We've enjoyed a few hearty breakfast casseroles while visiting an Amish inn. When I asked for a recipe, one of the ladies told me the ingredients right off the top of her head. I modified it to create this quick and easy breakfast casserole my family loves. -Beth Notaro, Kokomo, Indiana

- Preheat oven to 350°. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain. In a large bowl, combine remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9-in. baking dish., Bake, uncovered, until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 10 minutes before cutting.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat; cook and stir bacon and onion until bacon is evenly browned, about 10 minutes. Drain. Transfer bacon and onion to a large bowl. Stir in potatoes, eggs, Cheddar cheese, cottage cheese, and Swiss cheese. Pour mixture into prepared baking dish.
- Bake in preheated oven until eggs are set and cheese is melted, 45 to 50 minutes. Let stand 10 minutes before cutting and serving.

AMISH EGG CHEESE
Essentially, it's a ball of eggs and milk that have been cooked until the proteins separate into curds and the liquid separates into whey. The technique for making Egg Cheese is similar to making farmers cheese. Egg Cheese can be made savory with salt and sometimes pepper or sweetened with sugar.

Steps:
- 1. Heat fresh milk to the boiling point.
- 2. Beat eggs until lemon colored. Add buttermilk or sour milk, salt and sugar. Beat just until mixed, then pour slowly into the hot fresh milk. Cover and let set for 5 minutes.
- 3. Stir mixture until curds and whey separate. With slotted spoon lift the curds into a mold with drainage holes on the bottom.
- 4. Layer the curds into the mold lightly to prevent the cheese from packing heavily together.
- 5. when thoroughly cooled the cheese can be sliced out of the container or unmolded onto a dish and served as a spread for bread.

- Dissolve 1 package lemon Jello in 1 cup boiling water.
- Mix cream cheese and mayo together and add other ingredients. Add Jello last when cool.

- Grate cheese and break eggs into a dish but don't stir them.
- Heat a small frypan on medium heat and melt butter; if possible use a pan that the eggs will just fit into, covering the entire pan. When butter bubbles nicely, pour in the eggs, smother with the cheese, sprinkle with chopped chives or green onions if desired, and cover the pan. Turn heat to lowest setting; if using an electric stove you can turn the heat off.
- Leave eggs covered for 5 minutes, making your toast while you wait. No peeking! Whites will be set and yolks runny.

This "shmear kase" (smear cheese if translated literally) is an Amish recipe in this area. This is served at Amish weddings and church dinners - and of course in many homes year-round! It is generally eaten on bread or toast, and often topped with jelly. ENJOY!
