SLOW COOKER PEACH COBBLER
This slow-cooked cobbler is a great use for frozen peaches and so easy to make. Add some toasted, chopped pecans for a little Southern flair.

- For the filling: Butter the sides and bottom of the insert of a 6-quart slow cooker. Whisk together the cornstarch, orange juice and 1 tablespoon water in a small bowl. Add the mixture to the insert, add the peaches and granulated sugar and toss.
- For the biscuit topping: Whisk together the flour, 2 tablespoons of the granulated sugar, baking powder and salt in a large bowl. Add the butter and rub the mixture together with your fingertips so that it forms a coarse meal with some pea-sized lumps. Add the milk and almond extract if using and stir with a wooden spoon to form a wet dough.
- Drop spoonfuls of the dough on top of the peach mixture. Combine the remaining 1 tablespoon granulated sugar with the cinnamon and ginger and sprinkle over the dough. Cover the slow cooker and set to high for 3 to 4 hours. The cobbler should be bubbly and the biscuits should be cooked through. Let rest for 20 minutes before serving.
- For the sour cream topping: Meanwhile, combine the heavy cream, sour cream and confectioners' sugar in a medium bowl and beat with an electric mixture until the mixture forms medium peaks.
- Spoon the cobbler into bowls and top with the whipped sour cream topping.
RHUBARB PEACH COBBLER
Steps:
- Preheat the oven to 375 degrees F. Place a piece of aluminum foil on the bottom rack to catch any drippings. Butter a 9 by 9-inch glass baking dish and set aside.
- Place the flour, 1-ounce sugar, lime zest, and 1 teaspoon salt into the bowl of a food processor and pulse 3 to 4 times. Add the butter and lard and pulse until the mixture just becomes crumbly. Sprinkle or spritz the mixture with the ice water a little at a time and process just until the dough holds together when squeezed in a fist. Place the dough into a 1 gallon zip top bag and form into a disk. Place the dough into the refrigerator for at least 30 minutes, while you prepare the filling.
- In a medium mixing bowl whisk together the 1 cup of sugar, cornstarch, and 1/4 teaspoon of salt. Stir in the rhubarb, peaches, and lime juice.
- Remove 1/3 of the dough from the bag, pinch into pieces and distribute evenly in the bottom of the prepared dish. With the remaining dough still in the bag, roll it out to a sheet large enough to cover the top of the dish. Pour the fruit mixture into the dish and top with the dough that has been removed from the bag, pressing the dough into the corners of the dish. Bake, uncovered, for 60 minutes or until the dough is cooked through and starting to turn golden. *If using frozen fruit, increase cooking time to 90 minutes.
- Change the oven setting to broil and continue to cook until golden brown, approximately 3 minutes. Remove from the oven and allow to stand for 15 to 30 minutes before serving.
SLOW COOKER EASY PEACH COBBLER
Delightfully sweet and rich. The crust is buttery with bits of crumbly bits on the top and the peaches are super juicy and bursting with flavor. It reminds me of the dump cake-version of peach cobbler that we would enjoy after long days on the lake in the summer. Serve warm, topped with cold vanilla ice cream.

- Combine peaches and sugar in a medium bowl. Stir well and let stand for 5 minutes.
- Liberally spray a slow cooker with cooking spray.
- Stir peaches once more and add to the prepared slow cooker. Sprinkle cake mix evenly over the peaches; don't stir. Distribute butter pieces evenly over the cake mix.
- Cover and cook on High until cake is done and golden and bubbly around the edges, about 3 1/2 hours. Turn off slow cooker and let stand 15 minutes before serving.

- To quickly and easily peel the peaches: Bring a very large pot with enough water to cover the peaches to a boil. While the water comes to a boil, prepare an ice bath by placing a handful of ice cubes in a large bowl and then filling it with cold water. Once the water is boiling, with a slotted spoon or tongs to protect your fingers, gently lower the peaches into the water. Add the peaches in two batches so that the water temperature does not rapidly drop. Boil for 1 minute. Remove peaches from the pot and plunge into the ice bath to stop the cooking. The skins can now be easily slipped off with your fingers. Cut peaches into 1/2-inch wide slices, then place into a large mixing bowl. (I like to dump out the ice bath bowl, then place the peach slices in it to save myself a dish). If you prefer, you can peel the peaches with a vegetable peeler. Lightly coat a 6-quart slow cooker with cooking spray.
- Sprinkle the peaches with 1/4 cup granulated sugar and stir gently to coat. Spoon the peaches and any juices into the slow cooker.
- In a separate bowl, stir together the remaining 1 cup sugar, white whole wheat flour, all purpose flour, baking powder, baking soda, and salt. Sprinkle evenly over the top of the peaches, then arrange the butter slices over the top. Lay a sheet of paper towel or kitchen towel over the top of the crock pot so that it overhangs the sides and will stay in place once the slow cooker is covered. (This absorbs moisture and allows the top to crisp). Cover and cook for 2-3 hours on high or 4 hours on low, until the peaches are tender and the top is lightly golden. Serve warm with topped with vanilla ice cream, Greek yogurt, or a splash of heavy cream.
