ANCHO CHILE-MEXICAN CHOCOLATE COOKIES

1 3/4 cups all purpose flour
1/3 cup good quality unsweetened Dutch-process cocoa powder
2 teaspoons of your favorite ground chile powder, such as ancho chile powder
1/2 teaspoon baking soda
1/4 teaspoon fine sea salt
3/4 cup (1 1/2 sticks) unsalted butter, at room temp
1 cup packed dark brown sugar
1/2 cup granulated sugar
1 large egg
1 1/2 teaspoons vanilla extract
1 cup dark chocolate chunks
1/2 cup unsalted pepitas (shelled pumpkin seeds), lightly toasted

Steps:

  • Preheat oven to 350 degrees F. Line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, chile powder, baking soda and salt. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium-high speed until light and creamy, about 1 minute. Add the brown and granulated sugar and beat until slightly fluffy, about 2 minutes, scraping down the sides of the bowl with a rubber spatula as needed. Add the egg and vanilla and beat until well combined.
  • Reduce the mixer speed to medium-low, add half the flour mixture, and beat until just combined, then add the remaining flour mixture and beat until the mixture just comes together, 1 to 2 minutes, being careful not to overmix. Add the chocolate chunks and pepitas and beat on low until just combined.
  • Use a 2-ounce ice cream scoop or a 1/4 cup measuring cup to scoop the cookie dough onto the prepared baking sheets, making about 14 cookies total and leaving at least 2 inches between each cookie.
  • Bake until the edges of the cookies are crisp but the centers are still tender, about 15 minutes, rotating the baking sheets top to bottom and front to back halfway through the baking time. Remove from the oven, set the baking sheets on wire racks, and let the cookies cool completely on the pans. They should keep up to 5 days in an airtight container.

2 eggs
1 cup sugar
2 tablespoons Kahlua
1/2 cup butter or 1/2 cup margarine, melted
3/4 cup unsifted flour
1/2 teaspoon baking powder
2 teaspoons dried ancho chile powder
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
1/2 cup walnuts, chopped (or pecans)

Steps:

  • Preheat the oven to 350°F.
  • Lightly grease a 8 x 8 pan.
  • Using a spoon, stir eggs with 3/4-cup sugar and 1 teaspoon vanilla; add melted butter.
  • Sift ground chocolate with flour, baking powder, and salt.
  • Stir into egg mixture; add nuts.
  • Stir in chips. Spread into greased pan.
  • Bake 20 to 30 minutes.
  • For chewy brownies, use 8" pan and shorter baking time.
  • For cake-like brownies, use 9" pan and longer baking time.
  • Cut into squares.

12 ounces bittersweet chocolate, chopped (or 2 cups bittersweet chocolate chips)
1 cup packed dark brown sugar
1/2 cup granulated sugar
4 large eggs
2 teaspoons pure vanilla extract
1 cup all-purpose flour
1 teaspoon ancho chile powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon finely grated orange zest
Pinch of ground cloves
1/2 cup heavy cream
2 tablespoons unsalted butter
2 tablespoons packed dark brown sugar
2 tablespoons light corn syrup
Pinch of salt
4 ounces bittersweet chocolate, chopped (or about 1/2 heaping cup bittersweet chocolate chips)
2 tablespoons unsweetened cocoa powder
1 tablespoon instant espresso powder
1/4 teaspoon cayenne pepper
Dulce de leche or vanilla ice cream, for serving

Steps:

  • Make the brownies: Preheat the oven to 325 degrees F. Butter a 10-inch ovenproof skillet; set aside. Combine the butter and chocolate in a medium saucepan over medium heat. Cook, stirring occasionally, until melted and smooth, 3 to 5 minutes. Whisk in the brown sugar and granulated sugar until incorporated. Set aside to cool slightly, then whisk in the eggs and vanilla. Whisk in the flour, chile powder, cinnamon, salt, orange zest and cloves until smooth. Pour the batter into the prepared skillet and bake until a toothpick inserted into the center comes out clean, 35 minutes. Let cool slightly.
  • Meanwhile, make the chocolate sauce: Combine the heavy cream, butter, brown sugar, corn syrup and salt in a medium saucepan. Cook, whisking, until melted and barely simmering, 3 to 4 minutes. Whisk in the chocolate, cocoa powder, espresso powder and cayenne until smooth and slightly thickened. Let cool slightly.
  • Cut the brownies into wedges. Top with ice cream and the chocolate sauce.

3/4 cup all-purpose flour, plus additional for the pan
1/4 cup plus 1 tablespoon pure chile powder
1 teaspoon baking powder
1 teaspoon salt
12 tablespoons (1 1/2 sticks) unsalted butter, plus additional for the pan, at room temperature
5 ounces bittersweet or semisweet chocolate, chopped, or semisweet chocolate chips
5 ounces unsweetened chocolate, chopped
1 1/4 cups sugar
3 large eggs, at room temperature

Steps:

  • 1. Position the rack in the lower third of the oven. Preheat the oven to 350°F. Butter and flour a 9x13-inch baking pan; set it aside.
  • 2. In a medium bowl, whisk the flour, chile powder, baking powder, and salt until well combined. Set aside.
  • 3. Place the butter and both kinds of chocolate in the top of a double boiler set over simmering water. If you don't have a double boiler, place the butter and both kinds of chocolate in a heat-safe bowl that fits snugly over a small pot of simmering water. Stir constantly until half the butter and chocolate is melted. Remove the top of the double boiler or the bowl from the pot; then continue stirring, away from the heat, until the butter and chocolate are completely melted. Transfer to a large bowl and allow to cool for 10 minutes.
  • 4. Beat the sugar into the melted chocolate mixture with a whisk or with an electric mixer at medium speed; continue beating until smooth and silky, about 5 minutes by hand or 2 minutes with a mixer. Beat in the eggs until well incorporated.
  • 5. With a wooden spoon or a rubber spatula, stir in the flour mixture just until incorporated. Do not beat. Spoon the batter into the prepared pan, spreading it gently to the corners.
  • 6. Bake for 20 minutes, or until a toothpick or cake tester comes out with a few moist crumbs attached. Set the pan on a wire rack to cool for at least 30 minutes.
  • 7. Cut the brownies into 24 pieces while they're still in the pan. Carefully remove them with an offset spatula. Serve immediately, or let cool completely before covering with plastic wrap for storage at room temperature. They will stay fresh for up to 3 days. The brownies can be tightly wrapped in wax paper, sealed in a freezer-safe bag, and frozen for up to 2 months; allow them to thaw at room temperature before serving.

  • Place the ancho chile in a small bowl and cover it with boiling water. Set a second small bowl on top to keep the chile submerged. Let soak for 30 minutes, until rehydrated. Drain the chile, remove the stem and seeds and chop very finely. Use the side of your knife to mash the chile to a paste; you should have about 1 1/2 tablespoons.
  • Add the ancho paste and butter to a 12-inch skillet over medium-low heat. As the butter melts, stir the ancho paste and butter together. Once melted, allow the butter to foam for 1 to 2 minutes to let the chile infuse the butter; don't let the butter brown. Remove from the heat.
  • Combine the chopped Mexican chocolate and bittersweet chocolate in a medium bowl. Strain the ancho butter through a fine-mesh sieve over the chocolate. Use a rubber spatula to push as much of the chile paste through the sieve as possible. Scrape the chocolate and ancho butter into the skillet over low heat. Whisk the mixture until the chocolate is melted and completely smooth. Remove from the heat and whisk in the espresso powder and eggs. Let sit off the heat.
