Amish Chicken Soup Recipe - homemade noodle soup, comforting and delicious.

3 lb (1.5 kg) chicken
2 qts water
1 1/2 cup chicken stock
2 cups carrots, (chopped)
2 cups celery, (chopped)
1 cup onions, (chopped)
1 tart apple, (chopped)
2 teaspoons salt
pepper, (to taste)
4 cups egg noodles

Steps:

  • Put chicken in a large pot with 2 quarts water. Cover and cook about 2 1/2 hours, or until chicken is tender.
  • Remove chicken from the pot and strain broth.
  • Debone chicken and return to the pot together with strained broth.
  • Add chicken stock, carrots, celery, onions, apple, salt and pepper and cook until vegetables are soft.
  • Add noodles and cook for another 8-10 minutes. Serve hot.

1 medium onion, chopped
2 celery ribs, chopped
1 cup shredded carrots
2 pounds boneless skinless chicken breasts, cubed
3 chicken bouillon cubes
1 teaspoon salt
1/4 teaspoon pepper
12 cups water
2 cups uncooked egg noodles
2 cans (14-3/4 ounces each) cream-style corn
1/4 cup butter

Steps:

  • Place first 8 ingredients in a Dutch oven; bring slowly to a boil. Reduce heat; simmer, uncovered, until chicken is no longer pink and vegetables are tender, about 30 minutes. , Stir in noodles, corn and butter. Cook, uncovered, until noodles are tender, about 10 minutes, stirring occasionally.

1 cup flour
2 teaspoons garlic powder
1 tablespoon salt

Steps:

  • Dredge the chicken pieces in the flour and spices and arrange skin side up in a baking dish.
  • Mix the cream and water and pour over the chicken.
  • Bake at 350* for 1 1/2 hours or until the skin is golden brown.

1 cup chopped onion
1 cup chopped celery
1 cup shredded carrot
3 chicken bouillon cubes

Steps:

  • In a Dutch oven or soup kettle, combine the water, chicken, onion, celery, carrots and bouillon.
  • Bring to a boil.

  • Simmer chicken in boiling water until tender.
  • Remove bones and skin.
  • Strain the stock.

In my family, we call this simple stove top recipe for chicken Chicken Pot Pie. It is not very pie like, but a very classic German/Amish dish. This is one of my very favorites, I learned to make it with my mom when I was little, this will be the first time I wrote it down! I have had it before with carrots, which I do enjoy, but I prefer it best when it is very simple. This is a very inexpensive dish.

1 (2 pound) roasting chicken
8 cups water, or as needed
1 (28 ounce) can low fat, low sodium chicken broth
3 large baking potatoes, peeled
1 (10 ounce) package wide egg noodles
1 teaspoon salt-free seasoning blend
salt and pepper to taste

Steps:

  • Place the chicken into a large pot, and fill with enough water to cover it. Bring to a boil, cover, and cook over high heat until chicken is easily removed from the bone, about 35 minutes. Turn the chicken over once during this time so it will cook evenly. Cutting the chicken into pieces can speed up the cooking process a bit.
  • While the chicken is cooking, cut two of the potatoes into large chunks, and the other potato into very small cubes.
  • When the chicken is cooked, remove it from the water. Pull off the skin, and place all of the chicken meat in a separate dish. Pull the meat apart in long shreds. Reserve the cooking water in a separate container. Discard chicken skin and bones.
  • Pour the chicken broth into the pot, and add potatoes, chicken, salt, and pepper. Pour in 2 to 3 cups of the reserved water. Bring to a boil, and cook for about 15 minutes, until potatoes start to soften. Add 3 more cups of the chicken water, and the noodles. Season with salt-free seasoning blend, salt, and pepper. Cover, and simmer over medium-low heat until the noodles are tender and small potato pieces have dissolved.

What sets this apart from so many other chicken and corn soups is the absence of dairy and the use of saffron to give the dish a distinct color, aroma and flavor. (3 Points)

4 cups low sodium chicken broth
8 -10 ounces skinless chicken breasts or 8 -10 ounces skinless chicken thighs
1/2 medium onion, chopped
1/2 carrot, peeled and chopped
1/2 celery, coarsely chopped
1/4-1/2 teaspoon saffron
1/2 cup frozen corn
1/2 cup cooked whole wheat egg noodles
1/2 cup celery, small cubes
1/2 tablespoon chopped parsley

Steps:

  • Add the broth, chicken, onion, chopped celery and saffron to a large saucepan. Bring to a boil. Cover and reduce to a simmer for 30 minutes. During simmering time, you may want to gently skim any foam that comes to the top of the broth.
  • Take the chicken from the pan and reserve to the side while it cools. Strain broth removing all bits. Return to the sauce pan.
  • Take the now cooked chicken, remove the bones and dice into small (1/4) inch cubes. Add to the broth along with the cooked noodles, corn, celery and parsley.
  • Heat the soup until all ingredients are hot.
  • Serve.

Start removing the chicken from the bone and shredding up. Place shredded up chicken in 5 quart pan with noodles and broth. Stir everything together. Place pot on stove and bring to a simmer over medium-low heat, stirring occasionally. Simmer for about 20-30 minutes or until noodles are tender and liquid has cooked down.
