AMAZING GLAZED HAM

- Let the ham sit at room temperature for 1 hour before baking. This will allow it to cook evenly.
- Preheat the oven to 325 degrees F.
- Make the glaze: In a medium pot over medium-high heat, combine the brown sugar, mustard, vinegar, cinnamon, paprika, chili powder, orange zest and juice, garlic and some salt and pepper. Bring to a gentle boil and cook for 10 minutes, stirring occasionally.
- Place a rack in a roasting pan. Put the ham on the rack large open-face down (so the spiral cuts are stacked on top of one another). Brush half of the glaze over the surface of the ham, getting it between the slices as much as you can.
- Pour about an inch of water in the base of the roasting pan; the water should not touch the ham. Tent the pan loosely with aluminum foil and bake for about 10 minutes per pound (1 hour 10 minutes to 1 hour 25 minutes).
- Take the ham out of the oven and remove the foil. Raise the oven temperature to 375 degrees F. Brush half of the remaining glaze on the ham. When the oven is up to temperature, return the ham, uncovered, and bake for 15 minutes. Brush the remaining glaze over the ham and cook for another 15 minutes.
- Carefully transfer the ham to a platter. Serve right away, or cover with foil and take it to your gathering!
INSTANT POT HAM WITH BROWN SUGAR GLAZE
This easy instant pot ham has a brown sugar, honey, and orange glaze that makes it irresistible. Cooking it in the Instant Pot keeps it tender and juicy.

- Place the trivet in the inner pot along with 1 cup of water (or 1 ½ if using an 8-quart pressure cooker).
- Lay out two long pieces (long enough to go all the way around the ham) of heavy-duty aluminum foil crisscrossed one on top of the other.
- Place the ham on top of the foil in the middle where the two pieces cross.
- In a small bowl, stir together the sugar, mustard, orange zest and juice, cinnamon, ginger, and cloves.
- Brush and drizzle the glaze onto the ham, gently pulling the slices of meat apart to get some of the glaze down in between the slices. Reserve some of the glaze for later.
- Wrap the top piece of foil around the ham and then wrap the other piece around it. The ham should be completely covered and well wrapped in the foil.
- Place the ham on the trivet in the Instant Pot.
- Cover and seal the pot and pressure cook for 20 to 30 minutes, depending on the size of the ham (for 20 minutes for a 5- to 6-pound ham, 25 minutes for a 7-pound ham, 30 minutes for an 8-pound ham.)
- Once the cooking time ends, let the pressure release naturally for 5 to 10 minutes, then quick release any remaining pressure.
- Meanwhile, preheat the broiler or your oven to 500ºF.
- When you remove the ham from the Instant Pot, place it on a baking sheet and open up the foil.
- Brush, drizzle, or pour the remaining glaze over the top of the ham and put under the broiler or in the oven for about 5 minutes, until the glaze bubbles and thickens.
- Serve immediately.

- Place ham on a trivet and set it inside a multi-functional pressure cooker (such as Instant Pot®). Pour crushed pineapple over ham. Sprinkle brown sugar and drizzle maple syrup on top. Secure the lid with vent closed.
- Select high pressure according to manufacturer's instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Remove ham and trivet. Cut ham into slices and place on a plate.
- Select Saute setting on the pressure cooker. Mix cornstarch with water until smooth. Stir mixture into the pot, bring to a boil, and stir until thickened. Pour sauce over the ham.

Taste and gradually add in brown sugar to desired sweetness. *Pro Tip: You will want it to be quite sweet to balance the salty smoky ham flavor (for reference, we added roughly ¼ cup (50g) brown sugar). Mix 2.5 tbsp (22.5g) cornstarch with 3 tbsp (45ml) cold water in a small mixing bowl. Add the cornstarch mixture one third at a time to thicken the yummy honey pineapple sauce until desired thickness.
