This cake is rich, moist, creamy...Its a choclate lover's dream. Great to impress people at a potluck or for a special birthday cake. Its got WOW potential.

Steps:
- Mix first 5 ingredients and bake at 350 in 4 round cake pans.
- (I just used 2 cake pans twice. Who has four cake pans?) Bake according to cake mix directions.
- Mix frosting ingredients together and add 4 grated Hershey bars with almonds and ½ cup pecans.
- Ice between layers, top and sides.
FEATHER SPONGE CAKE (AMY'S GRANDMA'S)
This is my friend Amy's Grandma K's recipe from 1990. This recipe has lemon extract but some lemon zest can be used as well (my Grandma used the zest) but I don't have her recipe.

Steps:
- Beat egg yolks until thick and lemon colored.
- Add water and continue beating until thick.
- Gradually beat in sugar, then the extracts.
- Fold in flour, a little at a time.
- Beat egg whites until foamy, add the cream of tarter and beat until they form glossy peaks.
- Fold this carefully into the cake mixture.
- Bake in a 10" ungreased angel food cake pan ina 350 degree oven for approximately 1 hour.
- Invert pan to cool.

This cake is so moist! My pop loves chocolate cake and his birthday is coming up. I want to make him a special cake. When I started going through the recipe files, cookbooks, and internet, I came across this. OH MAN! I can't wait to try it.

Steps:
- Preheat oven to 350 degrees. Prepare a 9x13 pan.
- Beat the butter and sugar until smooth. Add the eggs and cocoa.
- On low, beat in the remaining ingredients.
- Bake for 40 minutes or until a toothpick comes out clean. Cool and frost.
- To prepare frosting: Beat together butter and cocoa until blended. Mix in the powdered sugar and milk until a good spreading consistency is reached. Add the vanilla. Spread on cake.

AMY'S HERSHEY CAKE
Steps:
- Preheat oven to 325 degrees F. Combine all the cake ingredients together in a large bowl.
- Pour into 3 greased and lightly floured cake pans.
- Bake for 25 minutes. Cool completely.
- Mix cream cheese, sugars and Cool Whip in a large bowl. Grind Hershey bars in the food processor and add 3/4 of chocolate to the mixture. Ice cake and top with remaining chocolate. Refrigerate overnight.

- Preheat oven to 350°F. Butter two 9-inch round baking pans and line with parchment paper. Butter and flour the parchment paper.
- Stir together sugar, flour, cocoa, baking powder, baking soda, and salt in bowl of stand mixer. Add eggs, half-and-half, 1/4 cup water, oil, and vanilla. Beat on medium speed of mixer for a minute or two, scraping down the sides every few seconds, then add the softened butter. Beat on medium to medium-high speed of mixer until well blended. Scrape the sides and mix well. Note: The butter will not be completely mixed in until you pour in the boiling water in the next step, so for now you will still see pieces of butter. Just get it as well-blended here as you can.
- Place used coffee grounds in a fine mesh strainer set over a measuring cup. Pour boiling water over coffee grounds to 1 cup mark. Stir coffee-water into cake batter. Pour batter (batter will be thin) into prepared pans.
- Bake 30-35 minutes or until tester inserted in center comes out clean. Remove pans from oven and cool for 10 minutes. Remove cake from pans to wire racks and cool completely.
