Fluffy American pancakes image

This easy American pancake recipe makes light and fluffy pancakes that are great for a weekend brunch. Try adding a large handful of fresh blueberries to the batter before cooking. Each serving provides 256 kcal, 7g protein, 35g carbohydrates (of which 9g sugars), 9.5g fat (of which 5.5g saturates), 1.5g fibre and 1.2g salt.

135g/4¾oz plain flour
1 tsp baking powder
½ tsp salt
2 tbsp caster sugar
130ml/4½fl oz milk
1 large egg, lightly beaten
2 tbsp melted butter (allowed to cool slightly) or olive oil, plus extra for cooking
maple syrup
butter

Steps:

  • Sift the flour, baking powder, salt and caster sugar into a large bowl. In a separate bowl or jug, lightly whisk together the milk and egg, then whisk in the melted butter.
  • Pour the milk mixture into the flour mixture and, using a fork, beat until you have a smooth batter. Any lumps will soon disappear with a little mixing. Let the batter stand for a few minutes.
  • Heat a non-stick frying pan over a medium heat and add a knob of butter. When it's melted, add a ladle of batter (or two if your frying pan is big enough to cook two pancakes at the same time). It will seem very thick but this is how it should be. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen to about 1cm/½in thick.
  • Repeat until all the batter is used up. You can keep the pancakes warm in a low oven, but they taste best fresh out the pan.
  • Serve with lashings of real maple syrup and extra butter, if you like.

Steps:

  • Preheat griddle to medium-high heat.
  • In large bowl, beat eggs; stir in milk and oil.
  • Add flour, sugar, baking powder, and salt.
  • Stir just until large lumps disappear.
  • For thicker pancakes, add 1/4 cup flour; for thinner pancakes, add 1/4 cup milk.
  • Lightly grease heated griddle.
  • Pour batter, about 1/4 cup at a time onto the prepared griddle.
  • Bake until bubbles form and edges start to dry; turn and bake other side.
  • Serve hot. Great with strawberries and freshly whipped cream; on Fourth of July or Memorial Day weekend, add blueberries.

Steps:

  • In a large bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg.
  • In another bowl, beat the eggs and then whisk in the milk and vanilla.
  • Melt the butter in a large cast iron skillet or griddle over medium heat.
  • Whisk the butter into the milk mixture. Add the wet ingredients to the flour mixture, and whisk until a thick batter is just formed.
  • Keeping the skillet at medium heat, ladle about 1/4 cup of the batter onto the skillet, to make a pancake. Make 1 or 2 more pancakes, taking care to keep them evenly spaced apart. Cook, until bubbles break the surface of the pancakes, and the undersides are golden brown, about 2 minutes. Flip with a spatula and cook about 1 minute more on the second side. Serve immediately or transfer to a platter and cover loosely with foil to keep warm. Repeat with the remaining batter, adding more butter to the skillet as needed.
  • Procedure for adding fruit to pancakes: Once the bubbles break the surface of the pancakes, scatter the surface with sliced or diced fruit, or chocolate chips, nuts, etc. Flip with a spatula and cook for 1 minute more, being careful not to burn toppings.

1 large egg
40g plain flour
½ tsp baking powder
45ml milk (dairy, nut or oat based)
1 tsp butter
½ tbsp oil
maple syrup or honey and berries, to serve (optional)

Steps:

  • Separate the egg, putting the white and yolk in seperate bowls. Mix the egg yolk with the flour, baking powder and milk to make a smooth paste.
  • Beat the egg white and a pinch of salt with an electric whisk (or by hand) until fluffy and holding its shape. Gently fold the egg white into the yolk mixture. Be extra careful not to knock any of the air out.
  • Heat the butter and oil in a non-stick frying pan. Dollop a third of the mixture into the pan and cook on each side for 1-2 mins or until golden brown. Repeat with the remaining mixture to make three pancakes. Drizzle over some maple syrup or honey and serve with berries, if you like.

2 tablespoons sugar
2 teaspoons baking powder

Steps:

  • Mix all dry ingredients together in a bowl (I use a 4 cup measuring cup).
  • Mix milk, oil and egg in smaller bowl (I use 2 cup measuring cup).
  • Mix liquid ingredients into dry ingredients.
  • Make 4 inch pancakes in a medium heated non-stick pan or griddle or use a small amount of oil in regular pan.
  • Cook until golden brown.
  • Serve with butter and syrup or your favorite topping.

200g self-raising flour
1 ½ tsp baking powder
1 tbsp golden caster sugar
3 large eggs
25g melted butter, plus extra for cooking
200ml milk
vegetable oil, for cooking
maple syrup
toppings of your choice, such as cooked bacon, chocolate chips, blueberries or peanut butter and jam

Steps:

  • Mix 200g self-raising flour, 1 ½ tsp baking powder, 1 tbsp golden caster sugar and a pinch of salt together in a large bowl.
  • Create a well in the centre with the back of your spoon then add 3 large eggs, 25g melted butter and 200ml milk.
  • Whisk together either with a balloon whisk or electric hand beaters until smooth then pour into a jug.
  • Heat a small knob of butter and 1 tsp of oil in a large, non-stick frying pan over a medium heat. When the butter looks frothy, pour in rounds of the batter, approximately 8cm wide. Make sure you don't put the pancakes too close together as they will spread during cooking. Cook the pancakes on one side for about 1-2 mins or until lots of tiny bubbles start to appear and pop on the surface. Flip the pancakes over and cook for a further minute on the other side. Repeat until all the batter is used up.
  • Serve your pancakes stacked up on a plate with a drizzle of maple syrup and any of your favourite toppings.

  • Whisk the milk and eggs in a jug, then set aside. Sieve the flour and the baking powder into a bowl, add a pinch of salt, the sugar, and combine. Make a well in the centre and gradually pour in the milk and egg mixture. Beat well.
  • Brush a nonstick frying pan with a little vegetable oil and place over a medium heat. When the pan is hot, pour half a ladle of batter into the pan to form a pancake that is approx 10cm (4in) in diameter.
  • Cook until bubbles start to form, then flip the pancakes over and cook the other side until golden.
