The Best-Ever Potato Soup image

This is really delicious and everyone loves it. I usually put all of the veggies (but potatoes)in the food processor and chop fine. You'll be surprised at the flavor.

1 stalk celery, chopped
1 carrot, finely chopped
1 small onion, chopped
1 tablespoon dried parsley
1 quart chicken stock
1 teaspoon salt
1/4 teaspoon pepper
6 -8 potatoes, cubed
6 slices bacon, cooked and crumbled
4 cups milk
4 tablespoons flour
1 1/2 cups Velveeta cheese, cubed

Steps:

  • In a large pot, add the celery, carrot, onion, parsley salt, pepper, potatoes and stock.
  • Cover, bring to a boil and cook for about 20 min.
  • until the vegetables are tender.
  • Add the bacon.
  • Mix the flour into the milk until well blended.
  • Add to the soup and stir well.
  • Add the cheese and heat until melted.

8 unpeeled potatoes, cubed
1 onion, chopped
2 stalks celery, diced
6 cubes chicken bouillon
1 pint half-and-half cream
1 pound bacon - cooked and crumbled
1 (10.75 ounce) can condensed cream of mushroom soup
2 cups shredded Cheddar cheese

Steps:

  • In a large stock pot combine potatoes, onions, celery, bouillon cubes and enough water to cover all ingredients. Bring to a boil and simmer on medium heat until potatoes are with in 15 minutes of being finished.
  • Add half and half, bacon, cream of mushroom soup and stir until creamy. Add cheese and stir until completely melted. Simmer on low until potatoes are done.

I have made this for many whom have given it the title. This takes a bit of effort but is well worth it. Please note: for those who do not wish to use bacon, substitute 1/4 cup melted butter for the bacon grease and continue with the recipe. (I generally serve this soup as a special treat as it is not recommended for people counting calories.)

1 pound bacon, chopped
2 stalks celery, diced
1 onion, chopped
3 cloves garlic, minced
8 potatoes, peeled and cubed
4 cups chicken stock, or enough to cover potatoes
3 tablespoons butter
¼ cup all-purpose flour
1 cup heavy cream
1 teaspoon dried tarragon
3 teaspoons chopped fresh cilantro
salt and pepper to taste

Steps:

  • In a Dutch oven, cook the bacon over medium heat until done. Remove bacon from pan, and set aside. Drain off all but 1/4 cup of the bacon grease.
  • Cook celery and onion in reserved bacon drippings until onion is translucent, about 5 minutes. Stir in garlic, and continue cooking for 1 to 2 minutes. Add cubed potatoes, and toss to coat. Saute for 3 to 4 minutes. Return bacon to the pan, and add enough chicken stock to just cover the potatoes. Cover, and simmer until potatoes are tender.
  • In a separate pan, melt butter over medium heat. Whisk in flour. Cook, stirring constantly, for 1 to 2 minutes. Whisk in the heavy cream, tarragon, and cilantro. Bring the cream mixture to a boil, and cook, stirring constantly, until thickened. Stir the cream mixture into the potato mixture. Puree about 1/2 the soup, and return to the pan. Adjust seasonings to taste.

1 cup diced onion
2 ½ cups peeled and diced potatoes

1 cup heavy cream
1 ¾ cups shredded sharp Cheddar cheese

¼ teaspoon salt
⅛ teaspoon ground cayenne pepper

Steps:

  • In a large saucepan over medium heat, melt butter. Cook onion in butter until softened. Stir in potatoes and broth, bring to a boil, then cover, reduce heat and simmer 15 to 20 minutes, until potatoes are tender.
  • Puree potato mixture in a blender or food processor or using an immersion blender; return to pot over medium heat. Stir in cream, cheese, dill, pepper, salt and cayenne. Bring to a low boil and cook, stirring, until thickened, 5 minutes.

3 cups cubed peeled potatoes
1 small carrot, grated
1/2 cup chopped onion

I love potato soup, and this is the recipe I've come up with after trying several recipes and combining them. It's easy to put in the crock pot and forget about it, or, if you're in a hurry, it can be made in about twenty five minutes on the stove top.

5 -6 large potatoes, cubed
1 large onion, diced
2 tablespoons margarine
3 chicken bouillon cubes (I use bouillon paste when possible, about 2-3 TBSP)
3 tablespoons parsley
2 tablespoons cilantro
3 cups water
1 (12 ounce) can evaporated milk
1/4 cup flour
French-fried onions (to garnish) (optional) or crouton (to garnish) (optional)

Steps:

  • Place everything but the milk and flour in the crock pot and cook on low all day.
  • 30 minutes to one hour before serving, stir together the flour and evaporated milk until smooth, then add to soup.
  • After the soup starts to thicken slightly, it is ready to serve.
  • To make on stove top: boil potato and onion until tender, then simmer the rest of the ingredients on medium heat until thickened.
  • I usually garnish bowls with shredded cheddar cheese at the table.

5 medium russet potatoes, baked and scooped out of skins
3 cups milk (I use 2%)
3 tablespoons flour
1 cup half-and-half cream
3 cups chicken stock
1 medium vidalia onion, chopped
1 stalk celery, thinly sliced
5 baby carrots, minced
2 sprigs fresh thyme, chopped
3 tablespoons fresh parsley, chopped
4 ounces Velveeta cheese, cubed
4 ounces smoked cheddar cheese, shredded
4 ounces shredded cheddar cheese
1 teaspoon garlic powder
2 dashes Tabasco sauce (optional)
2 ounces crumbled bacon
1 tablespoon butter
1 tablespoon extra virgin olive oil
pepper

Steps:

  • In a large pot, sautee onion, carrot, and celery in the butter and olive oil, until tender.
  • Pour in chicken stock, and simmer about 10 minutes.
  • In another small pot, pour in milk, half & half, and flour. Bring to a slow boil, stirring constantly until thickened.
  • Put in garlic powder & pepper, and stir to incorporate.
  • Pour in cheeses slowly, stirring until melted.
  • Pour all into bigger pot with the chicken stock.
  • Slowly add potatoes and bacon bits.
  • Add tabasco sauce (optional).
  • Stir until all mixed.
  • Simmer about 15 minutes.
  • Add fresh parsley, and stir.
  • Serve.

32 ounces southern style hash browns or 32 ounces o'brien hash brown potatoes
3 cups chicken broth
1 teaspoon garlic salt

1 pint heavy cream or 1 pint half-and-half
shredded cheddar cheese
chopped green onion
bacon, cooked and crumbled

Steps:

  • saute onions and celery in butter until soft. Season with salt and pepper. Place celery and onions in a slow cooker. Add hashbrown potatoes, chicken broth and seasonings.
