1/2 c butter or margarine, softened
1/3 c sugar
1/3 c brown sugar, firmly packed
1 egg
1 Tbsp dark rum or water
1 tsp vanilla extract
1/2 tsp baking soda
1/8 tsp salt
1 1/4 c all purpose flour
1/2 c semi-sweet chocolate chips
1 c vanilla or white chocolate chips
1/2 c coconut, flaked
1/2 c coarsely chopped macadamia nuts
flaked coconut

Steps:

1. Preheat oven to 375 degrees. Line cookie sheets with parchment paper or leave ungreased.
2. Cream butter, sugars, egg, rum, vanilla, baking soda and salt in large bowl until light and fluffy.
3. Blend in flour until dough is smooth and stiff.
4. Stir in semisweet and white chocolate chips, 1/2 the coconut and macadamia nuts.
5. Drop dough by teaspoonfuls 2 inches apart onto cookie sheets. Sprinkle tops with additional coconut.
6. Bake 8-10 minutes or until firm in center. Do not overbake. Remove to wire racks to cool.

1/2 cup macadamia nuts, chopped
1/2 cup chocolate chips
1 cup white chocolate chips
1/2 cup coconut
1 1/4 cups flour
1/3 cup sugar
1/3 cup brown sugar
1/2 cup butter, creamed
1/2 teaspoon baking soda
1/8 teaspoon salt
1 teaspoon vanilla
1 tablespoon dark rum (may double the rum to 2 tablespoons)
1 egg, beaten
1/4 cup coconut, to sprinkle on before baking

Steps:

Preheat oven to 375.
Line cookie sheets with parchment paper. Combine butter, sugars, flour, baking soda and salt. Mix in vanilla, egg and rum. Stir in chocolate chips, white chocolate chips and the nuts and 1/2 cup coconut. Drop cookies by teaspoonsfuls about 2 inches apart on the cookie shees. Sprinkle coconut on top. Bake 8-10 minutes until just firm in the center.

2 cups white minute rice, uncooked
2 (8 ounce) cans pineapple chunks in juice, undrained
1 (14 1/2 ounce) can chicken broth (or bullion)
1/2 cup chopped green pepper
1/2 cup Shake-n-Bake, original chicken coating mix
1 lb boneless skinless chicken breast, cut into strips (or tenders)

Steps:

Preheat oven to 400*. Mix rice, pineapple with juice, broth and green peppers in 13x9" baking pan.
Measure 1/2 C coating mix and place in plastic bag; coat chicken as directed on package. Place chicken on rice mixture.
Bake 30 minutes or until chicken is cooked through.
