For a 9x13-inch cake, double the recipe (both cake and frosting) and bake for 45-50 minutes. The cake stays moist and flavorful for a few days, so you can make it 1-2 days ahead.

Number Of Ingredients 20

1 and 1/4 cups (170 g/6 oz.) all-purpose flour, sifted
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 large eggs
1/2 cup (100 g/3.5 oz.) granulated sugar
1/4 cup (50 g/1.7 oz.) dark brown sugar
1/4 cup (60 ml) canola or another flavorless oil
1/2 cup (120 ml) unsweetened applesauce
1/2 cup (120 ml) buttermilk
1/2 teaspoon vanilla extract
4 oz. (115 g) cream cheese, softened to room temperature
1/4 cup (1/2 stick/55 g) unsalted butter, softened to room temperature
1 and 1/2 cups (175 g) powdered sugar, sifted
1/2 teaspoon pure vanilla extract
pinch of salt

Steps:

  • Preheat oven to 350°F/180°C. Grease an 8x8-inch pan.
  • In a large bowl sift together flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Set aside.
  • In a medium bowl whisk eggs, granulated sugar, and brown sugar until well combined for about a minute. Add oil and whisk until combined. Add applesauce, buttermilk, and vanilla extract and mix until well combined. Pour the mixture into the flour mixture and mix as little as possible, just until combined and smooth.
  • Pour the batter into prepared pan. Bake for 30-40 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow cake to cool completely.
  • Make the frosting: In the bowl of an electric mixer fitted with the paddle attachment, beat cream cheese and butter on medium speed until smooth and creamy, 1-2 minutes. Add 1 cup powdered sugar, vanilla extract, and salt, and beat on low speed for 30 seconds, then on high speed for 1-2 minutes until smooth and fluffy. If you want a thicker frosting, add 1/2 cup more powdered sugar. Frost cake with the frosting.
  • Store cake in an airtight container in the refrigerator for up to 5 days. Cake is best served at room temperature.

This recipe came from my grandmother. It has been the traditional "Birthday" cake in my family since I can remember. The recipe was a contest to name a spice cake in a magazine. This is a very easy and flavorfull spice cake. I have frosted it with cream cheese frosting or baked it in a bundt pan and served it with whipped cream.

3/4 cup shortening
1 1/2 cups sugar
3 eggs
3/4 cup buttermilk
1/2 teaspoon lemon juice or 1 tablespoon lemon extract
1 3/4 cups flour
1/2 teaspoon baking soda
2 tablespoons cocoa
1 teaspoon cinnamon
1 teaspoon ground ginger
3/4 teaspoon nutmeg
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup chopped walnuts (optional)

Steps:

  • Preheat oven 350 degrees.
  • Grease and flour two 8-9-inch cake pans or bundt pan; set aside.
  • Cream shortening and sugar together until light and fluffy.
  • Add eggs, one at time, combining each egg into the mixture well before adding another egg.
  • Add Vanilla and lemon juice/extract. Mix well.
  • Stir dry ingredients together in a separate bowl, add to mixture alternately with buttermilk. Do not over mix.
  • Add optional nuts last.
  • Pour into prepared baking pan/pans.
  • Bake @ 350 deg. for 30-35 minutes. Frost cream cheese frosting or serve with whipped cream.

  • Cool on a rack before cutting.

This is a very flavourful, moist cake. I made it for my Mom's birthday since she doesn't like chocolate and the rest of the family isn't too keen on white cake. She loved it. The cake tastes even better after a day or two.

Steps:

  • Preheat oven to 350 degrees F.

  • Beat in egg and vanilla.
  • Add baking powder, salt and spices.
  • Add milk to margarine mixture in 2 parts alternately with flour.
  • Begin and end with flour.
  • Spread batter into a greased 8" square pan.
  • (For a 9" X 13" cake, double the recipe.) Bake for 35 to 40 minutes.
  • When cool, frost with your choice of frosting (I added some orange extract to vanilla buttercream).

Steps:

  • Preheat oven to 350°F Coat a bundt pan with nonstick spray.
  • Beat cake mix, water, oil, eggs, vanilla extract, and pudding mix on low speed until incorporated. Beat 2 more minutes on medium speed.
  • Stir in the orange zest and pour the batter into the pan.
  • Bake 45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  • Cool cake in pan for 10 minutes. Take out and cool completely.
  • Drizzle warm frosting over cake or sprinkle with powdered sugar.

1/4 cup cornstarch
4 teaspoons baking powder

1/2 teaspoon ground cloves
1 cup milk
3 large eggs
2 teaspoons vanilla extract

Steps:

  • Adjust oven rack to middle positon and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9 by 13 inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2 cup measuring cup.
  • Beat softened butter into dry ingredients first on low, then medium, until mixture forms pebble sized pieces. Add about 1/2 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages, beat on medium speed until bater is smooth. Add the sugar; beat until just incorporated about 30 seconds. Pour batter into cake pan.
  • Bake until a cake tester or toothpick inserted comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack, let cool.
  • *** Picnic Tip: Can be double wrapped in plastic a day ahead. Return to pan to transport. Also the batter can be divided and baked into two 8" square cake pans. Take one to picnic and freeze one for later.
  • *** Gingerbread Variation - To Turn Cake into Gingerbread:.
  • * reduce baking powder to 1 tsp; add 1 tsp baking soda.
  • * Reduce brown sugar to 1 cup add 1 cup molasses.

This is, in my mind, the taste of autumn placed into a cake. I highly suggest letting it cool, slightly then rubbing butter all over the cake, while the cake is still warm enough to melt the butter. I use a cake mixer for this so the mixing goes a little smoother, than by hand.

  • Pull the cake out and let cool in tin.
  • Optional: Let stand approximately 10 minutes and take a stick of butter and rub it generously across the cake.
