Amish Strawberry Pie is light and fresh and piled high with freshly picked sweet strawberries. The crust is light and flaky and perfect this time of year!

Amish Never Fail Pie Crust ((recipe in post))
2 cups water
⅓ cup corn starch
½ cup granulated sugar
⅓ cup strawberry gelatin
1 quart fresh strawberries, (hulled and quartered)
whipped topping to garnish

Steps:

  • Line a deep-dish pie pan with the Amish Never Fail Pie Crust and bake according to instructions.
  • In a medium saucepan over medium heat, stir together the water, corn starch, and sugar until dissolves. Bring to a boil while continuously stirring.
  • Reduce the heat to low and simmer for 10 minutes.
  • Off the heat and add the gelatin. Stir to combine and allow to cool.
  • Once cool, gently stir in the strawberries.
  • Pour into the prepared pie shell. Refrigerate overnight to set.
  • Serve chilled and top with whipped topping, if using

1 Tbsp confectioners' sugar
3 oz cream cheese, softened
11/2 qt whole strawberries, sliced
1 c granulated sugar.
2 Tbsp white karo syrup
1 c water
3 Tbsp dry strawberry gelatin
pinch salt
3 Tbsp cornstarch

Steps:

  • 1. BEAT CREAM WITH SUGAR. SPREAD CAREFULLY OVER BOTTOM OF BAKED PIE SHELL.
  • 2. ARRANGE BERRIES IN SHELL
  • 3. COOK ALL REMAINING INGREDIENTS EXCEPT THE GELATIN POWDER OVER MEDIUM HEAT UNTIL THICK. ADD GELATIN POWDER. COOL BEFORE POURING OVER BERRIES. CHILL

2 cups all-purpose flour, plus additional flour as needed, up to 1/4 cup
1/2 cup cake flour (recommended: Soft As Silk)
3 teaspoons sifted powdered sugar
1/2 cup butter-flavored shortening (recommended: Crisco)
1/4 cup salted butter
Pinch salt
1 egg
2 teaspoons vinegar
1/4 cup ice cold water
2 1/2 cups chopped red rhubarb, fresh
2 1/2 cups de-stemmed, washed and cut strawberries (in larger pieces)
1 1/2 cups sugar (1 1/4 cups for high altitude)
2 tablespoons minute tapioca
1 tablespoon all-purpose flour
1/2 teaspoon lemon zest
1/2 teaspoon lemon juice
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
3 tablespoons butter, cubed small
1 egg white beaten with 1 teaspoon water
Large granule sugar

Steps:

  • Crust Preparation:
  • Using 2 pastry blenders, blend the flours, sugar, shortening, butter and salt. Whisk the egg, vinegar and water in a 2-cup measure and pour over the dry ingredients incorporating all the liquid without overworking the dough. Toss the additional flour over the ball of dough and chill if possible. Divide the dough into 2 disks. Roll out 1 piece of dough to make a bottom crust. Place into a pie dish. Put dish in refrigerator to chill.
  • Preheat oven to 425 degrees F.
  • Filling Preparation:
  • Mix the rhubarb, strawberries, sugar, tapioca, flour, zest and juice of lemon, dash of cinnamon, and vanilla. Mix well in a large bowl and pour out into chilled crust. Dot the top of the filling with the butter. Brush edges of pie crust with egg white wash. Roll out the other piece of dough and place over filling. Crimp to seal edges. Brush with egg white wash and garnish with large granule sugar. Collar with foil and bake at 425 degrees F for 15 minutes. Decrease temperature to 375 degrees F and bake for an additional 45 to 50 minutes, or until the filling starts bubbling. Higher altitude will take 450 degrees F and 400 degrees F respectively. Also, you can use a pie bird for extra decor. Let cool before serving.

1 1/2 quarts strawberries
1 cup sugar
2 tablespoons karo white corn syrup
1 cup water
3 tablespoons jell-o strawberry gelatin
1 pinch salt
3 tablespoons cornstarch

Steps:

  • Beat cream cheese with powdered sugar, spread carefully over bottom of baked pie shell.
  • Arrange berries in shell.
  • Berries should be sliced.
  • Cook sugar, syrup, water, salt, and cornstarch over medium heat until thick.
  • Add Jello mix and cool.
  • Pour glaze over berries and refrigerate.

1 large egg
4 to 5 tablespoons ice water, divided
3/4 teaspoon white vinegar
2-1/4 cups all-purpose flour
3/4 teaspoon salt
3/4 cup cold lard
FILLING:
1-1/4 cups sugar
6 tablespoons quick-cooking tapioca
3 cups sliced fresh or frozen rhubarb, thawed
3 cups halved fresh strawberries
3 tablespoons butter
1 tablespoon 2% milk
Coarse sugar

Steps:

  • In a small bowl, whisk egg, 4 tablespoons ice water and vinegar until blended. In a large bowl, mix flour and salt; cut in lard until crumbly. Gradually add egg mixture, tossing with a fork, until dough holds together when pressed. If mixture is too dry, slowly add additional ice water, a teaspoon at a time, just until mixture comes together., Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 1 hour or overnight., Preheat oven to 400°. In a large bowl, mix sugar and tapioca. Add rhubarb and strawberries; toss to coat evenly. Let stand 15 minutes., On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry even with rim., Add filling; dot with butter. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. Brush milk over pastry; sprinkle with coarse sugar. Place pie on a baking sheet; bake 20 minutes., Reduce oven setting to 350°. Bake 45-55 minutes or until crust is golden brown and filling is bubbly. Cool pie on a wire rack.

1 (9 inch) pie shells (see Favorite Pie Crust recipe.)
4 cups rhubarb, sliced 1 inch thick
1 cup sugar
4 tablespoons all-purpose flour
1/2 teaspoon lemon juice
1 teaspoon salt
1 cup all-purpose flour
1 dash salt
1/2 cup sugar
1/4 cup butter, softened

Steps:

  • Preheat oven to 425º F.
  • Combine the rhubarb, sugar, flour, lemon and salt.
  • Turn into unbaked pie shell.
  • Bake for 30 minutes.
  • Combine topping ingredients; mix with hands until large crumbs form sprinkle crumbs on top.
  • Bake for 15 minutes more or until crumbs are brown and pie is bubbly.
  • Cool on rack.
  • NOTE: Rhubarb is tart.
  • Depending on your taste, you might want to add more sugar.

1 sheet refrigerated pie crust
3/4 cup sugar
2 tablespoons cornstarch
1 cup water
1 package (3 ounces) strawberry gelatin
4 cups sliced fresh strawberries
Whipped cream, optional

Steps:

  • Preheat oven to 450°. Unroll crust into a 9-in. pie plate. Trim edge. Line unpricked crust with a double thickness of heavy-duty foil or parchment. Bake 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack., In a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in gelatin until dissolved. Refrigerate until slightly cooled, 15-20 minutes., Meanwhile, arrange strawberries in the crust. Pour gelatin mixture over berries. Refrigerate until set. If desired, serve with whipped cream.
