My grandma makes these at Christmas, it is now a tradition that we make these and then take them round the neighborhood and give out with Recipe #182365. They are good any time of the year

395 g sweetened condensed milk (just 1 tin)
4 cups shredded coconut
1 lb dried apricot, chopped into small pieces
1 lemon, juice of

Steps:

  • You also need a lot (I mean mountains, literally) of caster sugar for rolling.
  • To make, mix all ingredients and roll into 60 tsp size balls, they may take a while to form balls but the warmth of your hands should do it (very sticky).
  • Coat completely in caster sugar.

  • roll into small balls.
  • then roll into coconut.

Super easy Apricot Balls made with just 5 ingredients.

15 dried apricots
6 medjool dates, pitted
25 grams (1/4 cup) almond meal
25 grams (1/4 cup) desiccated coconut, plus extra for rolling
1 tablespoon coconut oil

Steps:

  • To a food processor, add apricots, dates, almond meal, coconut and coconut oil. Mix on high for 1 minute or until mixture is finely processed - it's ok if it's a little bit chunky.
  • Roll tablespoons of apricot mix into small balls, using your hands, until smooth. Dip each ball in extra coconut and place on a plate. Repeat with remaining apricot mixture.
  • Place balls in the fridge for at least 30 minutes to set. Store balls in fridge.

  • In a food processor chop apricots and coconut until thoroughly combined.
  • Add the 1/4 cup sweetened condensed milk; process until combined.
  • Pour the mixture into a dish; refrigerate until firm (about 30-45 minutes).
  • Place wax paper on a baking sheet; set aside.
  • Place additional coconut or finely chopped pecans in a shallow bowl.
