunch. It gets fullness of flavor from a tangle of sweet caramelized onions that tops a smear of tomato paste enlivened with garlic and anchovies (left over from Mediterranean Eggplant Relish). A flaky homemade pastry crust ups the richness even more.

Yield Makes 6 servings (light main course) or 12 servings (hors d’oeuvre)

Number Of Ingredients 11

1 1/4 cups all-purpose flour
1 stick cold unsalted butter, cut into 1/2-inch cubes
1/4 teaspoon salt
3 to 5 tablespoons ice water
2 large onions (2 pounds total), sliced
2 tablespoons olive oil
2 tablespoons unsalted butter
5 to 6 anchovy fillets
1 garlic clove
2 tablespoons tomato paste
1/2 teaspoon dried thyme, crumbled

Steps:

  • Blend together flour, butter, and salt in a bowl with your fingertips or a pastry blender (or pulse in a food processor) just until most of mixture resembles coarse meal with some roughly pea-size butter lumps.
  • Drizzle 3 tablespoons ice water evenly over mixture and gently stir with a fork (or pulse in processor) until incorporated.
  • Squeeze a small handful: If it doesn't hold together, add more ice water, 1/2 tablespoon at a time, stirring (or pulsing) until incorporated, then test again. (Do not overwork mixture or pastry will be tough.)
  • Turn out mixture onto a lightly floured surface and divide into 4 portions. With heel of your hand, smear each portion once or twice in a forward motion to help distribute fat. Gather dough together, with a pastry or bench scraper if you have one, and press into a ball, then flatten into a 5-inch disk. Chill, wrapped in plastic wrap, until firm, at least 1 hour.
  • Cook onions in oil and butter in a 12-inch heavy skillet over medium heat, stirring occasionally, until softened and golden, about 30 minutes.
  • Preheat oven to 375°F with rack in middle.
  • Finely chop anchovies and garlic together. Stir together with tomato paste and thyme.
  • Roll out dough on a lightly floured surface with a lightly floured rolling pin into a 13-inch round. Transfer to a parchment-lined large baking sheet.
  • Spread tomato-anchovy mixture over dough, leaving a 2-inch border along edge, then arrange onions on top. Fold edges of dough inward. Bake until pastry is golden, 45 to 50 minutes. Serve warm or at room temperature.

1/4 cup extra-virgin olive oil
1 baguette (preferably day-old; about 18 by 2 inches), cut diagonally into 3/4-inch-thick slices

Steps:

  • Preheat oven to 400°F.
  • In a small bowl whisk together anchovy paste and oil. Brush both sides of baguette slices lightly with anchovy oil and arrange in one layer on baking sheets. Toast slices in middle and lower thirds of oven 5 minutes, or until golden brown. Cool toasts on a rack. Toasts may be made 4 days ahead and kept in an airtight container at room temperature.

1/2 loaf day-old white bread, crusts removed, cut into 1-inch cubes
1/2 cup plus 1 tablespoon extra-virgin olive oil, plus more as needed
9 garlic cloves, 3 lightly crushed, 6 thinly sliced
Coarse salt
3 large onions, thinly sliced
3 to 5 oil-packed anchovy fillets, chopped
1/4 teaspoon crushed red-pepper flakes
1 pound dried spaghetti
1 cup coarsely chopped fresh flat-leaf parsley, plus more for garnish
1/2 ounce (1 tablespoon) unsalted butter
Freshly ground pepper
Parmigiano-Reggiano cheese, for garnish

Steps:

  • Pulse bread in a food processor until coarse crumbs form. Heat 2 tablespoons oil in a large skillet over medium-high. Add crushed garlic, and cook until golden, 2 to 3 minutes. Add breadcrumbs and 1 tablespoon oil, and stir until well coated. Season with salt, and cook until breadcrumbs are crisp and golden brown. Place on a rimmed baking sheet lined with paper towels to drain. Discard garlic, and let breadcrumbs cool completely.
  • Heat 3 tablespoons oil in each of 2 large skillets over medium heat. Divide onions between skillets, and cook, stirring frequently, until caramelized and golden brown, 10 to 15 minutes. (Add a little more oil if necessary.) Combine cooked onions in 1 skillet. Add sliced garlic, and cook over medium heat until golden, about 3 minutes. Add anchovies and red-pepper flakes, and cook for 2 minutes.
  • Meanwhile, cook spaghetti according to package directions in salted water. Drain, reserving 1 cup cooking liquid. Transfer spaghetti to skillet, and toss well. Add reserved cooking liquid, parsley, and butter, and season with salt and pepper. Mix well, then top with breadcrumbs, and garnish with parsley.
