1/2 cup unsalted butter, melted
1 cup all-purpose flour
2 cups sugar
3 teaspoons baking powder
Pinch salt
1 cup milk
4 cups peeled, pitted and thinly sliced fresh peaches (5 to 6 medium peaches)
1 tablespoon fresh lemon juice
Several dashes ground cinnamon or ground nutmeg (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Pour the melted butter into a 13 by 9 by 2-inch baking dish.
  • In a medium bowl, combine the flour, 1 cup sugar, the baking powder, and the salt and mix well. Stir in the milk, mixing until just combined. Pour this batter over the butter but do not stir them together.
  • In a small saucepan, combine the peaches, lemon juice, and remaining cup of sugar and bring to a boil over high heat, stirring constantly. Pour the peaches over the batter but do not stir them together. Sprinkle with cinnamon or nutmeg if desired.
  • Bake in the preheated oven for 40 to 45 minutes or until the top is golden-brown. Serve warm or cold.

3 pounds frozen peaches
2 cups sugar
1/2 cup all-purpose flour (note: we did not do this in the show, but it is necessary)
3 tablespoons lemon juice
Pinch of salt
3 cups all-purpose flour
3 heaping tablespoons sugar, plus extra for sprinkling over the top
1 1/2 tablespoons baking powder
Pinch of salt
3 tablespoons butter
3 tablespoons vegetable shortening or lard
3/4 cup whole milk
2 whole eggs
Vanilla ice cream or fresh whipped cream, for serving

Steps:

  • Preheat the oven to 400 degrees F. Butter a baking dish.
  • For the fruit: In a bowl, combine the peaches, sugar, flour, lemon juice and salt. Stir and set aside.
  • For the topping: In a separate bowl, combine the flour, sugar, baking powder and salt. Stir together. Add the butter and shortening, and then cut together with a pastry cutter. Beat the milk and eggs together. Pour into the flour mixture and stir with a fork until just combined.
  • Pour the peaches into the prepared baking dish. Tear off pinches of the dough topping and drop it onto the surface of the fruit, creating a "cobbled" texture. Sprinkle additional sugar over the top.
  • Bake until golden brown and bubbly, 30 to 35 minutes. Allow to sit for 10 to 15 minutes before serving. If the cobbler is too juicy, use a turkey baster to remove a little of the juice (or spoon the juice over ice cream). Serve warm with vanilla ice cream or fresh whipped cream.

1 stick (8 tablespoons) unsalted butter
2 ready-made pie crusts
1 cup all-purpose flour (plus some extra for dusting the work surface)
3 tablespoons agave syrup
1 1/4 teaspoons cinnamon (plus more for sprinkling on top)
3/4 teaspoon nutmeg
Four 29-ounce cans sliced peaches (drained)
Kosher salt
1 orange
2 eggs (whisked)
vanilla ice cream (for serving)

Steps:

  • Preheat oven to 375 degrees F. Grease a 13x9-inch baking pan with 1/2 stick (4 tbs) of the butter. Set aside.
  • On a lightly floured surface, roll out the pie crusts until they are large enough to cover the baking pan surface.
  • In a large skillet, melt the remaining 1/2 stick (4 tbs) butter over medium heat. Mix in agave syrup, cinnamon, nutmeg, and peaches. Add in 2 pinches of salt and mix well. Once the mixture begins to simmer, reduce the heat to low and continue cooking for 10 minutes. Remove mixture from heat and set aside to cool.
  • Pour half of the peach mixture into the prepared baking pan in an even layer. Grate half of the orange zest on top of the peaches. Place the first sheet of pie crust on top. Bake for 15 minutes or until light brown.
  • Take the cobbler out of the oven. Pour the remaining half of the peach mixture on top and grate the remaining orange zest on top of the peaches. Place the second pie crust on top, brush with a thin layer of egg wash and sprinkle cinnamon.
  • With a fork, poke holes on the top layer. This will help it cook evenly and allow steam to escape. Bake for 40 minutes or until the peach juices start to bubble and the top crust is golden brown.
  • Serve with a scoop of vanilla ice cream on top.

5 lb fresh or freozen peaches
1-1&1/2 c 100% pure apple juice
1-1&1/2 c brown sugar
1/2 c granulated sugar
2 stick cinnamon sticks
1 tsp ground cinnamon
1 stick salted butter
1 tsp lemon juice
1 medium vanilla bean split/ scrapped
4 c flour
1&1/2 c butter flavored shortening
2 tsp salt
10 tsp water, ice cold

Steps:

  • 1. Combine apple juice, cinnamon sticks, cinnamon, 1 cup brown sugar, 5 TBLS butter, lemon juice and a pinch or 2 or salt to large stock pot. Bring to a boil. Once mixture begins to boil, allow to simmer for about 5 min. ( SET ASIDE ABOUT 1 CUP OF PEACH JUICE, WITH A FEW PEACHES MASHES IN IT)
  • 2. Add peaches to mixture, return to boil. Then simmer until peaches are soft (not mushy). Peaches can stand in the juice mixture and absorb flavor for as long as you would like. The longer the better. (if longer than an hour place in fridge)
  • 3. CRUST: Mix in 2tsp of salt with 4 cups flour. With pastry cutter of two knives,or hands to cut shortening into flour until blended. Add water 1 tsp at a time until crust is moist and plyable. Roll out crust on well floured surface to your desired thickness with rolling pin, or just press into shape with fingers (kids love this part!) This can be put into 2 pie plates, one half sized pan, muffin pans etc, whatever works for your event. Brush the bottom of the crust with butter, you may also sprinkle additional cinnamon and sugar. Score crust with fork.
  • 4. Add desired amount of peaches with a slotted spoon into crust, then pour desires amout of juices in. Sprinkle with 1/2 cup of brown sugar. Cover top of cobbler with remainig crust, brush with butter, sprinkle cinnamon and sugar. Bake for 35-45 min or until crust is golden brown.
  • 5. In a small sauce pan add reserved peach juice, 2TBLS butter, about 1/4 cup brown sugar, 1/4 cup granulated sugar, tsp cinnamon. allow to boil for about 10 min, or until thickens. Set aside until cobbler is done.
  • 6. remove cobbler from the oven, while it still hot drizzle peach syurp over the crust. Serve while still warm over ice cream vanilla , topped with more peach syurp. Enjoy

