AMISH HOMEMADE GRANOLA
Steps:
- In a large bowl, stir oats, coconut, nuts, flaxseed, and cinnamon together.
- Combine oil and honey in a saucepan and heat until honey is melted. Add salt, vanilla, and maple flavoring. Stir and add to oat mixture, stirring to combine.
- Pour onto a large cookie sheet pan or two 9x13 cake pans.
- Bake at 275° for approximately 1 1/2 hours, or until the desired doneness. Stir several times while it is baking. (If you prefer chunky granola - do not stir until it is completely cooled.)
- Cool completely and store in an airtight container.

These Easy Amish Breakfast Muffins couldn't be easier to make and will make your mornings a little bit sweeter! Made in a mini muffin tin, this is an easy Amish food recipe you can make for breakfast and easily take on the go! All you have to do is make your dough, which is simply sweetened with vanilla and sugar, and then dump your batter into a mini muffin tin and bake. Once these muffins are done, brush them with butter and dust them in cinnamon sugar and you're good to go! You could also make regular size muffins in a normal muffin tin if you want a larger muffin to start your morning. Just make sure to double the recipe!

- Preheat oven to 350 degrees F.
- In a mixing bowl, beat together ½ cup sugar, oil, egg, and vanilla.
- In another mixing bowl, combine flour, baking powder, salt.
- Add flour mixture and milk alternately to egg mixture, mixing after each addition, just until combined.
- Fill greased mini muffin cups 2/3 full with batter. Bake for 15-20 minutes or until done.
- Meanwhile, in a shallow bowl, place the melted butter. In another shallow bowl, combine the remaining ½ cup sugar and cinnamon.
- When the puffs are done, remove from cups, and while still hot, roll the tops in melted butter and then in the cinnamon sugar.

- Preheat the oven to 350 degrees F and arrange two racks evenly spaced in the oven. Line two muffin pans with paper muffin cups.
- In a large bowl, whisk together the eggs, oil, and vanilla. Add the carrots, apple, pineapple, pecans, coconut, and raisins and stir together. In a medium bowl, sift together the flour, sugar, cinnamon, baking soda, and salt. Add the dry ingredients to the wet ingredients and stir just until combined. Scoop the batter with a standard (2 1/4-inch) ice cream scoop (I use rounded scoops of batter) into the prepared muffin cups. Bake for 30 to 35 minutes, until a toothpick comes out clean. Place the pans on a baking rack to cool and serve the muffins warm or at room temperature.
GRANOLA MUFFINS
These muffins are ludicrously easy to make. It's just a matter of mixing flour, baking soda and a pinch of salt in one bowl; stirring together buttermilk, an egg, vegetable oil and sugar in another; then combining the two. At the end, fold in some granola, though if you wanted to cut out one step, you could add the granola along with the flour in the bowl of dry ingredients. Bake and eat 20 minutes or so after you've taken them out of the oven. You can even measure out all the ingredients the night before, so all you need to do upon waking is stumble into the kitchen, switch on the oven and stir everything together.

- Heat oven to 400 degrees. Line a 12-cup muffin pan with paper liners. In a large bowl combine the flour, baking soda and salt. In a small bowl whisk together the buttermilk, egg, sugar and oil. Pour liquid mixture into dry mixture and stir just until combined; do not overmix. Add granola and stir just until blended.
- Divide batter evenly among muffin cups. Bake until risen and golden brown, about 25 minutes. Carefully remove muffins from pan and place on a rack until cool enough to handle. Serve warm.
