Similar to meatloaf, this Amish Ham Loaf is made with ground ham and pork, seasoned with curry powder, ground ginger, and nutmeg then glazed with a sweet and sour sauce.

1 pound ground ham (about 3 cups)
1 pound ground pork
2 to 2 1/2 cups soft white bread crumbs
2 large eggs
3/4 cup sour cream
1/2 cup finely chopped onion
2 TBSP lemon juice
1 tsp. curry powder
1 tsp. ground ginger
1/2 tsp. ground nutmeg
2 TBSP yellow mustard
1/2 cup brown sugar
1/4 cup cider vinegar
1/4 cup water
1/2 tsp. fresh ground black pepper
Ketchup (optional)

Steps:

  • Preheat oven to 350 degrees F. Prepare a broiler pan by covering the bottom portion in foil. Replace the slotted top and spray lightly with cooking spray. Set aside.
  • In large bowl, with hands, combine the ground ham, ground pork, and 2 cups soft bread crumbs.
  • In medium bowl, whisk together the eggs, sour cream, onion, lemon juice, ginger, nutmeg, and mustard.
  • Pour wet ingredients into bowl with ham/pork/breadcrumb mixture and combine with hands until it all comes together. If it feel too wet, add the rest of the breadcrumbs.
  • Shape into an oblong loaf onto prepared broiler pan. Let sit for about 30 minutes before putting into oven.
  • Bake for 30 minutes. Baste with 1/2 the glaze. Return to oven and bake for another 15 minutes. Baste with the remainder of the glaze. Return to oven for another 15 to 25 minutes. Top with ketchup, if desired, and pop into oven for another couple of minutes.
  • Let rest for 15 minutes before slicing.
  • Combine all glaze ingredients except ketchup in a small saucepan and heat to boiling. Take off heat and use as directed in the Ham Loaf instructions above.

2 tablespoons butter, melted
1/4 cup packed dark brown sugar
1 (20 ounce) can crushed pineapple
3 large eggs
6 cups coarsely ground cooked ham (do in food processor)
1 1/2 cups dry breadcrumbs
1/2 cup chopped parsley
1/3 cup chopped onion
1 1/2 teaspoons ground mustard
1 1/2 teaspoons ground ginger
1 1/2 teaspoons curry powder
1/4 teaspoon black pepper

Steps:

  • Drain pineapple, reserve the juice.
  • Preheat oven to 375*.
  • In a small bowl, mix together butter, brown sugar, and drained pineapple.
  • Coat a 10x10" baking pan with vegetable spray, pour in the pineapple and pat it out smoothly on the bottom of the pan.
  • In a large mixing bowl, beat the eggs with a fork.
  • Stir in the ham, pineapple juice, bread crumbs, parsley, onions, mustard, ginger, curry powder and pepper.mix well.
  • Spread the ham mixture over the pineapple, patting it firmly over the pineapple.
  • Bake for 45 minutes.
  • Remove from the oven and allow to stand for 10 minutes.
  • To serve, invert onto a serving platter.
  • If any of the pineapple mixture remains in the bottom of pan, pat it on the loaf and serve immediately.

A recipe for Amish meatloaf topped with bacon strips and a ketchup glaze that I had while in Amish country in Holmes County, Ohio.

2 pounds ground beef
2 ½ cups crushed butter-flavored crackers
1 small onion, chopped
2 eggs
¾ cup ketchup
¼ cup brown sugar
2 slices bacon
1 cup ketchup
2 tablespoons vinegar
¾ teaspoon salt, or to taste
2 tablespoons prepared yellow mustard
½ cup brown sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar until well blended. Press into a 9x5 inch loaf pan. Lay the two slices of bacon over the top.
  • Bake for 1 hour in the preheated oven, or until cooked through. While the loaf bakes, mix together the remaining 1 cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.

1 cup dry bread crumbs
1/4 teaspoon pepper
1-1/2 pound ground fully cooked ham
1/2 pound ground pork
GLAZE:
1/3 cup packed brown sugar
1/4 cup cider vinegar
1/2 teaspoon ground mustard
2 tablespoons water

Steps:

  • In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

Of course in our area, many of the markets and butcher/meat shops, sell ham loaf meat (already ground and mixed) but I've simplified this by making it possible for all of you outside of the area to create your own! This is SO delicious! ENJOY!

1 lb fresh ground turkey
1 lb ham, ground (or turkey ham)
1 cup breadcrumbs
1 egg
1 teaspoon salt
1/8 teaspoon pepper
3/4 cup milk
2/3 cup brown sugar
1 teaspoon dry mustard
1/2 cup water
1/4 cup vinegar

Steps:

  • Grind meat (if necessary).
  • Mix ground meats, breadcrumbs, egg, salt, pepper and milk together.
  • Shape into a loaf.
  • Bake at 350 degrees Fahrenheit for one hour.
  • For the sauce, mix the brown sugar, dry mustard, water and vinegar together.
  • Pour sauce over loaf.
  • Continue to bake for another hour.
