AMISH CINNAMON BREAD
This easy Amish Friendship Bread recipe doesn't need a starter! So quick and delicious!

Steps:
- Preheat oven to 350°F and grease two loaf pans with nonstick cooking spray.
- In a medium bowl, whisk together the flour and baking soda. Set aside.
- In a large bowl, beat together the butter, eggs, and 2 cups of sugar until creamy.
- Add the buttermilk and dry ingredient mixture. Fold in until combined.
- In a small bowl, combine the remaining ⅔ cup sugar with the cinnamon. Stir to mix.
- Spread ¼ of the batter in the bottom of each loaf pan. Sprinkle ¼ of the sugar mixture over the top of the batter in each pan. Spread the remaining batter over the top of the sugar mixture in each pan and top with remaining sugar.
- Bake in the preheated oven for 45 to 50 minutes, until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan until cool enough to touch, then transfer the loaf to a wire cooling rack to cool completely before slicing.

- Preheat the oven to 350°F and spray a loaf pan with nonstick baking spray then set aside.
- In a large bowl, cream together butter, sugar, and eggs until smooth and pale.
- To this mixture, add in the milk, flour, and baking soda and stir until just combined.
- In a separate bowl, mix together the brown sugar and cinnamon.
- Pour half the batter into the prepared loaf pan.
- Sprinkle 3/4 of the cinnamon sugar over the batter.
- Top with the remaining batter then the remaining cinnamon sugar on top.
- Use a knife or skewer to swirl the batter mixture gently.
- Bake for 45-50 minutes until a toothpick inserted in the middle comes out clean.
- Remove from the loaf pan and cool on a wire rack for at least 20 minutes before slicing to serve.

CINNAMON BREAD
The smell of cinnamon is impossible to miss at Dollywood. It gets stronger as you approach the Grist Mill Bakery, where visitors line up to taste the famous cinnamon bread, sold at the rate of 200 loaves an hour! Some fans top it with apple butter, others prefer a drizzle of glaze, but Dolly Parton is known to simply slather hers with butter while it's warm.

- Make the dough: Combine the warm water, yeast and a pinch of granulated sugar in a small bowl and let sit until foamy, 5 to 8 minutes. Meanwhile, whisk the bread flour, remaining 1 tablespoon granulated sugar and salt in a stand mixer.
- Add the yeast mixture and melted butter to the flour mixture. Knead with the dough hook on medium speed until the dough is smooth and elastic, about 8 minutes. Transfer to a bowl coated with cooking spray. Cover tightly with plastic wrap and let rise in a warm place until doubled in size, about 1 1/2 hours.
- Lightly spray a baking sheet with cooking spray. Punch down the dough and transfer to a work surface; knead a few times. Cut in half and gently shape into two 3-by-6-inch loaves (do not overwork the dough). Place the loaves 3 inches apart on the prepared pan. Lightly spray the loaves with cooking spray and cover with plastic wrap. Let rise in a warm place until puffy, 30 minutes to 1 hour.
- Make the topping: Whisk the granulated sugar, brown sugar and cinnamon in a small baking dish. Whisk the melted butter and corn syrup in another small baking dish.
- Preheat the oven to 350 degrees F. Line two 9-by-5-inch loaf pans with parchment paper, leaving a 2-inch overhang on all sides. Cut 4 deep slashes across the top of each loaf (the loaves will look deflated). Dip each loaf in the butter-corn syrup mixture, turning to coat, then coat with the cinnamon sugar, making sure to get the sugar in the crevices. Place the loaves in the prepared pans. Drizzle with any remaining butter mixture and sprinkle with any remaining cinnamon sugar. Bake until light brown, 25 to 30 minutes. Lift the bread out of the loaf pans using the parchment overhang and transfer to a rack. Let cool in the paper, about 15 minutes.
- Meanwhile, make the glaze: Whisk the confectioners' sugar, salt, melted butter and 3 tablespoons milk in a bowl until smooth. Whisk in up to 2 more tablespoons milk as needed to loosen. Drizzle on the warm loaves or serve on the side for dipping.
AMISH SOURDOUGH CINNAMON BREAD STARTER AND BREAD INSTRUCTIONS
found somewhere this is the starter for other recipes on Zaar you will need. or just to share for others to make bread. Important notes for the mix are: Do not use any type of metal spoon, bowl or pan. use glass, wood or plastics only. Do not refridgerate batter. Let air out of bag daily. It is normal to batter to bubble, ferment and rise. Do not feed or bake early. You will want to give the friend the instructions from day 1 to end for them to make and share. they only need the starter recipe if they are going to give it all away and keep non for themselves.

