- Preheat the oven to 350°F. Grease and flour a 9 by 13-inch pan and set aside.
- Mix together the eggs, oil, flour, sugar, salt, baking soda, and cinnamon in a large bowl until well blended. Add the apples and the raisins. The batter will be dough-like, and it may be necessary to knead in the apples and raisins to fully incorporate them. Spread the batter evenly into the prepared pan. Bake for 1 hour, or until the top is golden brown and the edges are firm.
- Note: Any variety of apple will work fine, but slightly tart apples will lend more flavor to the cake.

The first time I tried it, I knew it was something that I had to share with you. I use those Spanish green olives that are stuffed with pimentos, because it adds some nice color.Since the recipe calls for diced, I save a little money by using the ones that come sliced in the jar because they are made from olives that are not perfect enough to be sold whole

- Preheat oven to 350F. Prepare an 8.5x4.5x2.5-inch loaf pan by greasing it with non-stick cooking spray.
- In a small mixing bowl, whisk together the brown sugar and 1 teaspoon cinnamon; set aside.
- In a large mixing bowl, use an electric mixer to cream together the 2/3 cup granulated sugar and butter until light and fluffy. Beat in the eggs and vanilla, just until combined.
- In a small mixing bowl, whisk together the flour and baking powder. Add the flour mixture to the wet mixture and stir until combined. Add the milk and mix until smooth.
- Pour half of the batter into the prepared loaf pan and spread out evenly.
- In a small mixing bowl, combine the apple filling ingredients. Pour half of the apples over the batter in the pan, then spread on the remaining batter. Top with the remaining apples and press the apples down slightly.
- Sprinkle the brown sugar and cinnamon mixture over top of the bread.
- Bake at 350F for 1 hour, or until a toothpick inserted into the center comes out clean. Cool in the pan for about 30 minutes.
- In a small bowl, combine the glaze ingredients until smooth. Drizzle over the cooled bread.
- Slice the bread and serve.
AMISH APPLE FRITTERS
Amish Apple Fritters are delicious fried doughnuts, made easily from scratch with a simple batter and fresh apple chunks, cinnamon, and a sweet glaze.

- In a large bowl (or the bowl to a stand mixer), cream the sugar and eggs for 1-2 minutes with a mixer.
- To this, add the flour, baking powder, cinnamon, salt and milk. Mix these ingredients well.
- In a separate bowl, mix the chopped apples with the lemon juice. Using a spoon, add the apple mixture to the batter and stir well, to combine.
- Heat vegetable oil to 375 degrees (use a deep-fry thermometer or use an electric skillet with a temperature control). It is very important to make sure the temperature is hot enough to fry the fritters correctly.
- Once the oil is at 375 degrees, scoop out really large tablespoonfuls of the fritter batter (as big as you can get 'em!) and carefully and gently slide the fritter into the hot oil.
- When they get to a true golden brown color, carefully turn the fritters over to the other side (I used two spoons to carefully flip them) and continue cooking. (This should take approx. 2-3 minutes on each side).
- When the fritters become brown on both sides (you might have to flip them over again to make sure both sides are brown), then you know they will be ready and cooked through.
- Using a slotted spoon, remove the fritters, one at a time, to a paper-towel lined (several thicknesses) plate to drain and cool.
- To make a glaze for the tops of the fritters, mix together the powdered sugar, vanilla and water in a small bowl until you have a nice "paintable" glaze.
- Using a pastry brush, brush this glaze over the entire top of the fritter. Let glaze harden slightly, turn it over and "paint" the glaze on the bottom. Place glazed fritters on wire rack; let glaze harden, then serve.

- In a large skillet, sauté onions and sausage over medium-high until sausage is no longer pink. Reserve 2 tablespoons of the drippings and drain the rest. Remove sausage and onions from skillet.
- Add drippings, 2 tablespoons butter, apple, thyme, sage, and pepper to pan. Cook until apple is fork tender (about 5 minutes). Remove from heat and add to cooked sausage.
- In a large pan bring 2 cups water to boil. In a separate bowl combine cornmeal, salt and remaining cup of butter. Slowly add this mixture to the boiling water. Allow to return to boil and then reduce to a simmer. Stir constantly to avoid scorching. Add more water if needed, but mixture should be thick enough for a wooden spoon to stand up in.
- Add sausage-apple mixture to cornmeal and stir. Pour the final mix into a greased 8”x4” loaf pan. Refrigerate at least 4 hours.
