It's getting hot outside so we're turning to our favorite cocktail to cool down - Bellinis! We love tossing in a few Amarena Cherries from Fabbri 1905 (sold at Eataly NYC Flatiron) to make the drink sweet but keep an unmistakable tartness... it's the perfect combo and we love keeping these cherries at home! Steps:
- For each Bellini, pour 1 teaspoon Amarena Fabbri cherry gourmet sauce into a champagne flute; fill the flute with Prosecco.
- Stir, drop in 3 Amarena Fabbri cherries, top with a sprig of mint, and serve.

HAZELNUT COOKIES WITH AMARENA CHERRIES
This ias an adopted recipe. I haven't tried them yet but I bet they'd make a great addition to the cookie tray for Cmas. Even make good gifts. I've added a note at the end of the directions.

Steps:
- Preheat oven to 350ºF (180ºC).
- Mix butter, icing sugar and egg yolk, add flour, salt and 1/2 the hazelnuts.
- Foam the eggwhite in a small bowl.
- Put the remaining hazelnuts into another.
- Form balls(from step 2 mixture)of about 2 inches(5 cm).
- Dip first in egg white then in hazelnuts and place on baking tray, flattening them slightly.
- Form a little hole in the middle and place half an amarena cherry in it.
- NOTE:.
- If you cannot find amarena cherries, use drained dry maraschino cherries.
- Bake for 12-15 minutes until lightly browned.

MILESTONE'S BELLINI
Milestone's has this wonderful peach bellini (kind of like a slushy) that is full of flavour. We think we have come up with a perfect combination. I use a blender but a slushy machine would be awesome. I freeze a bunch of batches of the 7 Up/Peach mixture and take them out when they are almost frozen but still slushy.

Steps:
- Place peach crystals into 7 Up.
- Stir and place in freezer (I use Ziploc bags or Tupperware).
- When partially frozen or fully frozen, place in blender along with rum and champagne.
- Blend until smooth consistency.
- Pour into glass and top with Sangria when ready to drink.