- In a small bowl, dissolve the yeast in warm water for about 10 minutes. Stir well.
- In a 2 quart glass or plastic container, combine 1 cup sifted flour and 1 cup sugar.
- Mix thoroughly or the flour will get lumpy when you add the milk.
- Slowly stir in warm milk and dissolved yeast mixture.
- Loosely cover the mixture with a lid or plastic wrap.
- The mixture will get bubbly. Consider this Day 1 of the cycle, or the day you receive the starter.
- For the next 10 days handle starter according to the instructions below for Amish Friendship Bread.
- Day 1: Do nothing: refer to date on bag should be day 10 of mix.
- Day 2: Mush the bag.
- Day 3: Mush the bag.
- Day 4: Mush the bag.
- Day 5: Mush the bag.
- Day 6: Add to the bag- 1 c plain flour, 1 c sugar, 1 c milk, and mush well.
- Day 7: mush the bag.
- Day 8: mush the bag.
- Day 9: Mush the bag.
- Day 10: follow instructions below--.
- Pour the entire contents of the bag into a large metal bowl.
- add 1 1/2 cups plain flour, 1 1/2 cups sugar, 1 1/2 c milk. mix well.

- Preheat oven to 325 degrees.

- bake approximately 1 hour until toothpick comes out clean. cool until bread loosens from the pan easily. turn onto serving dish or wire rack.

- 1. Grease two 9x5 loft pans. Set aside. Preheat oven to 350 degrees
- 2. Cream together Butter, 2 cups of sugar, and eggs. Then add in milk, flour, and baking soda and mix well.
- 3. Put 1/4 of batter in each loft pan.
- 4. Mix together 2/3 cup of sugar and cinnamon. Sprinkle 3/4 of mixture over the two loft pans. Then pour the rest of bread mix in the loft pans. Sprinkle the last of the sugar mix over top of each loft and then swirl with a butter knife.

FAVORITE AMISH CINNAMON BREAD
I got this from my mom and as it was passed from person to person, I don't know where it originated. This is a "sourdough" recipe. It takes 10 days sitting out on the counter, but is absolutely wonderful. My family eats this bread for snacks, breakfast, gives as gifts, a must have for holidays.

- On day 1: combine 1 cup milk, 1 cup sugar, and 1 cup flour in a large ziplock bag and mush to mix ingredients.
- On days 2-5: mush the bag twice daily (remove air first).
- On day 6: add 1 cup milk, 1 cup sugar, and 1 cup flour to the bag and mush to mix.
- On days 7-9: mush the bag twice daily (remove air first).
- On day 10: squeeze contents of bag into large mixing bowl.
- Add 1 cup milk, 1 cup sugar, and 1 cup flour and mix well.
- Measure out 4 (1 cup each) "starters" (these will be used for other batches rather than starting with fresh milk, flour, and sugar on day 1; or you may give them to a friend with a copy of the recipe, but note this takes the place of the day 1 ingredients.) You may freeze the starters for future use if desired (the second day out of the freezer is day 1).
- To the small amount in the bowl add oil, milk, eggs, vanilla; mix well.
- Next add remaining ingredients (except nuts and raisins); mix well.
- Then (if using) fold in nuts and raisins.
- Spray 2 loaf pans with cooking spray.
- Sprinkle generously with cinnamon and sugar.
- Pour batter into pans and sprinkle tops with cinnamon and sugar.
- Bake at 325 for 1 hour or until done. (25 minutes for muffins).
