- Preheat oven to 350 degrees for the quiche.
- In a bowl, beat eggs with a whisk; add the cream and beat again; add the grated onion and beat yet again.
- Sprinkle bacon in the bottom of the shell; sprinkle parmesan over the top of that.
- Pour cream mixture over all.
- Dot the top with small bits of butter.
- Place the pan on a cookie sheet or other drip pan and into a preheated oven.
- Bake at 350 degrees until domed and light brown.
- Cool 1/2 hour before cutting and serving.
ALSATIAN QUICHE WITH BACON AND CARAMELIZED ONIONS
This is a spin on an Alsatian tart, made with caramelized onions, thick-cut bacon, and smoky Gruyere cheese. Perfect for brunch!

- Preheat oven to 375°F. Unroll the pie crust and place in a 9-inch pie dish. Flute the edges or press with a fork to crimp the edges.
- Prick the bottom of the pie crust with a fork. Place a piece of parchment paper on the bottom of the pie crust and fill with pie weights (dried beans work, too!). Bake the crust for 10 minutes in the preheated oven. This is called par-baking the crust.
- Meanwhile, place the bacon in a large skillet over medium heat. Cook until crisp, flipping once, about 6-8 minutes. Remove the bacon from the pan and place on a paper towel lined plate to drain. When the bacon has cooled, crumble it gently with your fingers.
- Add the butter to the bacon fat. Add the onions, plus ½ teaspoon salt. Cook for 2-3 minutes or until the onions start to soften. Lower heat to medium low and cover the pan. Continue to cook the onions, uncovering and stirring every 2-3 minutes until the onions are medium brown and very soft-about 25 minutes. Remove from the heat and let cool for 10 minutes.
- Meanwhile, place the eggs, half & half, remaining ½ teaspoon salt, pepper, and nutmeg in a mixing bowl. Whisk to combine.
- Place the cooled onions in the bottom of the par-baked pie crust. Top with the bacon. Pour the egg mixture over the top and top with the shredded Gruyere.
- Bake on the middle rack in the preheated oven until the quiche is beginning to turn light brown in spots, about 45-50 minutes. Let cool for 10 minutes before serving or cool completely and serve at room temperature.

- Step 1: make the crust - Mix the flour, salt and butter with your fingers or pulse in a food processor, until you get a crumbly consistency and pea-size bits of butter are still visible. Add the water, one tablespoon at a time, and mix until the dough roughly comes together into a ball; do not overmix. Add a few more splashes of water if you feel the dough is too crumbly/dry. Wrap the dough in plastic wrap and chill for at least 30 minutes.
- Pre-heat your oven to 350°F (180°C) with a rack in the middle.
- Grease and flour a 9-inch (22.9 cm) tart pan. Transfer the dough onto a floured working surface and roll it out to a 12-inch (31cm) circle. Transfer the crust to the tart pan. Cut any excess crust that hangs over the edges and crimp the edges (optional). Poke the bottom of the crust all over with a fork. Line the top of the crust with foil or parchment paper and place pie weights or dried beans over top, to keep the pie crust from puffing when baking.
- Bake the crust for 15 minutes. Carefully remove the parchment paper filled with weights and set the crust aside. Leave your oven on at 350°F (180°C).
- Step 2 : Caramelize the onions - Melt the butter in a large frying pan over medium-low heat. When the butter is sizzling, add the onions slices and stir to coat with the butter. Using a spatula or wooden spoon, spread the onions evenly onto the pan. Let the onions cook for 15 minutes, stirring every 2 minutes. The trick is to let the onions brown - so do not stir too often. But you don't want to let them burn either.
- After 15 minutes, when the onions should start to dry out, add salt and the beef stock. Stir to coat and continue cooking for about 15 more minutes, until the onions are melty and golden. Set aside.
- Step 3: Make the filling - In a large mixing bowl, whisk together the eggs and the heavy cream. Add the black pepper and grated cheese. Adjust more seasoning if needed (salt, pepper).
- Step 4: Assemble the tart - Scatter the caramelized onions evenly onto the bottom of the pre-baked crust. Pour the prepared liquid filling over top. Sprinkle evenly with the caraway seeds.
- Bake for 25 minutes, until the crust starts to become golden - the middle will be slightly wobbly and puffy, and will firm up and deflate as it cools down. Transfer onto a cooling rack and let cool at least 15 minutes before serving. Enjoy it warm or at room temperature.

