Vegan baking can be a little bit like Goldilocks in the classic fairy tale. Home cooks can find one recipe to be too dry, the next too moist; another one can be too sweet, but the next is not sweet enough. Happy ending alert: This vegan banana nut bread recipe is "just right" in every way.

1 cup organic granulated sugar
1 1/2 cups mashed ripe bananas (3 medium)
1/2 cup refined coconut oil, melted
1 teaspoon vanilla
1/4 cup unsweetened vanilla almond milk or soymilk
1 teaspoon apple cider vinegar
2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts, if desired

Steps:

  • Heat oven to 350° F. Grease bottom only of 9 x 5 x 3-inch loaf pan.
  • In large bowl, beat sugar, bananas, coconut oil and vanilla until smooth. Stir in almond milk and vinegar. Add flour, baking soda and salt; stir just until moistened. Stir in walnuts. Pour into pan.
  • Bake 1 hour to 1 hour 10 minutes or until toothpick inserted in center comes out clean and crack in top of loaf appears dry. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan, and place on cooling rack. Cool completely, about 1 hour, before slicing. Wrap cooled bread in plastic wrap, and store in refrigerator.

3 large black bananas
75ml vegetable oil or sunflower oil, plus extra for the tin
100g brown sugar
225g plain flour (or use self-raising flour and reduce the baking powder to 2 heaped tsp)
3 heaped tsp baking powder
3 tsp cinnamon or mixed spice
50g dried fruit or nuts (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mash 3 large black peeled bananas with a fork, then mix well with 75g vegetable or sunflower oil and 100g brown sugar.
  • Add 225g plain flour, 3 heaped tsp baking powder and 3 tsp cinnamon or mixed spice, and combine well. Add 50g dried fruit or nuts, if using.
  • Bake in an oiled, lined 2lb loaf tin for 20 minutes. Check and cover with foil if the cake is browning.
  • Bake for another 20 minutes, or until a skewer comes out clean.
  • Allow to cool a little before slicing. It's delicious freshly baked, but develops a lovely gooey quality the day after.

This recipe is a hybrid of several recipes I found online. In my opinion, it tastes just like the ideal non-vegan version--flavorful, hearty, and moist. Enjoy!

1 3/4 cups unbleached white flour (or a combination of white and whole wheat pastry flour)
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup banana (very ripe, 2 large or 3 medium)
1/4 cup vegetable oil
3/4 cup applesauce
1/3 cup almond milk (or other vegan milk like soy milk)
3 teaspoons Ener-G Egg Substitute (makes 2 eggs)

Steps:

  • Preheat oven to 325 degrees Fahrenheit.
  • In a large mixing bowl, mix flour, sugar, baking soda, and salt.
  • In medium bowl mash together the bananas, oil, apple sauce, and milk.
  • Add wet ingredients to the dry ingredients in the large bowl and mix until combined. Mix Ener-G egg replacer in separate bowl (as per instructions on box) and combine with batter.
  • Grease a standard-sized loaf pan (about 9x5) and add batter.
  • Bake in the oven for 1 hour and 15 minutes or until a toothpick comes out mostly clean. Let cool for about 30 minutes. Enjoy!

1 cup sugar
2 cups flour
1 banana, ripe
1 cup applesauce or 1 cup apple butter
1 teaspoon baking soda
1/3 cup vegetable oil
1 teaspoon vanilla
1/2 cup walnuts (optional) or 1/2 cup chocolate chips (optional)

Steps:

  • Preheat oven at 350 degrees F.
  • Mash the banana and the applesauce together.
  • Add oil, vanilla and sugar. Mix well.
  • Sift flour, salt and soda together and add to banana mixture with walnuts or chocolate chips, if using.
  • Put into loaf pan and bake for about 45 minutes or until toothpick comes out clean.
  • Cool 10 minutes in pan, then remove to rack to cool completely before cutting.

Almost Vegan Banana Bread image

This is my favorite banana bread recipe. It's adapted from a recipe in Bon Appetit, November 1998. The original recipe calls for whole milk, but almond milk works quite well. I also don't like nuts in breads, so I put them on top instead, along with some brown sugar to make it quite pretty. It's especially good warm with some Earth Balance butter. My co-workers gave it rave reviews!

1 3/4 cups flour
2 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon baking soda
1 cup banana, ripe (about 2 bananas)
1/2 cup almond milk
1 teaspoon vanilla extract
1/2 cup vegetable shortening, solid (I like to use Earth Balance spread)
1 cup sugar
2 large eggs
1/4 cup almonds, toasted and chopped (or other nut of your choice, approximate amount used for topping)
1 tablespoon brown sugar (approximate amount used for topping)

Steps:

  • Preheat oven to 350 degrees F.
  • Butter and flour loaf pan. (I use a stoneware loaf pan and only oil it slightly.).
  • In a medium bown, whisk flour, baking powder, salt, and baking soda.
  • In a small bowl, mash bananas. Mix in milk and vanilla.
  • In large bowl, beat shortening with electric mixer until creamy.
  • Gradually beat in sugar with shortening.
  • Add eggs to shortening one at a time, mixing well after each.
  • Alternately add the flour and banana mixtures to shortening mixture in two additions.
  • If you like nuts in your bread, add them here and use up to 1 cup.
  • Pour into loaf pan.
  • Sprinkle nuts and brown sugar on top and press into batter slightly. (This helps them to stick better after it's baked.).
  • Bake for about 1 hour 10 minutes, or until tester comes out clean.
  • Cool at least 5 minutes before removing from loaf pan.