1 1/2 cups baking mix, such as Bisquick Original Pancake and Baking Mix ™
1 1/2 cups milk, at room temperature
1 1/4 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 1/4 cups packed dark brown sugar
Three 15-ounce cans sliced peaches, drained
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 375 degrees F. Place the butter in a 12-inch round cast-iron skillet or a 9-by-13-inch baking dish and place in the preheating oven to just melt the butter, 5 to 10 minutes.
  • Whisk the baking mix, milk, cinnamon and nutmeg together in a medium bowl. Toss the brown sugar and peaches together in a separate medium bowl and set aside.
  • Remove the pan from the oven and swirl the butter or use a pastry brush to coat the bottom and sides of the pan, then pour the melted butter into the batter. Whisk until combined, then pour the batter into the buttered pan. Spoon the peaches and brown sugar syrup evenly over the top of the batter.
  • Bake until golden brown and the peach juices are bubbling, 45 to 55 minutes.
  • Let cool to room temperature before serving with ice cream.

2 cups peach juice
1 heaping tablespoon cornstarch
2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground nutmeg
Kosher salt
4 tablespoons unsalted butter, at room temperature, plus 8 tablespoons unsalted butter, melted
1 1/2 teaspoons pure vanilla extract
4 cups chopped peaches or other stone fruit (plums, apricots) or apples
1 1/2 cups whole milk or cream, at room temperature
1 large egg
2 cups plus 2 tablespoons all-purpose flour
1 tablespoon baking powder
Whipped cream or ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium bowl, combine about 1/2 cup of the peach juice with the cornstarch and whisk until smooth. Pour in the remaining peach juice and whisk to blend. Transfer the mixture to a small saucepan and heat over medium heat. Add 1/2 cup of the sugar, 1 teaspoon of the cinnamon, the ginger, nutmeg and a pinch of salt. Cook, whisking, until the sugar dissolves and the mixture thickens, 3 to 4 minutes. Remove from the heat. Add the room temperature butter and stir until melted. Pour into a medium heatproof bowl and combine with the chopped peaches. Add 1/2 teaspoon of the vanilla and gently toss to combine. Transfer to a 9-by-13-inch baking dish.
  • In a large bowl, whisk together the milk, egg, remaining 1 1/2 cups sugar, 1 teaspoon cinnamon, 1 teaspoon vanilla and a pinch of salt. Add the flour and baking powder and gently whisk until incorporated, then gently whisk in the melted butter until combined. Pour the batter over the fruit and peach juice mixture. Don't overfill the dish-leave room for the cobbler batter to rise, about 1/2 inch.
  • Bake until golden blonde on top, 30 to 35 minutes, then rotate the baking dish, raise the oven temperature to 400 degrees, and bake until the top of the cobbler is golden brown, 5 to 8 more minutes.
  • Let cool on a cooling rack and serve with whipped cream or ice cream.

2 x 410g cans sliced peaches , drained
120g golden caster sugar , plus extra for sprinkling
1 tsp ground ginger
150g plain flour
1 tsp baking powder
½ tsp ground cinnamon
150g butter , chilled and cubed, plus extra for greasing
1 small egg
vanilla ice cream , to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease a baking dish with a little butter, then lay the drained peach slices in the base. Sprinkle with 2 tbsp of the sugar and the ground ginger and set aside.
  • Tip the flour, remaining sugar, baking powder, cinnamon and a pinch of salt into a food processor. Whizz until combined, then add the cubes of butter, pulse until the mixture resembles breadcrumbs, then add the egg and continue to blitz until it comes together to make a thick dough.
  • Spoon the dough in dollops on top of the peaches, creating a good covering, but leave some gaps for the dough to spread into. Sprinkle with a little caster sugar then bake for 40 mins, until golden. Serve with scoops of vanilla ice cream.

  • Preheat oven to 425°F. Place a large baking sheet covered in foil on the lowest rack in the oven. This cobbler overflows a bit almost every time I make it. The baking pan will catch the drips and prevent a mess in the oven.
  • In a large bowl, combine the peaches and the lemon juice and then add the rest of the filling ingredients. Stir to coat and then pour into a 9x13 baking dish.
  • Bake the peach mixture in the preheated oven for 10 minutes. While the peaches are baking, combine the dry topping ingredients and whisk to combine. Toss the grated butter in the flour mixture. Stir in the boiling water, just until combined, leaving plenty of little lumps of butter.
  • Remove the peaches from the oven and drop the topping over them in spoonfuls. (I like to use my smallest cookie scoop to do this.) Sprinkle the cobbler topping with the cinnamon sugar topping.