From the Christmas Cookbook by Nanette Newman. Alsatian (Alsace) wine is a French dry white wine. I have included preparation for a homemade pastry tart, but feel free to use a pre-made one. Cooking time includes chilling time for pastry dough if making your own.

- Sift the flour into a large bowl then rub in the butter with your (clean) fingers until the mixture resembles fine breadcrumbs.
- Mix the egg yolks with the salt and 3 tablespoons water. Stir into the flour, using a knife, to make a soft and smooth (but not sticky) dough. Add the extra tablespoon of water if the mixture is too dry.
- Pat the dough into a ball, wrap up in cling film and refrigerate for 30 minutes.
- Preheat the oven to 220C/425°F.
- Roll out the pastry on a floured surface and use to line a 10-inch tart pan.
- Prick the pastry all over with a fork and bake blind for 10-12 minutes. Remove from oven and let cool.
- Lower the temperature of the oven to 190C/375F and place a baking sheet in the oven to heat.
- Heat the oil in a non-stick frying pan. Add the onions, bay leaf, thyme, salt and pepper. Cover and cook gently until the onions are soft and transparent, stirring occasionally.
- Add the wine and simmer, uncovered, until all the liquid has evaporated.
- Remove the bay leaf and taste for seasoning.
- Whisk the eggs and cream together.
- Spread the onions into the pastry crust and pour in the egg mixture.
- Place on the hot baking sheet and bake for 15 minutes.
- May be served hot or room temperature.

This is my contribution to "May--Vidalia Onion Month". Who knew there was such a thing. This quiche is sweet and mild. Wonderful served with a salad and a crusty roll. Enjoy!

- Preheat oven to 350°.
- Melt butter in a large frying pan, and add sliced onions.
- Sautéuntil transparent. Set aside to cool.
- Sprinkle 1 cup of cheese in the bottom of the pie plate.
- Add the cooled onions.
- Mix together eggs, cream, salt and pepper.
- Pour over the onions and top with remaining cheese and chives.
- Bake for 40 - 50 minutes, or until mixture is set.
- Allow to cool slightly before serving.

CANADIAN BACON ONION QUICHE (OAMC)
A delicious make ahead that you can freeze for later-- how convenient is that. More time to enjoy my family! Timing does not include chilling pastry. Hope you like as much as we have. I have changed the original method for making pastry and think it works much better.

- In mixing bowl, use beaters to cream butter, add cottage cheese and beat with mixer, using spoon gradually stir in flour.
- Form into disk, cover with plastic wrap, and chill for at least 1 hour or up to two days. I cut plastic wrap big enough so that I can later roll pastry out on it so clean up is easy.
- Roll out pastry to fit a 9 inch pie plate.
- Transfer pastry to greased pie pan.
- Trim pastry to 1/2 inch beyond edge of plate; flute edges.
- In skillet, sauté onions in remaining butter (1 1/2 t.) until golden brown. It is important to get the onions done to your preference because the baking steps do not cook it much more than this step does.
- Remove skillet from heat.
- Stir in garlic and set aside.
- Put cheese at bottom of pastry, top with Canadian bacon.
- in large bowl, add egg and peppers, lightly beat, stir in onion mixture from skillet.
- Pour into pastry shell.
- At this point, either wrap well and freeze or bake at 350 degrees for 40 to 45 minutes or until a knife inserted near the center comes out clean. (After 25 minutes, I peek to see if crust is browned enough and cover just the crust with foil so it is browned just enough. I hate real dark crust. It is not easy to do but worth it IMO.) Let sit for 10 minutes before cutting.
- TO USE FROZEN QUICHE: Remove frozen quiche from freezer 30 minutes before baking. Put rack in middle. Preheat oven to 350 degrees. Place pie on a baking sheet. Bake at 350 degrees for 40 minutes, then cover with foil and move to lowest shelf and bake another 25 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.
